Hi Emmy I‘m a swissgirl, living in switzerland🤗🇨🇭 During wintertime we eat a lot raclette, sometimes every week. Thank you for sharing this wonderful meal😘 A „pro“-tip: you should cut the chees thicker, like 1cm-pieces. Don‘t use oil and it‘s not good to melt it that much as you dit. It should not separate the fat. When its done, we sprinkle a little bit of paprika or pepper on top...makes a big difference😉 Love ur channel and ur personality, i never miss one episode😍 (Sry my bad english!) The cheese is over melted, that's why it's not as satisfying to pour as you thought, the separation of the curd and fat makes it all weird to pour and doesn't pull strings when you're eating

I cooked chicken and gravy with 3 tealight candles for a few days when the power went down after a cyclone in far north qld. It's surprisingly not too hard to cook with them haha.

Thanks Jason, it was during cyclone Yasi. I was about 10, our house didn't flood or get damaged but the power and water was out for abour 3 days and I was excited that I came up with the idea to hold a saucepan over tealights to cook haha mum was concerned so she supervised of course and she was expecting the chicken to not be cooked properly so she checked it but it totally worked and it was honestly not that bad. It took a long time to cook, I don't remember how long, but it was fun for me in an otherwise scary time, lol.

Excellent video! So delicious! Nostalgic too! My raclette brush with fame: A long time ago in Hollywood I was invited to a dinner party at the home of a famous Swiss cinematographer. He had one of those wheel raclette things with a full wheel of raclette (12-13 lbs.) slowly melting on it. Small buffet style, he'd scrape off some raclette on to our plates and we'd select a variety of delicious accompaniments set out on the table. As you describe, the evenig was relaxed, the light by candle, the wine divine. I was seated next to a very well known European movie star, which was unnerving, but the great food, wine, and down to earth conversation took the edge off and made for an unforgettable and extremely delicious experience I can still taste. In the end, I believe it is well worth the expense to treat yourself and your friends to a great relaxed evening of good food and conversation raclette style. Guten apetit, as it is said in German! Thank you again Emmy for sharing a wonderful way to enjoy life!

Hello Chromberries シ Yee, Not that it really matters, but my girlfriend at the the time was / is a film editor and she was friends with the host of the dinner. If I remember correctly it was a small and informal celebration of the completion of photography of the project they were all working on at the time. Other than my girlfriend I did not know nor had I worked with the other guests before. It was my first experience with Swiss cuisine and raclette, which as the host of this channel Emmy sensei can attest is condusive to an ideal atmosphere for conversation and enjoyable dining. Even if it's not raclette, similar leisurely shared cooking like fondue or shabu-shabu I believe make for a really nice way to share good times with friends and new acquaintances. I'm getting hungry just thinking about it!

I'm half Swiss - this is one of my favourite Swiss meals! You did a great job of keeping it authentic Emmy. A few tips - use less potatoes! You only use one or two, and pour the cheese all over them. While you're eating that serving of raclette, put more cheese on to cook. You end up eating multiple servings (a raclette meal can last over an hour, to several hours), with the pickles to cleanse your palate in between. Also, I love LOTS of cracked pepper on my raclette. Lastly, you can obviously use cheeses other than raclette. I love Tilsit, and even non-Swiss cheeses like Gouda & Edam.

This brings back memories of the little mini cast iron stove my grandmother had when I was a kid... she made me pots and pans from tin foil and we could fit 2 tea lights inside... Hi Emmy :). I'm Swiss and I very much enjoyed seeing you making raclette. Although we don't usually oil the pans (the cheese is oily enough and the pans are non-stick). Don't over melt your cheese, just enough to let it glide out of the pan and have some bubbles. The cheese slices are usually about 5mm in thickness. And the cheese to potato ratio is different (way more cheese than you had). We use salt, pepper and mild paprika to season the cheese after it melted. Glad you liked one of our national dishes and I'm very happy you attempted it and researched so well! The "swiss plus sign" is actually a cross. Our flag is a red square with a white cross in the middle.

