I have made your candied almonds more than a dozen times. Your recipe is the best candied almonds recipe out there. That opinion comes not just from me but from everyone I've made these for as gifts. The only thing I've ever added is cayenne pepper for someone who liked a little ump with their sweet. Thank you so much for your fantastic recipe! They are chewy because you had too much water in the mix and you put the nuts in too soon. Basically what’s happening is the sugar is crystallizing on to the nuts. It’s something us professional candy makers try to avoid in candies and brittles. However, it adds a different texture and taste to candied nuts. Adding a little butter and cayenne pepper will add a wonderful bits to these. You can also add other flavorings to these to make them more interesting.
