About 15 years ago Whole Foods had a butter sale - $1 for a pound. So I got a case of 30 and they acted like I was an insane pig. Now I wish I'd gotten 30 cases and a freezer just for them.

I unwrap all my butter the night before and put it in my pot, and put the pot in the oven, off , with the light on. It softens it slowly and easier to melt. Also cuts my task, making it seem less like a big deal.

An extra tip I’ve learned for anyone making ghee, put all butter into your crockpot on low all night. Don’t disturb. It will be perfect for ladling into jars. MERRY CHRISTMAS!!!🎄🎁

I only have 4 pints of butter left, but gotta tell ya I went through the same thing having to put in refrigerator didn’t my first batch so I don’t know what happened but what a life saver. My husband has been sick for over 2 years now, we’re in our 70’s so I’m trying to can as much as I can. My next project is Navy Beans, Pinto Beans and proteins. Have a great week as always

I'm following in the footsteps of my dad. I loved to watch him cook and can goods from the garden. My grand parents went through the great depression and as a child when I spent time with them I would see jars and jars lined up in their basement. Thats how they sustained themselves. We are heading into a time where we have to be prepared as they did. So, I'm prepping.

Got me thinking because there are so many things I want to can but being you said April or so it just made me think what normally is happening in March and April. So Easter came to mind and I thought you know even if I did not get the lids, I want to do something to give something to another. A meal in a jar with a basket for Easter! Maybe it would spark an interest in another person to start to can for their house or even want to get together and can together as a group. Sounds silly but I think it would be such a neat idea.

@@OuttheBackDoor Yes, I chunk both cabbage and ham or pork. This is quick and easy dinner in a jar I use chicken broth (on sale, or home made or in a pinch KORR bouillon cubes and hot filtered water) for the liquid. City water has too much chlorine and other things in it....

I have been cleaning out my freezers and canning everything. I love to raw pack meat, I just think I need to have lots of protein on my shelves, for what may come. I am not sure of the difference between butter and ghee. But I think I would rather have butter for slathering on homemade bread, lol. I love all of your videos, you have shown me so much about canning, or how "you" do it. Praying for you that God blesses you with abundance in all things!

Good morning Destiny and Purpose 🌞 Thank you. 😊 Putting up protein is an excellent idea! You see what's coming and you're using wisdom to be prepared. I've got a lot to clean out of my freezers, including more butter that I bought when it was $3.29 lb. I made this video over a year ago but I can't believe I was getting butter on sale for $1.99 or $2.19 a pound then vs $5 lb for the store brand and not name brand now. It's not in my budget to buy the really "good" butter. Now, I want you to hold off on canning butter until the 19th if possible. 🤭 The video on canning ghee is scheduled for March 18th at 6pm CST. I've got about 30 lbs of butter and I'm still trying to decide if I'm going to do a small batch of butter and the rest ghee or just do ghee. Here's why... shelf life of butter is approximately 5 years. Ghee, I call one of my "forever" foods. The shelf life of ghee is 25+ years. AND you can use ghee in place of butter for everything! Wait... I haven't personally tried using ghee in butter cream frosting. I need to try that! 😂 But you can also fry in ghee! Butter will burn quickly if the temp is too high. I do have freezers to clean out, mostly meats, so I will absolutely wait until the 19th. 😄 I bought several cases of the squat 8 oz. jars yesterday to use for butter/ghee. I am saving my pints and half pint jelly type for other things I have in the freezer (I am a jar hoarder 🤣😂). It is/was not in my budget to buy name brand butter either. 🙄 From what you have said it really sounds like I want to can mostly ghee. I priced a 9 oz. jar of ghee yesterday and it was $11.49, 😲!! I was so surprised! I have burned butter before, 😂😂, trying to make a browned butter sauce, it ruined the whole thing. I tend to start canning sessions too late in the day, so the whole shaking thing with the butter would have to be started promptly at 7 AM, lol. I am intrigued so I will be waiting with excitement for your video to drop into my notification feed. If I have more questions I will email you. @susewambold8175 Hi Suse. I leave mine sit on the counter during the cooler months and I generally go through a half pint container within a couple of weeks. When summer comes I refrigerate it more often because my husband double dips in it often and I'll sometimes notice mold starting where crumbs were left in the jar. 😊

👍👍👍👍👍 I have stomach issues with most veggies and aged meat. Try to buy meat these days that hasn't been aged. Bread doesn't bother me and I can eat and drink all the dairy I like. Been this way all my like. Try going all dairy and see what society says. Yeh. I did all dairy for 9 yrs and felt great and for the first time in my like I could run without running out of breath within 1 block. All I changed was eating nothing but dairy. No added exercise, nothing but I could run/jog all day long which I did once for 2 wks, lost 20 lbs. We all know dairy doesn't keep very long so I would love to can a lot of dairy to cut down on trips to the grocery store and be able to go dairy again. I already have the pressure canner.

