I love the convenience of freezing some of the tomatoes to can during the winter. It is a more relaxing than during the craziness of harvest time!

During the summer months I work myself silly trying to can all garden vegetable. Just learned from you ladies about saving them in the freezer until winter time. So smart on so many levels. IT EVEN HEATS THE HOUSE!!. Such smart mentors on this collaboration. ❤ summer time my tomatoes will be hanging out in my freezer.

I’ve been canning for years and this past summer had tomatoes coming out of my ears I never once thought FREEZE THEM AND DO THEM IN THE WINTER! Why did I not ever know you could do that! Thank you for this video you have saved my life in the future. Great idea! God bless ♥️

Thank you and the rest of your group for all your help. I have enjoyed all of the videos. I'm now planning my garden. I have ordered my lids from fourjars. I'm very happy with them. When I received my order, I had a very nice message from them. They are sorry for not having the amounts that ordered ,so they filled my order with more than I ordered. Just a different package. Another great job of explaining this way of using frozen tomatoes. I liked your reason why tomatoes frozen on the vine, cannot be used. I love how all you ladies consult with each other during these canning collaborations, like you did with 2leelou!!

Last summer, I finally took advice & froze my tomatoes instead of trying to process small batches. Now it's one large batch, time/worry saver for me!❤

awesome! I'm new to canning (just got a canner for Christmas). How great to show that we can freeze until we have enough tomatoes for a batch of.... whatever... or enough time to do it! It's one of those things that makes sense if you think about it, but as a newbie, I just hadn't thought about it.Thanks!

It's exciting and motivating to watch the Meal in a Jar and other 'fancier' things we can do for canning but simple recipes like this one are great, too. For me it is helpful to remember how busy harvest season can be (can't wait to start getting my garden going again!) and there are ways to not waste the abundance and extend the canning sessions. I also appreciate your tip of taking in consideration that frozen tomatoes will be different than fresh.

I liked that you took the time to remove alot of the seeds. Your final product looks amazing. agree that a blustery day is a good day to can. Once I start putting tomatoes in the freezer I am pretty burnt out on summer canning. .but later on it is much more enjoyable. Thank you for participating in Canuary.

Canning extra Tomato sauce in the winter (using extra tomatoes from the freezer), and in in a toasty warm kitchen when it’s freezing cold outside. At least for me it is. What could be better? …Eating something with that delicious looking sauce you’ve made. I always save my tomatoes in the freezer to can when the weather is cooler and everything else is canned. It seems every year all of my garden is ready for harvest at the same time. Thanks for being a part of this collaboration!

I don’t know why tomato sauce has always eluded me? I never thought to thaw/cook them down like that, I just tried to put them through the mill. I never realized I missed the cooking step. (Very scary!). THANK YOU!!

My dilemma with growing tomatoes is the anxiety caused with getting everything processed during harvest. It is wonderful to learn that they can be frozen and then processed later (after I've slept for at least a week). Haha. It's good to know that frozen tomatoes need to be processed differently and with your great instructions it now feels possible. I've been canning like crazy for the last week. All while binge watching Canuary 20224! (Almost forgot about it! Had to catch up!) Right now I'm working my way through clearing out the freezer, but in my case it's a ton of meat. I didn't have room to freeze tomatoes when my friends were giving away pounds and pounds of tomatoes in the fall.

I freeze tomatoes during the summer as well. I just finished processing ten gallon sized bags (+/- 50 lbs) of frozen tomatoes in my new Presto digital canner only to find out I did it wrong!!! So people listen up .. thoroughly read & re read your canners instructions as well as the recipe. Ugh....thanks for this video!!

