Get the crispiest pickles the easiest way! No one likes a mushy or soggy pickle, and steam canning is the way to get the best, most crisp and CRUNCHIEST pickles ever! My amazing friend Brittany Hölljes (hear her music by checking out the band Delta Rae) has been helping me around the farm in between tours this summer, and it was HIGH time I taught her this super easy canning method to make the crunchiest pickles in small batches. Thank you Anne for the pickling ideas. Never had pickled okra, but love it fried with a bit of olive oil, salt and pepper. Brittany is a great side kick. Have a good weekend all.

@@AnneofAllTrades try cutting it in 1/2 inch slices two cups.nPlace. In cast iron dutch oven add 2tbs oil olive or Canola and 2tbs butter 1/8tsp pepper 1/4 tsp salt and a quarter cup good cornmeal. Bake at 400farenhite until tender. South Louisiana recipe you can also add onion Powder and Cheyenne pepper if you like more flavor. Spices can be adjusted to suite your tastes. Corn meal keeps it from getting slimy like boiled okra.

awesome vid. i love my moms homemade sweet pickles. my brother has started making pickles for my daughter who loves dill pickles. also the college in my town are the Delta State University Statesmen, home of the fighting OKRA. the okra was mascot and tag was started as a "joke" poking fun at the small town university.

That is great to know. Thanks. When I am taking the sealed lid off of a canning jar I use a butter/table knife. I hold it flat and catch the lip of the lid with the back spine of the knife I then just lightly pry it up and it pops loose. ;)

I have never had a homemade jar of anything with that outter ring removed. I always use the edge of that to pop the inner lid seal.

Exactly how my mom makes pickled okra. She just made 23 jars with hot peppers in the center for some extra kick.

Those ghost peppers definitely added a kick- these really are some of the best pickles I've ever had, and my dad, who's now visiting, agrees. I have had to hide a couple jars away so they don't all get eaten! haha

When I was searching for recipes of sauerkraut I remember people saying how if we add vinegar, the bacteria will die during the fermentation. So... could this work without vinegar then?

Check out this video: kzbin.info/www/bejne/o2PQeJqcgreDrLc Making Kraut is a very different process than canning pickles. You CAN create pickles by fermenting your veggies (which I show in that video) and then can those ferments to preserve them, but the biggest difference here is that adding vinegar and steam canning preserves the crunch, taste and texture of the veggies you are pickling. When you ferment veggies, like when you make kraut, the fermentation process creates the acid that ultimately preserves them as the veggies start to break down and decompose for lack of a better word. Does that make sense?

Are those actually pickles? i think they're canned vegetables. To be pickles, there needs to be acid, which you either get by adding acid (vinegar), or by allowing lactobacillus to grow and ferment them, producing lactic acid. By canning them, don't you kill all of the bacteria?

The brine is the acid ;) 1 quart of vinegar is pretty acidic, wouldn’t you agree?
