I have canned rice, but brown rice is really the only one that turns out good since it has a longer cook time. I add chopped onion, stock, seasoning... just like a pilaf. Delicious. I pressure can 20-25 minutes. I usually add a couple pint jars to a batch of something else. White rice is just like soft like pudding. I made creamy broccoli cheddar rice soup out of those jars. 😂

The white rice wasn't my favorite. Sure, it works to have food on the shelf for emergency purposes, but... I need to give brown rice a try. That is actually my family's favorite rice anyway. Thank you for sharing that!

@timc.8391 The same amounts. ½ cup for pint. I've never done a quart but I'd use 1 cup. I just rinse it. I do not pre-cooked it in any way. If I add veggies, I reduce the water maybe ¼ cup.

Rice isn't an approved recipe that has been tested for safety, so there is no data to show how long it is shelf stable. With most canned items, the quality tends to start breaking down around 18 months to two years. For tested recipes, I have no problem I using things older than that if the jar is still sealed and the quality still looks good. I always encourage others to do research before canning anything. 🥰

@flipperc6042 , I'm not sure to which one you are referring. The stockpot at the beginning is from Belk. The brand is Biltmore. The canner is an All-American 930 from their website. Neither of them are are too terribly old.

I have a friend who cans her rice after she cooks it. She doesn't add extra liquid. I don't have the directions for that method, though.

@gyntlenurse123 mmm..no, I wouldn't say it was gummy. I would say it was very well cooked. This was probably one of my least favorite canning projects. While it worked and was edible, it was not worth it to me to do it again. I have found I prefer saving white rice in mylar bags with oxygen absorbers. It takes up less space and lasts longer. The only down side is that it still has to be cooked.

@jenniferr2057 parboiled rice is a quick-cook rice such as you would find in a boil-in-a-bag box or minute rice box. You can actually buy it in large bags, also. No, it is not just regular rice that cooks for a longer time. 😊💜

@@jenniferr2057 not for a whole jar. I have done as you've said and used it in other things that I am canning. To be honest, I didn't enjoy having this on the shelf as much as I thought I would and haven't made it since. I know others who do enjoy it, though.
