Make sure you have plenty of breakfast sausage on hand. If a SHTF situation happens soon, I want my sausage to calm down the family.

I just used my last jar of Italian sausages I canned in 2011. They were just fine. I just finished doing 32 qts of sausage yesterday. Yum!!

Love your videos! I did this a couple weeks ago and it was so easy! I think canning meat is the easiest thing there is to can. I only had 3 pounds of sausage and I put them in 4 oz. jars for individual meals to add to eggs, homemade pizzas, spaghetti sauces...my husband was amazed! LOL Thanks for posting - never stop!

I have started putting a lot of food in smaller jars like you. Family thinks I am crazy but when you are the only one eating it is a waist to open a larger jar. So happy I am not alone in doing this. 😁

I did this a few months back...I alternated layers of sausage then gravy and filled them into pint jars...This came out great. I took it camping and all I needed to make was the biscuits. I did the hot and regular too. This is a great video Deb. Thanks for posting.

I believe that any safely canned food is good indefinitely as long as it is prepared correctly and stored in climate/light controlled area!! Great video!!

I canned some meat that had a fat content included. I let the pressure get too high at one point and ended up with contents leaving the jar into the pressure canner water. end result is that some fat got in the seal area and I had one jar lid unseal. I caught it right away and got it into the fridge. I ate it last week and am still not hospitalized.

A pressure canner is not in my limited senior budget. Isn't there another method??? When I seal jars, they're always air tight. I keep looking and hoping I'll find one at a price I can afford. Thank you for your video.

I canned a bunch of sausage. I wa a bit worried about it at first because I had heard it would be very sagey when canned....but I love it. I make gravy just like you do, but I use evaporated milk and water instead of milk. Thanks for sharing. God bless.

I use what is called a Presto and its a 23 quart one. Now that does not mean it holds 23 quart jars--it only holds 8 or nine, It holds about 18 pints. They call it a 23 quart because if you took the product out of the canning jars and dumped it in the pot then it would take 23 quarts. It only costs about $100.00 compared to the others and I have had mine for years.

I can in half pints also, but you have to use the processing time for pints because there is no canning instructions for half pints.

As long as the seal is ok, only the quality of the product will degrade over time. By quality I mean flavor, taste, and texture.

2 things. will never get tired of watching and learning from you. what is dirty rice? North of Superior and never heard of it. well 3 things. The storage life also depends on how you store things. If it is hot then probably not as long as it is cool. So never depend 100% on the instructions. It makes sense to do it yourself and get to the time limit if things actually last longer than a couple of years. Congrats on the expected new family member.

Yeah there's no way to tell from thidbclio that it's Teflon.... Additionally. Maybe she dgaf! Lol... She's a funny lady. Probably just doesnt give a damn if she scratches the pan. And if you're worried for health concerns, that's another nonissue. Although PF08 is used in the making of the pans, almost all of it is burned off at very high degrees in the factory. Any amount of teflon that maybe scraped off and ingested is inert and remains undigested as it passes through the body. The only danger for health reasons would be if you left the teflon pan on high heat unattended for a long time before putting any food in it to the point the pan begins to smoke and burn. This is not a concern if food is in the pan bc it'll be finished cooking long before any potential C8 may leach out (like the pan has to get really hot for a while. Much hotter and longer than anything humans cook to eat)

Hi Deb. I'm new to viewing your channel and I had a quick question. You've mentioned that meat can be tricky to can. With the pork neck bones, you mentioned that you don't want liquid or broth in those. They went in raw, with no broth and cooked. This sausage video would imply that you want a broth or liquid in with the sausage because it was precooked. Can you break this down a little more for me, in terms of storage of meat, and when I should expect to add water vs. when not to add water? Thanks, and you're doing a great job with the vids!

You have to have some fat to make gravy. I like to have fat in my sausage. During a World War Two fat was one of the hardest things to come by. In Britain they didn’t even have soap because there was so little fat. A bar of soap was a great Christmas present . So keep all the fat you can, if there is a SHTF situation you will need it!

Great video as always. I was wondering of meat canned in quarts processes for ninety minutes and pints for seventy...can half pints be processed for sixty minutes and be safe? I have canned my chili in half pints at sixty minutes to see...i have opened one so far and was fine. I cannot find any official processing times for anything using half pints except for jams, etc.