Hi Sheila. _I find this VERY interesting!_ For the most part, my husband and I hunt deer and grouse which take the place of beef and chicken (although I do buy chicken on sale) and we fish so we have that in the freezer as well. My chiropractor told me to eliminate dairy from my diet because it's turning into sugar and feeding the inflammation in my body. Well, I still eat dairy but not much. If the dairy comes from raw unpasteurized milk, that's different. But, I do keep canned milk, whipping cream, half & half, cheese, sour cream, and butter in my pantry! 😊

@@OuttheBackDoor - my mom stopped teaching to have kids and my dad was a barber (.25 a haircut) so we were very poor. No milk but all the meat we could eat, oatmeal, bread and lard (.10/lb). Dad hunted and fished; deer, geese, ducks, prairie chickens and jackfish in endless supply. Mom went back to work when I was seven and by the time I was nine we had 1 qt of milk for the whole family per week. When I was 16 I had, at my disposal, all of the milk and cream I wanted. I was in heaven but even in those days going straight dairy wasn't 'okay'. Not until the 90s, was I so poor again with no gun nor hunting license so milk became my sole source of nutrition - and it worked. It worked extremely well but it is still not a 'socially acceptable diet, even by doctors.

Hello this is the second video on how to can butter and it is about the same especially for long term. I have seen how to make butter for short term with heavy cream and then freeze the rest, but the way the prices are it makes you think if our past generation did it so why not now.... I am interested in canning potatoes, mix vegetables meat, etc. This makes a lot of sense putting up food is a great investment it is money in the bank per say . Hi Melinda. It's always been a wise thing to put up foods (even canned foods from the market) and those that grew up in the great depression know the value of food and how to stretch the dollar. Besides inflation, which will always continue to rise, we've experienced food shortages of sorts. A well stocked (variety) pantry will be able to sustain you and your family. Plus, when you can and put up your own food, you know exactly what's going into it. I do have a video on making and canning ghee also, if you're interested. I actually keep both in my pantry. Ghee has a much longer shelf life compared to butter and technically, you don't have to process it to can it because it's 100% fat. You can use it in place of butter. Hi Debi. YES! Canning is therapeutic!!! Now I know what word to use when people think I'm off my rocker for canning all the time! I keep both ghee and butter in the pantry. More ghee than butter for different reasons, but they both have their place. Stocking up on canned proteins is a great idea. I try to go through the freezer and can up the extra meats. Easier to make a meal with canned meat than when I've forgotten to take something out of the freezer to make for supper! 😊

Thank you for your video. This was easier to do back when I could buy butter on sale for $3 lb. I'm lucky to find it on sale for $4.50 these days. As it was, I chose the time honored Ghee over the canned Butter and canned up that stuff. Maybe it's time to tackle the butter. We're terrible hard on the butter as it is, ... so I can't have too much butter. There's no such thing in my books. As it is, I have a small chest freezer designated for Butter and rotate it out always putting the new box on the bottom of the pile of boxes. Lots of fun. But the stuff freezes like a charm and I've never had a problem. I keep 60 to 80 lbs in rotation but like I mentioned, we're hard on the Butter. Still, I want to do this. Some Back up for the Ghee. Keep up the great work and good luck.

Hi daval. It was a lot easier when I was able to get it for $2.19 a pound! I did splurge and bought 30 pounds when it hit $4 a pound because I knew the prices would continue to sky rocket. I'm not as hard on butter as you are, but I do enjoy it! Generally I have more ghee in the pantry than butter for a few different reasons, but I need my butter too. @learningliving2600 - ForJars are the ONLY lids I use now. When I have to buy new Ball jars, I save the lids for just in case I ever run out of the ForJars. Hi CrystalBlue. Any time of year is a good time to make preserves! I still have a big bag of blueberries in the freezer from the patch. I use a melon baller to scoop out the cold butter after opening and refrigeration. Works great, and is about 1 Tblsp.

Like the fact that the inner band on the ForJars Lids is silicone instead of rubber that has a tendency to breakdown. So, given that the seal most likely will last longer and be stronger, I am going to use them to jar up some cubed beef stew meat. Thanks for the tips on the butter.

I’ve just found your channel. I’m going to try the sour cream canning. I’ve done butter twice. The first time I had a huge mess! The second time was much better. I put 1/2 tsp of garlic and 1/4 tsp parsley in some. They are really yummy. I hate the shaking part. I was up all night shaking the first batch. Love the refrigerator idea. I’ll try that next time. I’ve never heard of that company. I’ll have to get some to try. Thank you for such great video’s.

