Hey Aaron, I’m 78, and got into mushrooms while I was rehabbing from a total knee replacement. I have been captivated by mushrooms now, and to a great extent it is your fault. I have watched your videos since I started, and now I spend more time in the woods and wandering around the neighborhood looking for what’s growing. I am impressed by the quality of your productions, and they really make me feel like I’m wandering through the woods with a brother. Keep up the good work, and thank you….by the way, I never get tired of hearing about fomitopsis mounceae. 😊

Well this is awesome i literally have a batch of 30ish candy caps just got today under some pines and i have not yet tried them they are in the dehydrator now and yeah just a hint of maple syrup in the air. Mush Love Aaron

My basket has smelled like candy caps for 15 years. Also when consumed, you pick up a maple syrup body odor that gets old really fast. For days after, your skin and sweat will smell like an odd burnt sugar-maple. As a chef we used these a lot, as they go great with duck and squab, but we all ended up wishing we could get away from that smell after a while.

@@Ross401 true that! I had a backpack and a pair of gloves that were floating around in my truck and everything started to smell like sticky maple syrup. Smell like I had a couple of messy toddlers. My wife was thoroughly sick of the smell lol 😂

I like all of your work, and I really appreciate this single species focus. There is so much to learn and I find myself going too many directions. I finally found some edible mushrooms, chanterelles, this year. In fact we just had them at supper. It was only two, so just a taste, but it was very satisfying!

Great video. New subject. I was planning last year to go to the Oregon Truffle festival however was unable to make it due to health issues. But i expect to go this year. I very much appreciated your video on the festival you did though. Im curious if you're planning on attending this year. Maybe see how Loki does on the dog trials. Nice video, very helpful. The only thing missing might be some video (or even stills) of lookalikes and their differentiating features... nothing like a little oozing green milk to drive home the point.

@@randalljones4370 I'm not sure of anything that oozes green milk. I thought about doing look-alikes in this video but I wanted to keep it a short video, and it's really hard to know where to draw the line on "lookalikes," because there's not too many to me, but to a absolute newbie most mushrooms might look alike 🤷 I think the most common lookalike are going to be other Lactarius that do not offer the distinct maple syrup aroma, or perhaps Laccaria - which are harmless. We started to get into LBM's the list could go on and on in this video could be an hour long. Thanks for watching and your kind words!

@@mushroomwonderland1 The 'green milk' reference was to lactarius indigo, (starts blue, oxidizes green quickly) tho it can't be considered a lookalike. I think my visually associative brain did me wrong in combining that 'ooze' with 'the bruise of lactarius deliciosus '. I just had a momentary visual of it dripping green vs red... and my fingers were off to the races, lol. My bad. And let this be a lesson to all you newbs out there... pay attention to real experts, not ham-fisted jokers (like me) on the interwebs.

I have a pear tree in the yard between two cherry trees that has hundreds of mushrooms growing under it where the pears drop and rot. They're orange like this also but, I don't chance eating any of the mushrooms that grow on my five acres here near Bremerton. And there are fields of different types of mushrooms every year.

@@roypublic3269 You should learn a little bit more about mushrooms and you will find that most of them are edible, you just got to learn them one by one. Clearly you have a little interest, since you found your way to this video. Pursue that! It unlocks doors to a new world of Discovery, inspiration, and delicious food!

All I keep finding is those other Lactarii that stain green (rubrilacteus). I await the day I finally find the Candy Cap.

@@whoe_whate8487 Just make sure you're in the right habitat. Young Doug-fir seems to be there tree of choice. Maybe the hazelnut is incidental but I continue finding them all over the county, and always within a stone's throw of hazelnut.

A percentage of flavonoids, responsible for maple flavour, degrade to strawberry during the process of evaporating maple sap into concentrated maple syrup.

Maple sap contains a flavonoid profile, that is different than maple syrup concentrated from it. I suspect the flavonoid profile of Candy Caps (Lactarius rubidus), is different after cooking heating, based upon similar phyto-chemistry found in other sources. Apparently, Vanillin is also present, in maple syrup (considering Publications at the U.S. National Library of Medicine).