Leisa did a good job this year teaching about Forjars canning lids and using them as well. I appreciate the explanation about the sauces, juices etc. with my tomatoes. Happy Canuary, thank you for your video. I did tomatoe sauce but left the skins and you're right, I did not like texture of it. But instead of throwing it out, I made a small batch of pizza sauce with it, added proper flavours, garlic, peppers and onion, the texture of the skins on pizza dough was so different, complimentary to the pizza. Very happy with, 💙

Congrats on your abundant harvest of tomatoes. Here in Alaska we had so few sunny days this summer, I couldn't get anything to ripen. First time I experience that-- truly scary. We need to all know that weather can devastate our crop plans. As of today, we're at over 115" of snow fall this winter., and having to shovel off our roofs to protect them. Crazy. I don’t have a garden but I do participate ina CSA . I froze tomatoes for the first time last year. Just last week I took them and and made a spaghetti sauce I believe I must have gotten a quart and half. We had dinner that night and froze the rest. Thank you for explaining everything I learn something with every video I watched. Thank you for participating in Leisa’s Canuary Collaboration. Thank you for doing this. It gives folks different ways to do tomatoes. I personally have never frozen my tomatoes. Just fresh or pressure canned. Canning tomatoes was my first time doing Canning. I learned the hard way. I have come to learn so much from the YT ladies, such as you and Suttons Daze. When I do tomatoes, I love saving the peels for the dehydrator to make powder. Very good point about keeping jars straight up prior to placing in the canner. Do not tilt. Thx for sharing.

I LOVE canning the last half my tomatoes in the Winter, the only problem I have is finding enough room in my freezers for a large bounty of tomatoes. THAT is an awesome problem to have🥰 Roasters are just the best too. Thank you for sharing.

Thanks for this very informative video - last fall, in desperation, I threw some tomatoes in freezer bags and into the freezer they went. Each time I went into the freezer and moved the bag, I'd feel guilty about them. After watching your video, I realized it was a *good* thing to do. I appreciate your calming way of explaining things - it takes away a lot of the intimidation of canning since this is just my 3rd year of canning. Thanks again!

I love watching canning too even though it's something I've already done :) I did my frozen tomatoes right after thanksgiving to get them out of the way...they were from the summer of '22! Still perfect shape. I noticed yesterday while rummaging in the freezer, that I missed a bag :(

I’ve never used my big roaster pan this way. This is a good idea. I don’t normally have lots of frozen tomatoes since I don’t have much freezer space but this would be a great way to use them. Thanks for the recipe and tips. Happy Canuary!

Dang! Y’all knew what I had in my freezer-my goodness!!! I gotta clean them out -and tomatoes and meat are the main thing ….hahaha yes my tomatoes are frozen flying bombs. Thank you -I had processed all the veggies -except the tomatoes

Thank you so much for this video. I have never water bathed or steam canned. I am learning so much from Canuary. I did not start canning in a pressure canner until 2022 and I have gotten addicted!! Now I am ready for water bath & steam canning. I absolutely love these videos. They are better than any movie I’ve ever watched!!!

I used to can quarts upon quarts of tomatoes in the fall, to make other tomato products in the winter. My daughter, who is so smart taught me this trick of freezing tomatoes in the fall and make sauce etc in the winter. Today it’s just my husband and myself. Now I to tomato sauce, soup etc the easy way with canned tomato purée. I’ve gotten lazy with age and retirement. Thank you so much for all your hard work. I really like making my own pasta sauce. Always know what’s in it.

Loving all the wonderful recipes and ideas in Canuary 2024. I learned how to can tomatoes very young with my mom who is now 88. Canned up tomatoes are so much tastier and can be used in so many recipes. Thank you for sharing your knowledge and being a part of this collaboration.

Have canned for over 50 years. Stumbled on the frozen tomato trick just a couple years ago. Was so much easier in many ways. Wish I had learned it years ago! Thank you

Awesome tips and I’ve heard some like Citric Acid and Some Lemon juice too. It’s probably best to try both and see which you prefer. I see citric acid on a lot of store bought sauces, but probably best to try either way. thank you for sharing.