Hi Bizzy Bee. I can both butter and ghee to keep in my pantry. The prices have gotten out of hand so I make sure I'm well stocked. Keeping meats in the pantry is a must as well! Oh Sandra! You sound like me! I start a canning project not thinking about the time it will be finished! 2 am has starred me in the eyes too often and I finally said to myself, pay attention to the time you're starting! Remember to shake your jars! To get them to set faster, set a few jars in the refrigerator at a time for ONLY a couple minutes, take them out, shake the daylights out of them, and they should stay incorporated so you can get to bed! 😊💗

Hi Claudia. Were you stirring it often? I don't stir it hard, but I stirred it fairly often because I didn't want it starting to separate and beginning to turn into ghee.

I canned up butter just like this except in pints. They have been on the shelf for 4+ years. I opened up a jar for the first time to check it. It was grainy, but not to bad. The smell was off? Not bad or sour just off. I tasted a small amount, it tasted fine. My question is what does your butter smell like when you open a jar???

@lindamcneal4711 Hi Linda. Mine smells like butter when I open the jar, but the graininess (which has happened to me) most likely comes from using salted butter. I've noticed that happens when I use more salted butter vs unsalted butter in the mix. Some of my jars are over 4 years as well. I would suggest opening another jar to check the smell and taste to see if it's "off" or not.

Hi Cheryl. If it's been 2 days and they are separated yet, leave your lids and bands on and put them in a water bath to melt them. Take them out and place them on the counter for about half hour. Give them a good shake. Depending on how many jars you have, put a few at a time into the refrigerator for about 2 to 3 minutes only. Remove them and shake them up good. Let them sit on the counter. They "should" stay incorporated. If not, repeat the refrigerator process. I hope this helps. 😊

There are 13 jars still, not hard. I watched another video on canning butter, and she said they take a while to get firm. Out door and country living. The jars are sealed so they should be ok right? I hope they do harden. We love the flavor! Thank God Bless!

Great video. I just found your channel! I have a question. Have you ever had a jar of butter make a big airspace inside, that pushed some butter up against the lid? It sounded funny when I tapped on it so I opened it. It was still sealed. Would you trust it or toss it? I don't know whether toxins form gases that would have made that void. Hi Mrs.Patriot. Thank you and I appreciate you stopping by! I've got to say that so far I haven't had a jar of butter do that to me... yet. 😉 I'm not sure exactly how you canned your butter, but did you shake it until it stayed incorporated and/or did you need to place it in the refrigerator to help it set up? My guess is the last time that jar was shaken, part was more solid than the rest and may have stuck to the lid at that time, leaving a void in the center. I honestly don't know what else would have caused that. But, my rule of thumb when opening ANY canned food (including commercial) is visually inspect it, smell it, and finally taste it. If it passes all 3 with me, we eat it even if I canned it back in 2010. If your butter passes all 3 and being it was sealed, my thought is it would still be good. You can always keep that jar in the refrigerator and use as needed. I hope this helps. God bless. Mickey 😊

Any reason you cannot put the solid butter directly into the mason jar, put the lid on, and load them in the slow cooker?This would avoid the step of melting the butter in the pan and scooping it into jars.

Hi Raeni. I wouldn't get the exact amount into each jar if I just put chunks of butter into the jars and sealed them up. Also, I'm pressure canning these. Not placing them into a slow cooker. 😊

I tried this yesterday. I have mixed feelings on the results. I slowly melted the butter and put it in the jars and processed at 10# of pressure for 75 minutes (half pint jars). In the bottom of the jar was the cream and fat on top, as expected. The cream appeared burnt when I removed it from the canner, both the top and bottom jars. The "burnt" pieces didn't really incorporate into the butter during the shaking and cooling process. While the texture was the same as the butter I canned in 2015 using a different canning method. I have a jar of the 2015 jar open and we are currently using so I had something to compare the pressure canning process to. I think when I try again, I may do it the way milk is done, as to not overcook the butter.

This is interesting and I'm not sure how you ended up with the milk solids burning if you slowly melted the butter _unless the temperature got to 350 degrees or higher_ and started burning on the bottom and this was mixed in when you filled your jars. Butter doesn't start burning until it reaches 350 degrees. When we are pressure canning, the temp doesn't get any higher than 245 degrees so the butter wouldn't "overcook" during this process. I realize there are several different ways showing how to can butter, on the internet. I PC mine because of the milk solids (proteins) that are included with the fat. If I make and can ghee, I use the open kettle method. Go ahead and try it the way milk is canned. I hope it works for you. 😊

Hi Helen. Easy solution. Place the "sealed" jar into a pan of hot water to remelt the butter and then place on the counter to start cooling. After about 20 minutes give the jar a good shake. now place it into the refrigerator for ONLY a couple of minutes so it doesn't set up separated again, and take it out and give it a good shake again. The refrigeration helps speed up the solidifying process. Then allow it to cool naturally on the counter and it SHOULD stay incorporated. I hope this helps.
