When I was a kid we had a large apple orchard. We called the bad apples culls. My Dad would take a box of the culls and shake them Our cows could hear that over several acres. You talk about a mad charge! They loved those apple culls!

I had an elder gentleman this year GIVE me all the apples I wanted from hisc5 trees. I canned anything/everything with apples and even shared processed products with my great Aunt and a couple of cousins. Most of the 170 pounds of these FREE apples I picked up off of the ground and trimmed the bad areas away. Another gentleman gave me 37 pounds of pears for $5.00, off of the ground. SCORE!! Made me one happy old woman!! 😂 lol

I just love your videos. Brings me back to better times in my life. My auntie and I would go pick apples on an old farmstead. Two huge trees! We picked the ones off the ground for sauce and apple butter. The ones still hanging we picked to can.. We always picked at least 2 give gallon buckets full. We didn't have a fancy pealer or slicer either. Just a couple of sharp paring knives. Nothing smells better than a big pot of simmering apple butter. Very good times.

I went out to get an additional freezer for the beef and chickens coming this month. While I was out, I ran by the butcher shop/dairy and the orchard. I bought another half bushel. I have already jarred up applesauce and apple butter. We love apple salad and I want to can some apple pie filling using OuUrbanHomestead’s recipe and maybe some apple pie jam for gifts. Depending on the crop, our orchard keeps cold storage and we are sometimes able to buy apples through March. Sometimes it is closed by Christmas. The crop looks great but right now they are kind of between the mid season and the late season apples. Not as many varieties available. It seems like the earlier varieties are more easily bruised and don’t keep as long so they need worked up right away or refrigerated for longer keeping. They later varieties are a bit hardier for storage for eating or holding a bit for jarring up. My apples become deer apples when they are bad and I share the peelings with them, too. So far I haven’t seen any bears & cubs here in my Indiana woods. 😮

Here in Ohio I asked our local orchard what they did with apples that had fallen. Thinking there may be a deal to be had for canning being as there where tins of perfect apples under the trees. She told me they left them there to rot because it's illegal to sell or give them away and they were fined 5k once for it. Upon. The 3rd offense your business is shut down. Amazing what we have allowed our laws to do. The owner can't even use them for personal use.

I have that second type of peeler and corer. I cut the spiral stack two ways, into 4 parts and they are the perfect size for pie. Last year I made my first pie from dehydrated apples and they were perfect. I let them sit in some boiling water first, just enough to cover them, and they were the perfect texture after baking the pie, unlike with raw apples that often can be hard to get cooked through or like canned apples that can be too soft. We didn’t get a harvest of our apples this year, but got an abundance of pears to dehydrate for pies. I ordered some apples from Azure to make cider and vinegar. Hopefully they will arrive in good condition as that has been a problem with their produce recently.

I noticed the blanching water looked pretty apple-y when I was canning apple slices so I set it aside to use when I canned my peaches. I hope it enhances their flavor. I didn't want to waste any nutrients from blanching the apples. (I had enough blanching water to can both the apple slices and the peaches.)

Been canning apples in light simple syrup. Can eat from jar, make pie or hit with immersion blender and have applesauce. Family favorite for applesauce. Plan on doing just one canner of them considering the apple cost here. They will be used for special dinners.

It might not be safe to can the syrup alone in the water bath canner. The apples in syrup are safe because the apples are acidic but the syrup by itself is a low acid food.

um...No. The syrup is almost 50% SUGAR! It is the SUGAR in the syrup that is the preservative!

Blessings Mrs from chilly Chicago. I'm never left with questions after your videos. You cover every detail. Thank you. Our Farmers Markets have plenty of apples. I've made butter, chutney, sauce and dehydrated a great variety of apples. I never get the same mix. One farmer has about 30 different kinds of apples. I want one of each. Can I use apple cider to replace the syrup?

1 peck of apples here are $16.50 to $22.50 depending on the type of apple. So that’s $66. And $90 a bushel.

Good deal. Here: 1/2 bushel macs, 25$ for 21 lbs! Sorry, can get a better deal in the store at 79c lb. You would think when you buy more it would be cheaper. I will be canning apples, stew and cabbage this weekend. Great job!

@@OurHalfAcreHomestead my macs took forever to get to a boil and immediately turned to foamy mush land! Removed foam, and water bathed it all. Apple muffins and cake this winter. No luck canning 🍎 will continue dehydrating though.

Bev, have you used dried apples for breakfast oatmeal? I'm curious if you have a recipe for microwavable oatmeal with them. My favorite on-the-go/for work oatmeal is an apple cinnamon flavor, but the individual 8 oz containers are up to $3/each (US)! I bought a gigantic bag of quick oats from an Amish grocery store with the plan of meal prepping/making up my own mix in half pint jars to take to work. Any help or suggestions from you or followers would be appreciated! ❤️ Tyia, y'all.

I like to prepare oatmeal in a pint size thermal container (thermos type, insulated). Just add 1 part oats, 2 parts very hot water and whatever dried fruit you have, apples would be great! Put the lid on and it's ready to eat in about 15 minutes or later when I'm ready. Quick oats will be softer than regular rolled oats, but should still work out! The dehydrated cherries I did this year are too hard for snacking, but soften up fine in the soaked oats.

With all of my 170 pounds of free apples given to me, I rendered down their trimmings for their natural juices instead of just simple sugar. Also made apple core/trimmings jelly and pancake syrup.

@@annieanderson6112 Using a juicer, juice the apples. Allow the juice to sit for 5 minutes so the foam rises to the top. Scrape off as much of the foam as you can so you are left with only juice. Pour the apple juice through a cheesecloth into a wide frying pan or saucepan. Bring it to a simmer. Let it simmer on low-medium heat, stirring occasionally. Scrape off any dregs accumulating on the sides of the pan with a spoon. After about an hour or two the syrup should have reduced by a lot (about ⅚ths) but it should still be still runny. The exact timings of this will depend on the number of apples and the saucepan used. Drop a spoonful onto a cold plate and leave it to sit for a few seconds. Run a finger through the syrup on the plate. If it leaves a line that doesn't run back right away, the syrup is ready.* Leave the syrup to cool for 10 minutes then pour it into a clean jar. The syrup can be stored in the refrigerator for up to three months. Alternatively, it can be frozen.(l freeze mine in ice cube trays, then store cubes in a freezer bag). You can also pour it into ice cube molds and freeze it in small portion sizes. I also add raisins, spices to parts if my syrup. I love this better than store bought.

You don't have to use a juicer. Just cook apple down til mush, strain out unwanted pieces, cores, peeling, seeds and go from this stage. A little more work but still makes a great syrup. This is how I made my syrup before I had a juicer.
