Hi Lori, my wife's grandmother called the butternut squash "bells". She would bake them till they were soft. Then she would make them into custard filling for "bell pie". The pie tasted like traditional pumpkin pie but sweeter and lighter. Really good!! Try it sometime.♥️👍

Dear Ms. Lori - I have never seen such a marriage of great flavors in a butternut squash soup - especially the addition of Granny Smith apples and leeks, and what a beautiful color! Such a delight to watch and can't wait to make this. Thanks so much for sharing : )

I add ginger to mine, it adds another layer of warm flavor. I've not tried to can it yet, now I will thanks to your sharing! I've never heard of cider cream either. Im excited, what a treat! Thanks again for sharing & a good and happy New Year to you and yours.

Hey Mr Brown, made your soup today, and it was delicious! Thank you! My sister planned to can most of it but people kept just walking in the door and, well, one bowl after another and we were only able to can 3 pints. Better than none, and it was loved by all!

Enjoyed the video. I discovered a used canning jar lid works really well in removing seeds from squash.

I just made a batch of this from a different recipe (with sweet potato, apples, onion). I just love butternut squash soup, and prefer homemade over store bought. I'll be sure to try your recipe, too. Thank you for sharing.

Do not microwave any foods you intend to eat. It destroys all nutrition. Microwaves make great faraday cages!

It's easier to clean leeks by cutting them up first. Then put in a pot of cold water and swish them around good. Drain them. Then put them in clean water and swish them around again. Then drain. Then they are totally clean throughout.

I roast them in the oven whole and then scrape out the pulp. So much easier than peeling and chopping.

Ms Lori, I love squash soup but have never heard of putting cider or apples in it. Can't wait to try this recipe. I wanted to let you know that for New Years, I made your recipe for black eye peas and cabbage and must tell you it's one of the best things I've tasted in a while. Ooohhh... This looks so good! I've tried the butternut squash soup from Costco.. didn't care for it, it was very bland. I think the apples and the seasoning you used would make it so much better. And that cider cream... to die for! Looking forward to more of your great recipes🤗

This recipe looks so awesome! Everything I read says to puree the soups when opening cans to eat, not before canning. Do you have any issues with canning pureed foods?

How does Mr. Brown keep the squash bugs out of your squash plants?

I spend a lot less time on squash bugs than my wife she turns over every leaf and looks for eggs when the bugs show up and scrape the eggs off and throw them away are tearing the leaf off puts them in a plastic trash bag putting the plants in a container and keeping them off the ground help until hot dry weather by then the bugs get really bad we keep trying different things some help but stopping them completely has not happened but we will keep trying their needs to be something that loves to eat squash bugs LOL you just have to stay with it and keep trying

I don't care for carrots in soup so I use a Tab of brown sugar in my squash soup...less is fine too. 🍵

Love your healthy cooking. We grew lots of Butternut squash a couple years ago. Can't have a garden anymore for the deer. What cooking oil do you use? You said you stopped using veg oil. Thanks!

I love your channel! I may have mentioned that before. 😉 I find that if you microwave your butternut squash for 30 seconds or so, it softens the skin a bit making it much easier to peel.

For picky kids you could call it Sunshine soup & add more carrots, yellow squash &/or sweet potato to add more veggies. Once it's pureed you wouldn't know it's in there. Leeks tend to be expensive where I live. Do you think red onions could be a good sub especially if you sweated them alone in the pan 1st to mellow the flavor?

Y’all are our kind of people We love watching your channel. I am a farmer in eastern Colorado and my better half is originally from southeast Missouri. We are pretty self sufficient I do most of the canning and she is the cook. We come in at night and turn KZbin on on the tv and see if y’all have put on a new video. I sliced my leeks before I wash them and then they all separate out apart and you can really get the dirt out of them by ruffling your fingers through the the water and the leeks and then lifting them up out of the dirty water

I didn’t think you could can puréed squash soup? I don’t see why not though. It’s not near as thick as chili or split pea soup

Thanks for recipe. I don t do canning, I think in Finland there is not a canning stuff available. But I will try this soup. I just hope I shall find a butternut squash from our market. But this canning is interesting way to preserve food.

