Our freezer went out one year when we were out of town. Everything on the top layer was very cold, but not frozen. It was during the pandemic with not a freezer in sight! Took we nearly 5 days to can everything! I didn’t lose a single morsel of food!

I've canned ham for ages and even can country ham in small half pints. Makes for a great item to have for a fast meal. I definitely can when I get a super deal and use it in everything from just something for breakfast to going into other recipes.

So glad to see this! i have a huge ham in the freezer that I bought on sale at Christmas but we didn't fix then because of a lot of dental work my hubby was having done and couldn't chew easily. I want to get out thawed and canned for better preservation and quick use. Thanks for sharing!

Love your videos. Now a new item to can - ham. Will be watching for it to go on sale. I use the lid tool occasionally to reset my "feel" of finger tight by hand.

Wonderful video, Linda. Thank you so much for the reminder not to tip the jars upon removal from the canner. I typically do that and I didn't think about the "play" issue in the lid. Goodness! You are my canning hero. You've taught me so much and my family is grateful. God Bless.

I'm learning so much from your videos, thank-you! When I try something new, you are one of my top picks to learn from. I canned ham, ham & beans & ham broth last year. YUM! I'm at the point I prefer canned meat over frozen. So nice to head to the pantry, grab a couple jars & supper is ready in no time, & you know what you're eating

Great tutorial, thanks for the safety tip on how to pick up the jars. My wife and I are just getting into canning. We had to order jars online because someone came in and bought all the jars at Walmart.

I definitely want to see some outdoor canning - I have a glass top stove so I can't do any canning on it. I purchased the electric water bath canner that 2leeloo reviewed and I also bought the All-American pressure canner that you reviewed and an outdoor propane burner which I haven't used yet. I'd really appreciate watching you first then I will feel more comfortable attempting my first outdoor canning session with a pressure canner. If possible, can you also show the process of how you prepare the food in the kitchen, jar it up and the the logistics of getting it outside and into the canner. It all seems so daunting to me!

Thank you for posting - I really enjoy your videos. I have had reasonable success with canning ham - it was in pint jars and I think my liquid to meat ratio was a bit too high in that the meat did not seem quite as flavorful as I thought it should. It was still perfect for soup or as an addition to baked beans or scalloped potatoes. Still far preferable to Spam. The next time I will try the onion and spices as you have done, in addition to filling the jars with a bit more meat and less broth.

+Noreen's Kitchen yeah I love them 921 because it fits under my microwave but it too can be a beast when you only have a few things to put in the canner so I pushed that button and ordered the small one because if you look through our new canning book they have a lot of small batch meals in a jar and that kind of thing :)

I just have to tell you! I purchased the ham broth base and the herbs. I put a Boston Butt Roast in the crock pot last night before bed along with the broth base and herbs. The meat tastes wonderful! This is such a great tip!

I have found that when I can whole hams it is best to use pints. I also like to put large chunks in the jars. 75 to 95 minutes is a long time to process Ham that is already cured. Smaller chunk tend to over cook. When I can ham I put diced onion, celery, and I add tomatoes to mixture of homemade Pork and or Chicken Stock to my jars. Another recipe I like doing with .89 cent a lb whole hams is canning ham and bean soup. I like to use pinto and black beans. Chunk ham and beans with the proper broth tastes great.

That ham looks great! What a great idea to put the onion in there! I bet the onion and the herb mixture really makes a fantastic tasting product. I used to have the worst looking towels from dripping or spilling on them. Now I use a small plate or bowl lined with a paper towel to set the jar on when I fill it. That way whatever I might spill goes right there. It works great and makes easy clean up particularly when it's something sticky like jam. Here's a great freezer tip. Freeze some water in an old milk or water jug set upright. You don't have to fill it, just 1/4 or so full. When it's frozen lay it on it's side. When you go away for a vacation or something you can check the jug when you get home. If the power has gone out long enough to thaw and do damage to the food and then comes back on to refreeze you will be able to tell. The water in the jug will melt then refreeze differently than the way you left it . I hope that made sense. Anyway, thanks again for a great video!

