Anyone who says this is good is out of their mind. It is disgusting. I spit it out when I tried it. It’s barely edible. It has the worst texture and awful flavor and it’s at least 50% seeds. It’s nasty.

One trick you should try is to scald the chicken skin with boiling water before spatchcocking it. Scalding the skin with boiling water causes it to contract and tighten up. For some reason, this causes dry heat to crisp up the skin much better. See this: kzbin.info/www/bejne/o2XYaaB8o7V1epI

Try this one additional trick before spatch cocking and dry brining: scald the chicken skin with boiling water. For some mysterious reason (very likely due to the scalding water bursting the fat vesicles of the subcutaneous fat cells and contracting the proteins holding the skin together) scalding the skin with water enables the skin to crisp up way better.
