Wanda please keep posting these videos of old time canning methods my great grandma never had a pressure canner but she canned everything unfortunately I was to young to remover how it was exactly done.

I grew up on the "40's/'50's and we didn't even have a water bath canner, but we still canned. Wish now I had the way we did it written down. But as a child I just did what mom told me. Back then you followed your parents inductions, period. She did sour kraut in the butter churn, then put in jars. The only okra I remember canning was a soup mixture. We canned the tomatoes sepreate. We opened a quart of the mixture to a half gallon if tomatoes and that with cornbread was a meal. The powers that be today would probably have you in jail if you did everything like in yesteryear. LOL.

@@patriciahammett4197 Absolutely. All the way up until I was like 14 or 15 my Mother and Granny still had garden's in their backyard...in the city lol. It may come back down to that if you want to survive. Best to be figuring it all back out now....if the grid ever goes it's going to be tough times until we get the rhythm! I tried this okra canning recipe and cannot get enough of it fried. I have watched so many of the precious Old Alabama Gardner and miss him. Your okra looks so good. He would be proud to know you have shared his recipe. I know what we are having for lunch tomorrow!!!

Another thing I wanted to mention Wanda was if you raise the temperature of your oven to 212 and leave your jars in there for 20 minutes before you process it actually sanitizes them perfectly. I learned that from Rose Red Homestead and I have done that with all my canning now.

I love that old fashioned canning still works... people are way too cautious now days- "we" survived a long time learning from "granny" instead of "officials"...

I love that you showed the age of the previously canned okra. So many people are anxious about eating home-canned goods beyond a year old. We ate pasta sauce from 2015 not too long ago. Still delicious with home-grown spaghetti squash from the 2021 harvest. I am glad more and more people are looking to the traditional ways to preserve and feed their families. Thank you, Danny and Wanda for everything you do and teach!

I love this. It's not that it's the old way, but it makes it so easy to can a little bit along the way. I don't have a large number of plants, but I an cutting half a plastic grocery bag every other day. Being able to can a few along and still eat fresh without breaking out the canner is a God send.

I miss OAG. Mr. Charles was such a fantastic gentleman. "MMM, I wish I could share this with you" I'm so glad we have some memories to share of him through his videos. I must apologize, but I've never learned to get behind okra. It's a texture thing for me and a bit of a taste issue. I keep trying, but so far it's a no-go. I've had it stewed, steamed, fried, baked, you name it - I've had it that way and by many different cooks. Just looks like that's the only veg I'm going to have to say pass on. 😒 I know there are TONS of people who just love it and I'm not saying anything against it, so please don't hate on me. As far as I know, that's the only veg I just can't seem to eat. If Mr. Charles says that's the way to do it that's gospel to me. Thanks for sharing Ms. Wanda. Blessings always, g.e, not so much (edit: I've been using the 4Lids since you first mentioned them, maybe middle to end of last year and no failures yet. I've got a case of them and I feel very safe using them)

I'm in the south east and my best friend grew up in Washington state. She said she never heard of okra until her husband brought her south to live. But when her MIL taught her how to fry okra she was hooked. I'm like you as far as fried squash is concerned. But I love it stuffed. I can eat it fryed if you put sliced onion rings in and bread it together.

Old Alabama Gardener also has a similar video on canning squash for frying. People need to learn how to make leather britches which are dried green beans, a lot of videos on how to. All methods we may have to use in the future if we don't have dehydrators and pressure canners.

We did the canned okra last year. Just now remembered to get some out of the pantry. Opened it up...drained it off and tossed it in corn meal with salt and pepper... All I can say is that is as close as you can get to fresh okra. My wife said we will NOT be putting any in the freezer this year, whatever we put up WILL be canned just like this!! I used your recipe for canning okra. My dad brought me back about 1/2 bushel of okra when he went to Georgia. We love it fried. All my jars pinged.

You said 10 and half quarts of water, that’s 10 and half cups of water. I love this way of doing okra. I learned from Mr. Charles as well. I would rather eat fried okra after doing this instead of fresh fried.

Ive done soup beans and soup like this but put jars and lids in oven at 300. Boil beans or whatever and soon as you bnb pull a jar out, put the hot mix inside and put bnb lid on. They seal up real good. Peace.

Hey Ms Wanda, Thank you I been lookin for somethin like this most of the canning recipes turn them into pickled taste. I have so many OAG videos on playlist I am also thankful and beholden to his family for keepin these up for us to see use watch and learn from. I will be using this come the fall. I want to see your video on how to fry them. I can fry the livin daylights outta any fresh okra, green tomatoes you can give me. This one I'm guessin might be a tad different. My grandmother and mother canned most things outside in metal tubs with a piece of tin over top, over a fire. 21 qts at a time. From 2 to 3 hours depending on what it was. They never used a pressure canner. Always White House apple cider vinegar and non iodized salt. They canned inside as well for small batches. I still use moms blue speckled water bath canner. It's at least 40 years old. I wish I'd payed more attention on many things, when they were still on this earth.

I loved Old Alabama Gardner! Watching this I had red flags, the process is not NHCFHP recommended, but they haven'ttested many things. Okra isn't found in Maine often. I won some seeds from Roco Farm. So I put in big pots on my small greenhouse. My mom was from TX, & would be proud. I may give a try - widening my boundaries. Looking to frying & tossing in pepper jelly - sounds amazing.

My stepmother is only woman I knew that could can okra and it be good when you fried it. I so wanted to get the way she did it but she passed away, thanks for sharing this video I will certainly try it.

I made green beans last year from old Alabama gardeners video but I was so worried about it not being safe I added too much vinegar and ended up with picked beans. I have just tell myself to use the old time method and not go crazy with the vinegar.

Wonder if you could do squash or green tomatoes like this for frying later? We have tomatoes going in greenhouse so will hopefully have some through the winter.

Hi Wanda! I’m in Texas and I planted the Star of David okra after watching y’all video. It’s really hot here and they have just taken off! Been picking them since June. I gotta say your okra looks more solid inside than mine does- seems more open spokes. I only have 8 plants in an Earth box, and they are about 7 feet tall and I have 7 quart bags in the freezer already. I’m gonna pull them out and start canning them! Thanks so much! Love you guys!! ❤️

I'm thinking now that I should put in a couple more rows of okra! It's my favorite veggie and I could eat it as a meal! I would love to try the Star of David variety, too. I have only had Clemson Spineless. Thank you, Wanda! I have been a fan for quite a while now and at 65 (in August) I'm still learning so much from you and Danny! Y'all are great teachers.