I freeze my tomatoes all summer long. Because I dont have a humongous garden, i dont always have enough ripe tomatoes to can up. So I freeze them in ziploc bags until i have enough to make sauce or soup. Thanks for the tutorial. God bless you. And thank you to ForJars.

I love canning tomatoes because its easy and we go through a lot of canned tomatoes. Unfortunately, they are really expensive where I live. This year I think I will be taking a road trip to Pa. and pick up a couple of bushels of them. I never thought of freezing them before. Thank you for that great tip.

I always fill my freezer with tomatoes during harvest time and then can them on the cooler days of Fall and Winter. Freezing then thawing makes it so easy to remove the skins. Every year i say im going to freeze my surplus tomatoes. NEVER enough freezer room, so i just keep trucking. Whew! Maybe this year😊

We have a great garden every year but I never thought of freezing and then canning at a later time. Love the tips of the skins coming right off as the thaw too. I love how every participant that is teaching us in Canuary teach us all something different along with tips and tricks of the trade as you all go. Canning our own tomato sauce is an amazing idea. With all the GMO's and Bio-engineered ingredient's to our food today. I will be canning for my family soon as can get all my products together and get started. That is the way I do my tomatoes. But I put my tomatoes though my kitchen aid strainer. I finish by boiling down till I get a thicker juice. It makes the best juice for soups and chili. But I didn't know about the reason not to can tomatoes that was hit by frost. I just don't But didn't know why. My grandma didn't so I never did. Good to know. Thank you for all the information.

Awesome video!! I actually froze tomatoes last summer/fall that I couldn't get canned when ripe so I canned them in November to free up space for venison! It is such a good idea! I appreciate all of your tips and expertise!! Thanks again!!

My mom would freeze her extra tomatoes and use them in meals later in the year. Nice to know that if I want to can them I am limited due to the change from freezing. My tomatoes didn't do very well this year. We have a famers market near us. It's a good way to support our local famers, when our own gardens doesn't do well. It's a great way to get the veggies we need, to can. Thank you for sharing this great information, it was very helpful! Blessings!

This was the last thing I actually canned. I also froze my tomatoes. I have the juicer attachment on my Kitchen aide. Letting the tomatoes defrost, quartering them and cooking them in a large put, smashing them with a potato smasher then running it through the juicer worked PERFECT!! Definitely having the tomatoes nice and hot makes the process so much easier to go through some sort of strainer! I struggled running cold tomatoes through a strainer. Great demo!

I was wondering about the whole science behind freezing tomatoes. My cousin and I usually do about 120lbs every summer. She only uses them for juice and this would make her life easier during the summer when we are canning other items for both of our pantries.

I so much appreciate this video. I had a freezer full of tomatoes to use and did something with them BEFORE I saw this video. Your video showed me how I should have used them instead of how I did use them. Always learning new canning tips!

Roating pans are a major time saver. I also do my lemon juice 1st. Once after a 12 hr shift at work I lost track and ended up pouring everything back in the pot and starting all over just in case. I have since went through all those jars and they wer all still delicious and safe. We have a bunch of vintage jars also. My husbands cousin is an auctioneer, so he shares his finds. Thank you for this video.

Great video! A few years back I had to process over 200 bs of tomatoes that we had shoved into various freezers, only to find during my freezer organization and inventory we did not get them all!😂 I really have to get one of those electric roasters for things like this. I have hesitated until now because it commands precious storage space, but for big batch processing it really seems worth the space trade off.

Interesting information about how freezing breaks down the structure. I’m going to do some this summer before freezer and check the difference in my sauce. I’m always chasing the best sauce and I’m not there yet. Appreciate all the info I learn in Canuary.

thanks to Leisa I dont stress about getting all my tomatoes done at harvest time I freeze them too and use them for bbq sauces...sloppy joe mix...chili sauce etc. Love your video thank you for taking the time to discuss all the possibilities with our frozen summer harvest😊