I keep one ice cube in a little container in the downstairs freezer for that reason. Takes no space.

I got a spiral for 99c/lb at Kroger a couple weeks ago. $37 ham and I paid less then 9 bucks. I really should have bought several and canned them all.

Never use spiral ham to can. You need to use large chunks. I like to try to cut whole hams into 2 inch chunks when possible. Also never try to can leftover ham; it will become hard in the cans.

That is something I try to do often, check my freezer and I have used freezer damaged meat as cat and dog food which I can. I cut off as much of the burnt meat as possible and can it for the critters.

Great video. With the AC on I place the finished jars on the counter where the sun is coming in at and then cover with a clean terry cloth bath towel to insulate from cold air when the AC kicks on, since this prevents shocking.

Deana Wade we ALL put a mat down under our jars as we fill them. I use old towel. Shorties (sorry Linda) like me, always dribble or overestimate the amount of juice needed. Its just a saying for when we make a controlled mess on our mat or towels.

Great job, Linda. I ruined my first Presto canning outside on the camp stove. The bottom warped from the heat. I was heartbroken. Now only my AA is used for outdoor canning unless I'm canning on my single burner outside.

yeah press those aren't advised to use outside and the Camp Chef get too hot but the All American canner is ok to do that with I was hard Lessons Learned

Great video. I canned Zacon ham a couple of months ago and used vegetable broth (the only thing I had at the time) I haven't used it yet but I'm wondering if I should have made a ham broth. Also, does it make any difference if the ham is smoked (as Zacon is). I am really looking forward to the recipes as I really did can a lot!!!!

Linda last year I canned 6 quarts of ham. I used a ham base to enhance the water in the jar. We found we didn't care for it as a separate meat for a meal, but we loved it in soups or omelets.

Today we had fresh green beans and potatoes from the garden. I put them in a pot with a pint of canned ham from 2013. Great!! You will like your canned ham.

Yes! Chickens absolutely love meat & it’s a great source of extra protein for them. Any extra meats we have that we’re not going to eat before it spoils, we give to the chickens. I even give all the meat left over after making my ham/pork/beef bone broth. They don’t get leftover chicken, tho…😬…no cannibalism. lol

I’ve not seen the quart n a half jars...where did you find them? I’ve found, so far, the best prices on jars are at Menards, even though they’ve gone up since last month!

Hi Linda. Yes I would love to see more videos on outdoor canning. Yes, I do have a Presto 16 quart but I called them as soon as I heard you say not to use Presto. They indicated that I can pressure can outside as long as my burner is not over 12,000 BTU. And that is where I have run into a wall. I would like to have that option to can outside if needed but I cannot find a burner at 12,000. And one that does not have a cover. Any suggestions please let me know. I will be watching for the outdoor canning sessions. Thanks a bunch. Zina

Hi Linda, I canned ham before in pints and it turned a dark brownish red. I don't know why it changed colors on me. If you know why please let me know.

I've always felt that precooked meats would lose a lot of flavor into the broth, seeing it cooks an additional 75/90 minutes during canning. I've been wanting to find a good tasting ham that is not precooked.....any suggestions ??

Hi Linda, 7 months ago you said that you stopped canning ham... Can you tell me why ? I do alot of cross referencing with your older and newer advice on these things... If I were to just can the diced cooked ham without the seasonings, would I end up with enough of a good broth by using chicken broth? I use that alot with ham and bean soups because I can usually only find chicken or beef broth... Thank ☺

Hi. I just canned a lot of ham. I think it's a failure. If I did something wrong I don't know what. I did everything in this video except for the onion. It was way overcooked at the 90 minutes. Don't know if I'll try it again.

You have an older jar lifter, I have one just like it that was my mom's and she would of been 98, and probably has not canned is 50 years.
