@@Pickle1 he actually cooked the wagyu pretty well, just could've used a better sear. A5 Wagyu thats sliced an inch thin like that should be eaten closer to medium than medium rare in the first place, and that type of steak usually doesn't show as much pinkness to indicate medium-rare than most because of the marbling. The meat:fat ratio makes it have a less vibrant pink.

@@komorebi1212 the fat aswell on the wagyu is completely unsaturated, causing for a much different colour gradient on it compared to more common steaks, and it also causes the fat to have an incredibly low melting point, it is like butter, will melt from the heat of your hands.

As long as the outside of the steak was clean you can eat it raw. It's best to atleast char the outside to be safe. The bacteria doesnt tend to migrate from the outside to the inside. So hamburgers you do want to cook a bit longer since the beef is ground.

A good steak is generally done by either searing then finishing in the oven, or by sous vide and then searing. Though I guess with a steak this thin you're right that just the searing of the outsides alone will be enough to get the center to the target temperature.

It’s basically fine to eat “raw” steak. It would of course be a problem if you straight up tore into a cow and started fucking CHOWING down but because beef carries inherently few diseases and bacteria and because farms (especially those that produce Wagyu) often test their cows for signs of bacterial infections and diseases you have a low chance of food poising or sickness (of course cook the outside of the beef to ensure that anything living in the exterior is cooked away) HOWEVER never never never eat raw or undercooked hamburger, the bacteria on the outside is churned into the center which mixed up all the bacteria into the beef. And true, Wagyu is very interesting and worth at least a try but in general it as an ingredient can only take you so far. A 10$ steak cooked properly can be beat the Wagyu in flavor and juiciness but of course the Wagyu has pretty good tenderness and complexity. Tbh it’s still overpriced, I’d rather drive out an hour and a half to my nearest cattle ranch to support a local farmer who raises beef that’s slightly more expensive than grocery store beef but less than Wagyu which still holds up in tenderness and complexity just as well.

I’ve cooked wagyu steak before.. yes, you do have to cut it, it’s best to eat it when it’s in bite size pieces. Only thing to add is salt, then put it in a pan (non stick stainless steel pan) with no oil and sear it for 2 minutes front and back and 30 second on the sides.. let it rest for 4 minutes and add a little more salt and eat.

That lack of oil be why your steaks look dreadful. A proper sear is only achieved with some form of thermal inductance between the hot and heated surfaces.

The usda definitely is rare, the wagyu is probably medium rare. Maybe medium. But since it's thinner it's gonna cook faster
