I was given 23 pounds of cabbage and made sauerkraut. Never made it before. Did two recipes. One hot water bathed and one fermenting. It will be fun to see how it turns out. If I get some more cabbage I will have to make your canned coleslaw. Thans for the video.

Water bath, Yippee! I still haven't got the new valves into my ForJars canner...must get that done asap. Going to the farmers market tomorrow. My garden was a disaster this year due to me spending most of my summer helping my daughter getting the house she's moving into reno'd.

I never thought of canning coleslaw, but if you and me requires me to make sauerkraut when I have an abundance of cabbage. But I will have to try this. And if you grew up with a creamy slaw, when you open the jar, you could just add a little mayonnaise.

That's what I did I just took the slaw out of the jar with a fork and let it drain and then added a bit of mayo

Well when those huge cabbages come in this fall, I will be testing out a batch of this! This is my favorite type of coleslaw! I've got 3 medium hot peppers on hand so maybe I'll try those in a small batch. As long as they aren't set your mouth on fire peppers. Lol!

This was fun to watch, especially after being treated to seeing the behind-the-scenes. I haven't canned coleslaw since my mom was alive, she enjoyed it. Hubby isn't a veggie eater and I can't eat a whole jar of coleslaw myself so I just get to enjoy seeing yours. Can't wait to see the zucchini video whenever you upload it. Thank you for always being so informative and inspirational, Bev.

I love to eat the cabbage core. It has to be peeled of the tough pieces of cabbage stems but once it is clear, it is very tasty with a little salt. Cabbage is one of my favorite vegetables.

Another great video, Bev! If you have a silicone baking mat to place between your slicer and your island countertop, it will prevent your slicer from sliding around on you. The mat is flexible so you can just pick the whole thing up and just pour your sliced veg into your bowls when you're done. And it's super easy to clean the silicone mat up afterwards! I bought mine to roll my pizza crusts out on ( it's pre-marked into several different sizes of perfectly round concentric circles,) but the longer I have it the more uses I find for it.
@LauraMacMillan-el2kc5 ай бұрын
Forgot to mention: I wouldn't slice (with a knife) directly onto the silicone mat. They are pretty durable but I don't think they'd hold up to that for very long. :)

Yep, those mandolins are dangerousse. Mom sliced tip of finger almost completely off. That was last year. And can openers aren't much safer. When I was kid, she took hold of a lid from a can, and that jagged edge sliced into the web of flesh between thumb and forefinger. 🙄
