You'd need a training certificate from Quebec. The profile is weak due to age, and I take it the spouse has no work experience? Then, you should learn french, and then you'll have many options.

I'm confused since there are 2 point systems, one that requires me to pass 43 and the other to pass 500 (because the last draws were around this number). Why would I be eligible to enter Arima and then, based on the other point system be lacking to reach the limit? The first point system that is explained in this video gives me hope but with the other one, I have a considerably low score.

It doesn't come under EE. www.canada.ca/en/immigration-refugees-citizenship/services/immigrate-canada/quebec-skilled-workers.html After the QCF, ircc takes 17 months to process it

No it's not suitable. A: your ielts is only 6 bands B: you didn't say you know French. C: your experience is only 24 months.
