I would check the temperature of your engine oil, I’m assuming your engine oil has a lower heat capacity than the cooking oil so when the deep fryer is putting in the same amount of energy in the oil, it’s getting hotter than the regular oil because less energy is needed to rise it’s temperature, that might explain why it’s cooking faster. It could also be that the engine oil is a bit hygroscopic so it draws the water from the batter faster causing all the foaming and also making the batter more crispy.

I read years ago that desperately poor people in the old Soviet Union sometimes cooked their food in motor oil. Could be bullshit, but you actually can safely use plain mineral oil to cook food, which is what motor oil used to be before modern additives were introduced (acid neutralizers, corrosion inhibitors, viscosity index improvers, etc.)

When food is fried correctly, very little of the oil actually ends up in the food. The hot oil should sear the surface of the food, preventing the oil from penetrating. The problem is when the temperature of the oil is too low (which can occur if you dump too much cold food into too small a fryer), which will cause the oil to soak into the food and make it mushy and greasy.

I think it would be interesting to see the difference between a conventional and full synthetic oil in the fryer and it would also be fun to send these samples(including peanut oil) to have it testes for its contents and compare them

But yea I think I'm good. I have tried plenty of other fried things that I liked originally but didn't like them fried.. I mean I don't knock anyone for their likes or dislikes but fried pickles isn't going to be one of the things I am trying. Only because I don't want it to ruin my love for a crisp/crunchy pickle. But thanks for trying to convince otherwise guys!!

I think the engine oil has more thermal mass to it. The same kinda thing seems to happen at my work. Fresh canola oil in the fryers seems to cook a little slower than oil that's been used for a couple of days.

Before watching the video, my hypothesis is you can't deep fry anything because engine oil needs a high resistance to temperature because the heat of combustion is around 4000°C. Edit: guess it works lmao

This oils are essentially completely different. Motor oil is typically made from mineral oil which is refined from petroleum. It is a mixture of long chain hydrocarbons - molecules made up of only carbon and hydrogen, along with various additives. Cooking oil is made up of lipids - fatty acids - produced by plants. The only real similarity is in their general properties of viscousness, insolubility in water, and feeling “slippery”.
