I like how the judges always comment they would make much simpler dishes in the time aloted. I love it when people discover the East/West mayonnaise divide. The formula is nearly the same, they're made in the same factories, they had parallel ad campaigns in the 80s and 90s, but they're two different brand names. They used to be two different companies, but when they got bought out their brands were so entrenched in their respective regions that they decided to keep the names.

My initial thought with these foods were some things I ate growing up in a Korean American household: my mom would make kimchi (so pickled veggie) pancakes and seafood pancakes that had squid and shrimp with other seafood in them, as well as dried squid dipped in a mixture of mayo and sesame oil, which was my favorite midnight snack.
