Tip for you Bev, have the canner very warm but not boiling when you load the jars. The difference in temperature between the jar and the water in the canner is what cost you that jar of meat. Love the tip on placing the lids alternating directions in the hot water 💚

I still have some home grown lamb to do as well. Love that this showed up around the same time I was processing.

Ohh you made me want to go find my bit of lamb in the freezer from valentine's day when I treated myself and my service dog(made sure I put some in the freezer for later...he claims he doesn't like lamb, will not eat squirrel, but he will eat rabbit) while my husband was in the hospital for back surgery in the city(75 miles away)...☝🏻💁🏻♀️I think we will be having curry lamb while he eats his chicken leg quarters 😉👍🏻

I made lamb stew and when my service dog finished her bit of lamb(☝🏻I made her dish before I started seasoning everything🐶) and when she finished her meal, she came over, sat haunched down, then proceeded to stare at me while waiting to get my bowl😂...I want to find a great curry powder because I used garam masala and I find that I would rather measure the ingredients individually than rely on the commercial ratio of ingredients🤔

Somehow the texture of precooked meat comes out better, less pastey than raw pack. I've found that hamburger barely chopped up while cooking, large grape sized chunks, turns out better after canning. Doesn't end up as mushy paste like it does when chopping small to eat right away.
