thank you your channel is the best. I am a new presser caner. my mother canned all my life. but when i was a kid I had no interest in learning but now I am in my 50s I am learning from you all. Thank you.

It's great to see you using Taco Bell seasoning packet. :-) That's what I use for our tacos. It's the only taco seasoning I can tolerate because it's not spicey hot. Now I'll know how I'm going to can my taco meat. Thank you! Another way we like to eat taco meat is on toasted buns with cheddar cheese and diced or sliced tomato, and lettuce if you want it. It very filling that way, too.

That is such a great idea!!! I usually just freeze small portions, but I've been through a 4 day power outage. Canning is better!!!

I lost 20+ of a variety of meat in 2022 when my house flooded and knocked the upright freezer on it's back and killed the motor. I was so disappointed because I had just begun cleaning out the freezer and canning the meats when that happened. At least I got to preserve about 15 pounds. Never again!! Now, I only store meat in the freezer until I've got enough to get it canned in batches where it's safe and shelf stable for years if need be

Great video! We've been canning beef and chicken taco meat (our own seasoning).. chicken fajita... for years. I know lots of people are ingredient only canners, but it sure is FABULOUS to open a jar, heat it up and EAT a wonderfully flavorful meal :-)

Thank you; tacos do sound good! Shopping soon for meat to can up some but omitting the onion and peppers as the grandkids don't like them. We like them your way but also with diced tomatoes, lettuce and sour cream. Great time of year for warm eats! Yum!👵🎶😊👍

We often add the lettuce and tomatoes too and sometimes refried beans when we warm up the meat.

Love my canned taco meat...I didn’t use the packets because I read it has a thickener in it that shouldn’t be canned not that I normally follow the rules to canning..lol..glad to see this video it will make it so much easier on me instead of using numerous spices..I followed Wendy Quinn;s canning video here on KZbin..

I too was wondering about the packaged taco mix because it has thickener in it. My book says not to use it. I don't know if there is enough liquid in the jars based on the canning guidelines so I'm second guessing.... Im new at canning meat too.

@@OntarioGardener ~Hello..this is not a USDA approved method , that being said I’m a Rebel Canner ..the very first food I pressured canned was Meatloaf back in 2012 still have a few jars left..it’s up to you to deem what you feel comfortable with.

Thank you for this video! I am a fairly new canner and read that canning with thickeners such as flour, cornstarch, etc.. is a no no, but I have explored beyond the ball book canning methods... canned milk, ghee, and looked and looked about using these taco seasoning packets for canning with no success until I found this video, so thanks! You just confirmed to me that its just fine and will do this once the ground chicken or turkey goes on sale.

yea tacos! I agree with you on the canned ground meats, often flavorless but i had not considered spices with a bit of extra water...hmmmm gonna do this myself! and an FYI for others, cipotle peppers arejalapenos which have been smoked and dried...so you can make them yourself, but i also used the canned cipotles as they have that wonderful sauce with them (and are a hell of a lot easier!)

In the ball blue book is a recipe for seasoned ground beef. I stopped using chipotle beef because it was not as versatile, too spicy for some. I have used a number of recipes for both chunks and ground beef recipes… prefer the texture of ground.

Hi! I am thrilled to have found your channel! Everything I have seen so far is a great balance of knowledge, experience, wisdom and humor. My husband said you must be a kindred spirit. I have a question for you on which I hope you will comment. I am new to canning and have recently found out about this ridiculous situation with the lids only lasting for 18 months! Is that true for freezing jars as well? Any advice/information you are able to share will be greatly appreciated. I am also wondering if there is a work around for long term. Thanks again! I am going to spread your channel like fabulous onion jam! 🌻

What is the shelf life of the meat in the pantry?

Eri 74Riv depends on fat content, pantry temp swings, light etc. But usually years for me. Unless we eat it first.

Hi PP...I've heard some people say that if you put the taco spice in the meat when you can it, that it will get stronger in the meat & get bitter. Do you find that to be true? I want to can some & I trust your judgement. Please help. Thank you.

I do not. It may depend on how long the jars sit on the shelf. Mine get used up pretty quick.

It is just individual preference and how much you usually can at one time. I would probably do the 23 qt.

Great video. I like the addition of the peppers; we may have to try it next time we make tacos. What do you think of dehydrating cooked ground beef? I saw a video online where someone did it that way (in a dehydrator) and canned it for later.

I have never tried it. I would stick it in the freezer after dehydrating just to be safe.

I have dehydrated burger. Worked out great. Direction said to rinse fat off with water. I used beef broth and then cooled removed fat and froze for next time. I dried it to “rocks”. Vacuum sealed it in a mason jar and rehydrated it a year later. It tasted as if I just fried it. Consistency was like fresh.

Hello, Do you think that the taco meat salt/sodium taste is stronger after pressure cooking? Just curious. It would make a difference to me as to whether I would make my own taco seasoning or use prepared packets of seasoning.

One year for maximum nutrition. You can still eat it after 3 years but it ill lose some of its nutritional value.

Sorry, I know this video is a year old but, we’re you supposed to rinse the fat and oils from the cooked ground beef for this, so that when it’s canned, it doesn’t go rancid OR does it not make much difference, when you have a family that you know will go through it in less than 6 months to 1 year?

I am fairly new to canning and this is my first time PC meat. I PC'd 5 pint jars for the proper time and all sealed but one. The seal did not sound right when I tapped on it at the 8 hr mark and it looked like it was the one that had siphoned. When I picked it up, it unsealed. Was it still safe to put in the fridge to be consumed? I am confused about this rule that if within 24 hrs an unsealed can be put into the fridge and it would be good to eat. Does this also apply to meat? I know you can not leave cooked food out for that period of time and expect it to still be safe, so I am confused.

Since the meat is cooked at such a high temperature the unsealed jar remains very hot for some time and should be fine after 8 hours if you refrigerate.

You should use it within one year. That being said, I have used meat 3 years old and it has tasted fine.

All the homemade food videos you make and I see there in the background those awful jars of Vlasic sauerkraut. You really should make your own. Once you do, you'll NEVER go back to store bought.

I have thought of it but I have to admit I like Vlasic when I drain, add water and cook with pork. It is what my Mom made :)

@@PrepperPotpourri You really should. It's too easy not to. Plus it has all the healthy probiotics that the store bought stuff doesn't. Because once it's been processed it's dead. The processing kills all the beneficial probiotics. And let's face it, to make sauerkraut all you need is cabbage, salt and time. And the flavor is FAR superior.
