That sounds delicious. I never thought of doing a spiced pineapple now I do grill them on the grill with steak seasoning. But I never thought of pickling them. I will definitely have to give this a try.

I am finally getting to this today. I didn't have any whole allspice, and none of the stores in our town carry it. Since, I'm improvising by using some mulling spices my daughter-in-law got me for Christmas. In addition tot he cinnamon, cloves and allspice, it also has star anise and dried orange peel. I saw at least one other recipe online for pickled pineapple that had anise, so I think it should be good. Going to be putting it in the steam canner here shortly!🤞🤞🤞

Oh, my word-its delicious!! I doubled the recipe but only got 5 jars. The pineapples at Kroger are a bit smallish. I'm going back for more!!

You can't even taste the apple cider vinegar. It really makes it sweeter and brings that flavor out even more