French fries? Here in Norway its sold at the Christmas market every year. There are two kinds, one with just roasted potatoes, bacon and cheese. And one with bacon cheese, onions, cream and potatoes. They are cooked in these HUGE pans with a fire burning underneath them. Then when you order, they get your potatoes of choice and then go to the cheese station, grill the cheese with an electric heating element and then scrape it off the wheel onto your taters. I adore your channel, and I loved today for 3 reasons. 1. I always assumed that it's nighttime in your kitchen because of the twinkle lights, but apparently it's "lunchtime" now. 2. Rarely do you get even close to frustrated, so I enjoyed the subtle change of tone in "Strike Anywhere", 3. The pouty lip when the cheese did not melt right off the skillet. If you were ever wondering if we want to know all of you, we do! (Meant in the best, and non creepy way! This cheese grinder comes from Eskilstuna here in Sweden, it was made in 1988 by Karlsson and Nilsson, it belongs with the series knifeman900 and if you google you will find lots of their products. myself I love their craft and they last for many many years. Sweden has a lot of nice kitchen accessories from the past ... that lasts!

You are supposed to use special candles that put out around 1.5 of the heat of regular tealight candles. Those are availabe in switzerland. If you use regular candles it just takes a lot longer

I’m an American living in Switzerland. Funny that you posted this yesterday - I just bought a pack of Raclette cheese today! :) Some tips: you need to melt much thicker slices of cheese - store bought sliced Raclette cheese is typically around 1/4” thick. No oil is needed, as Raclette cheese already contains copious amounts of fat. And the amount you melted was what one would typically put onto maybe two small potatoes. Don’t cook it quite so much, it should only just begin to separate. And then sprinkle with pepper, nutmeg, and/or paprika (or even cayenne) at the table. Some people like to put bacon bits or mushrooms into the cheese as it’s melting. In USA, I’d use Edam or Monterrey jack cheese as an affordable substitute. And try pepper jack - chili Raclette cheese is a thing here in Switzerland, and it’s delicious. Finally, when I’m at home, cooking just for myself, I sometimes make “ghetto Raclette” by just melting it under the broiler on a plate, or even “super ghetto” Raclette by melting it in the microwave. (Here in Switzerland, electric Raclette cookers are by far the most common method at home, since the ones with candles do take quite a while. The old traditional method was melting a wheel of it by a fire or under a heated iron... thing. As I understand it from older folks here, the candle powered ones are a fairly recent thing, invented as “Raclette for two” as a novelty.)

I learned to cook with nothing more the a candle as a little kid . Just part of the Out Doors Experience doing my little back yard Camparoo adventures LOL. The fact is you can fry just about anything that is friable. I've personally cooked Egg , Hamburger , bacon, Ham-steak, sausages and more. Boiling enough water for Hot Bouillon , Hot chocolate , tea or coffee requires more then one candle but can be done. Did you know a unopened can of Beanyweinies will explode doing this ? No one told me that one.

Also, my Norwegian mother-in-law taught me you can use your cheese plane to peel cucumbers, and then to slice them very thinly for cucumber salad (which is basically cucumbers, vinegar, oil and a smidge of sugar). Makes the job SOOOOOO much easier than using a paring knife and veggie knife.

I just score the rinds of cucumber with a fork, slice them, add sliced onions and cover with vinegar. Refrigerate for several hours. Salt and pepper to taste. Amazing on a summer day.

I (a Norwegian) mostly use a potato peeler because it can be quicker, but the fact that a cheese plane (ostehøvel) wasn't universal made me happy really. Some Norwegian guy was like, I want some brunost. What is easiest to use? *Makes an ostehøvel*. We usually don't have oil in cucumber salads( if you make them to eat with traditional food, especially fish), but everyone does it different I guess 😊 glad your Norwegian mother in law has brought something "Norwegian" with her 😄 do your husband speak Norwegian? Since his mother speaks it?

My aunt used to do that when making pressgurka which is another type of quick pickled cucumber. We eat it with, among other things, swedish meatballs. Mmmmmm...

