This delicious curry can be made with fresh ingredients or dry. Here's what you need:
3 Tbsp. oil
1 med. red onion (diced)
1 Tbsp. cumin
1 tsp. salt
3 cloves garlic (minced)
2 Tbsp. fresh ginger (minced)
1/2 cup fresh cilantro (chopped)
2 to 3 fresh green chilies with seeds (chopped) - optional
1 Tbsp. ground coriander
1 tsp. chili powder (optional)
1 tsp. turmeric
1 28-oz can whole tomatoes
2 16-oz cans chickpeas with 1/4 of their liquid drained
1 tsp. garam masala
3 tsp. sugar
1 squeeze lemon juice
For the Bannock
2.5 cups flour
2 tsp. baking powder
1/2 tsp. salt
3 Tbsp. oil
1 cup water
