Beef brisket canned with onions, garlic and Mexican spices for quick and easy tacos or meal starter.
Ingredients needed for every 2 quarts:
2.5 lbs. beef brisket
2 c. sliced onions
2 t. salt
2 t. dried Mexican oregano
8 garlic cloves, sliced
1/2 c. chopped fresh cilantro or 1 t. dried
2 chipotle peppers in adobo, finely chopped and 1 T. of sauce
Beef stock, I estimate 1 c. per quart
Fill hot jars with meat chunks and onions to 1" headspace. Top off with hot stock maintaining 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:
Weighted gauge Dial gauge
0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

You are so right about the Mexican oregano. The taste is nothing like regular oregano and is much better in Mexican dishes.

I'm not much for Mexican food, but, I love Italian food. Do you have any "Meals in a Jar" that are Italian in origin? Things like Chicken Cacciatore, or Italian Wedding Soup? That would be useful for me, because then all you have to do is boil out some pasta. Appreciate some pointers....love your channel and have made several of your meals.....favorite.....-----Bourbon Chicken----- to die for.

I was just thinking I need chicken cacciatore! Even if I have to “finish” when preparing, I think it would be awesome to have the basic on the pantry shelf. I’ve been looking at recipes to see what’s safe to can. I did the same with roasted red pepper hummus. Garbanzo beans, roasted red peppers, garlic, etc. just added tag to add 1T oil and 1T tahini sauce when blending to finish. 😋

YUM! Another keeper. I would have to do quarts the way my hubby eats. I swear he has worms (j/k, just a very physical job for a 63 yr old!) Thank you, Carol. You always keep your canning area SO tidy! I try SO hard, but usually have some sort of small mess😁

Oh my goodness! This was so tasty! Tonight I mixed this with canned chipotle black beans and dairy-free cheese. I have yet to can enchilada sauce, but bought the dried chilies so that’ll be soon. I made rice with the juices from the beef for a side. Thank you! Edited , because I forgot to say I made enchiladas 😊

When I first saw taco meat, I thought, " she hates canned ground beef". Then I saw you used brisket ( sooo delicious!) this is something I'll definitely try! Love your top, it's my favorite color, don'tcha know.

Looks good Carol, have you ever tried cooking your tomatoes, onions on the grill before canning, I do this in the summer, have even added wood chips to add a different flavor. For anyone out there curious to the difference between Mexican oregano and Greek or Italian, Mexican is more floral, a big difference, a lot of the oregano actually sold is Mexican, you can tell easily by the smell, Carol you should grow it, it grows great and dries great. I do this with Greek and Mexican, I never have to buy it, and the way you use it, you would not have to worry about running out.

@@markfults1693 I started with plants from local nursery, save seeds and replant, some plants come back on their own. I see seed packets for both Mexican and Greek from any of the major seed companies. Also dry great.

You can substitute any meat, but hamburger has to be cooked first because it gives off too much fat, it needs drained off. Also some people don't like the texture after canning, I use it all the time for taco meat canned and love it.

Looks fabulous! So, when you open the jar, I assume that you shred the meat then. What do you do with the liquid in the jar?

You’ll need some of the liquid to keep the meat moist while heating

That’s for canning your own soup method. This is canning meat and I followed the guidelines so my method here is correct

Shred when you open a jar. The canning process will make the meat very tender

Yes. If you use chicken also use chicken stock instead of beef

I used brisket bc that’s what Ball recommended but you could use any cut of meat you prefer 😊

It does have a bit of heat but not much. If you’re concerned reduce the amount of Chipotle peppers 😊

No you shouldn’t add it. Grains or grain products are not recommended for canning
