I have a very old American Standard pressure canner. My husband bought it from an elderly lady in our community for $20. She even had the canning book that came with it. Everything you need to know about canning anything. I wouldn’t take anything for that canner or that book. I love it. I just canned 13 qts of green beans. Canning is a lot of work but worth it. I figured if my husband can grow it, I can surely can it. I basically do everything as you do.

I love the pressure canned squash. We used to bake it, scoop it out and freeze it, but the canned is so much better. I was surprised at how it retains its firmness (just as I was surprised at how firm the canned potatoes and zucchini pineapple are).

Canning summer squash is not an approved method (unless very recently) I think they just haven’t tested it. If winter squash is ok, I don’t understand why summer squash would be different. Just throwing that out there.

To cook squash, I saute onion then cook the squash down. When it is cooked down, I add a little sugar and milk and cook just a little more. My father-in-law taught me to cook squash. I had never eaten squash before I was grown.

I have my Grandmother's pressure canner. It must be 80 years old. It does not have a weight and only a metal band the wrap around the canner and lid. She never had problems with it, and neither did I. But it has been at least 10 years since I used it. Do you think it's time to invest in a new one?

I have canned summer squash. The recipe is actually in the 1995 Ball Blue Book! I don't buy a new one every year. I lost my old one from the 70s that had some super interesting recipes in it! Makes me mad. But they had that little book jam-packed with recipes that my mom used when I was growing up.

Missy, I have to wear gloves when I wash SQUASH or CUCUMBERS because it peels my skin off in huge pieces on my hands. I don't eat much as I am worried what will it do to my insides . Have you ever heard of anyone with the issues ?? We do like ours dipped and fried in cornbread batter, until golden brown. It only takes a few mins on each side. I bet with 6 kids and all the work you & Colby do you'll crash early once your heads hit the pillow. LOL You both are amazing, God bless!!!!!

I've planted squash the past 2 years and have gotten plenty of blooms but no squash. I haven't planted yet this year. I'm running 2 weeks behind. But I will be trying the squash again because I love them! I pray I am successful with them this year. I think I got a borer like you did from the way the stalks looked. I don't know if that's common or not but it seems to be for me. Your squash are gorgeous!! I've never had them cooked the way you described. I will try it this year though even if I just end up buying some. Thanks for the instructions. Much Love to all ♥️🙏🏻♥️🌹

Try pulling most of the male flowers off and hope some female flowers start blooming. Then hand pollinate once you get some females(google so you know how to identify the male vs female) If I get alot of male flowers I make fried squash blossoms stuffed with garlic and cream cheese. Lightly breaded. So good

I've never canned squash, so I have a question. Do you peel the squash? Something you might want to mention about putting the rings on; Tighten the rings lightly. I canned some beans a couple years ago and thought I was just snugging them down good, but when they came out of the canner, a couple of the lids had a little pucker along the edge. They sealed, but I was a little nervous. I also canned 72 pints of sweetcorn two years ago. I went by what the Ball Bluebook said, X amount of pounds for 45 minutes. The corn is good, but a little dark. I talked to a cousin and she said an Amish woman told her to only do 15 minutes. Her canned sweetcorn was nice and bright yellow yet. Next time, I'll be doing it 15 minutes. That was my first time ever canning corn, I had always frozen it before. Another thing I do is, when the jars come out, I set them on newspaper or a towel and then cover them with a heavy towel so they cool slower. With air-conditioning you could crack a jar if it cools too quickly. And if you blow out that safety plug, you'll probably break most of the jars in the canner. Just something you might want to warn new canners of.

@TheMacsLife0

I didn’t but that’s not a bad idea to add some vinegar while washing- won’t hurt them at all!! Also your water level in the canner is going to depend on your canner! Be sure to follow your instructions for you canner! Pressure canning is much different that hot water bath!!

Missy PLEASE sit hot jars on a towel after removing them. Your counter may be too cool to set them on while hot, causing them to break also. Thanks for all you do.

Thanks for sharing! Just curious, how many yellow squash plants you have to get all that at once? 😅 I can barely get more than 2 squash per plant before the bugs & animals take over if I'm lucky. *maybe knowing your squash variety might help me out too😅

Didn't you let a lot of those squash get too big to be good and tender. I like my squash young and tender. I didn't plant any squash this year because the vine borers kill the plants before I can get any fruit.

If you want to save your self a little bit of time, boiling your jars to sterilize them does nothing for your process safety. With that said clean jars yes sterilize jars waste of time. The reason I say this is because you’re putting unsterilized product in the jar so you’ve just destroyed your sterilized jars. 😊

Well I clean my stuff with vinegar before I put it in the jar and I feel more comfortable with food sitting in jars that I know are sterile :)