I live in Switzerland and raclette is my family's favorite winter food! We actually do cook eggs in our electric Raclette grill (we learned it from a Swiss native). And yeah, the pickles are really awesome with the cheese! I also like using mustard fruit (which candied fruit soaked in syrup with mustard seeds). My only criticism is that your cheese slices were too thin and you only want to heat it until it just melts. But yeah...soooo good!

Funny story: This same exact time 11 yrs ago we had a "snowmaghedden" in my area. The whole town was snowed in for about week, with no power. I lived with my unprepared aunt, and we survived off bread, pop tarts, and frozen precooked chicken nuggets lol. One morning I had it. I gathered a bunch of tea light candles, a deep metal pan, and two packs of my aunts cigarettes lol. I lit the candles, propped the pan up on the cigarette packs, and made me and my cousin our first hot meal in days. It was sooooo good, and I'll never forget it. Best scrambled eggs I've ever had! Lol Ps. I used A LOT of tea lights. It worked really well!

Mindymaria. we're your aunt's cigarette packs made of metal? how did the packs stand the candle heat from the pan? unless i missed something. i am truly curious.

PH CERT No, they were normal cigarette packs. I put one under the pan on each side, then packed the tea lights very close together under the pan, more in the middle. The cigarette packs were a good 3-4 inches away from the candles. I'm sure they still got warm, but not enough to melt the plastic on them. It cooked the eggs real good, but it wasn't too hot at all.

Mindymaria. huh. interesting. well, i am going to save three empty tuna cans and two dozen tea candles in a pot under the sink, for this purpose, hoping i never need to use it. thank you for the reply. ... maybe i should have asked what brand she smokes. lol. rhetorical. i fear a fire from the heat.

So glad you tried this wonderful cheese. My son-in-law is Swiss and he and his family taught me all about this traditional cheesy meal. Raclette is best when made on a raclette griddle where everyone has their own separate pan for the raclette slices which you don’t want to overmelt, just enough to allow it to slide off onto the food. The top of the griddle is for cooking shrimp, chicken, beef strips, grape tomatoes, bacon, cocktail onions, little gherkins called cornichons, zucchini slices, horse steak (yep, they eat that) and anything you feel like grilling. Then you add it to your plate with some small potatoes and add paprika and raclette spice (which I cannot find in the US so I bring it from Switzerland). Absolutely phenomenal dinner and it’s a fun way to enjoy family time. Real Raclette cheese is scarce in the US and it’s very expensive and there is only one or two brands. In Swiss grocery stores they have dozens and dozens of brands and kinds; even smaller grocery stores will have an entire dairy case devoted to it. The spicy kind is my fave. The Swiss love their melted cheese from Raclette to Fondue....and I love the Swiss, though I do think we get ripped off at the grocery store when buying their pre-sliced wholly cheese. LOL 😉

My hubby, the kids and I make Raclette each year on New Year's Eve. It's a lovely way to eat into the new year. We have a few versions of Raclette Cheese and lot's of pickeld veg and cold cuts, smoked ham, black forrest ham ( the real one from the black forrest since we are only one hour away) and fresh veg. I love it.

@@trekadouble757 In switzerland raclettecheese cost around 12 CHF (12USD) a pound. For a meal you need 200 gramm per person. Thats 5 dollar for the cheese.

I currently work in the epicurean/food service department of a grocery store and our most expensive cheeses at the moment both run for $32 a pound and i find it absolutely insane how much people are willing to consistently spend on cheese and jam and honey

Yesss Raclette! I'm Swiss so I'm very familiar with it, although I've always made it on big electric ovens with several small pans to share. That's anyways the best part of it, getting together with friends to enjoy some food and have a good time. Two small points about your raclette technique: 1) you don't need to put oil in the pan, the cheese is fatty enough to slide out on its own. 2) Ususally we cut thicker pieces and take it out as soon as it's done melting, that way it has a nicer texture and is less stringy. It's also common to season with some black pepper or paprika to taste. Also just noticed your little raclette oven is by the brand "Emmi", how fitting.😄