Sorry, I was wrong. In Finland had been canned food. I made a booking to our library for a book that has for example canning recipes. My mother was a really good cook and made all kinds of food. My memories of her brought back pictures to me, canning mainly different kinds of berries like blue-, lingon- and cloudberries, as marmelades. So, we have this old time preserving food, too. Slingtly different way thought. You see 😍 I studied this matter. Thanks to your videos telling old times. My bad 🐷🐮🐔🐟🐖🐇🌾🥕🥔🥬🍳🥛🍽.

@@LB-eh5fz I think nowadays we buy our food. Food is fresh and safe. And our kitchen has changed. We have our freezers and refrigerators. Before we had cellars in our home, they were made f.e. canning food. Our basic family, woman/partner goes to work, too. It´s about what you are interested like a hobby ( to grow own vegetables) or ideology ( vegan). But I must clear this canning food to myself, how it is. And try it. There´s a book waiting for me, about preserving food in our library :).

Anne Keisu I understand what you mean, we work have homes and families to take care of ,it’s easy to grab food at restaurants, and grocery stores in cans , canning does take a lot of time ,patience, money, i live in the country in Kentucky, I’ve always had a garden from very young age ,I freeze my garden items ,it’s quicker than canning in jars,, but I like canned food in jars the best ,,,, I enjoy the process of watching my garden grow then harvesting ,then washing and preparing for the deep freezer,,, I’m enjoying items everyday I grew last summer from my freezer, I love watching Mrs Lori and Mr BROWN,, I like watching her do the things I used to do and things I wish I could do ☺️ I’ve enjoyed talking to you Anne keep enjoying 😋

OMGOSH!!! Your soup is amazing !!! Just made it ! I doubled the batch! I added an extra Granny Smith apples (5 total) extra butternut squash and some extra Apple Cider. I like that sweet! It is so amazing ! I was able to get 16 pint jars for the winter. Half of the pints I grated some fresh nutmeg on top before they went into the canner! I so love your recipes! I'm with everyone else, waiting on your Cookbook! And I typically am not a cook book girl. I throw in this and that and little of that but I enjoy your recipes ❤❤❤❤❤

I made this today. Used the crockpot to cook it while I was at work. It is FANTASTIC!!!!! I got 8 pints in the canner, and had a nice bowl for myself left over. Thank you for sharing this recipe! It is definitely a keeper! YUMMY! :)

I've made Squash Soup, Carrots and Pumpkins. Didn't think to Can it. My daughters saved the Seeds, Roasted them and add to the Soup. Adding your Recipe to my Fall/Winter Stock. Now I need to make that CiderCream Topping. Love learning from you.

Hi Lori, I made the raisin pie.last night because my husband loves raisins. It was a great.hit!!! I couldn't figure out why it wasn't thicking up, jad to rewatch the video. You forgot the flour in the recipe box. Lol!!! It smelled sooo good. Reminded me of rice pudding. I added the cinnamon and nutmeg. Alittle too sweet for me, but still very good. Thumbs up😁😁

I have not tasted squash soup, this looks good, can you use different squash for this soup, Acorn etc. we used all our butter nut and we have a couple others that I need to use up soon. Enjoy your videos.

About growing leeks. They grow well here in Canada, so heat might be a problem. I start mine from seed in February. I start them in a fairly loose mixture broadcast in the container. As soon as I can work in the garden, usually May, I dig a trench, separate the leeks, you need to tease the little leeks apart and place the about five inches apart in the trench. Move some of the soil to cover the roots. As the leeks grow, gradually bring the soil from the sides of the trench to come up around the sides of the leeks. By the end of the season the trench will be filled up and just keep adding soil to blanch the lower part of the leek. They like lots of water, and some fertilizer. They can be frozen. I clean and slice mine and put them right into freezer bags, to use as needed in soup or casseroles. I make butternut squash as well. I use butternut squash, sauté an apple an onion, a bit of cinnamon and some ground sage in butter add the squash and some chicken broth. Cook until tender, purée the lot and add a bit of cream. Yummy. Salt and pepper to taste.

That would be really good with a grilled ham and cheese especially if you use like a nice smoked Gouda. I’ve got a couple of butternut squash soup recipes I cannot wait to can.

This I will make in the next day or two. I will use onion instead of leeks though. I don't have access to that. I have never had squash soup, but grew quite a few butternut. Canned a dozen pints cubed from just one big one. Thanks for showing us this Miss Lori. Update: making it now and almost ready to blend and get it in the canner. Thanks again. Love your channel. I lived in Wales where leaks are a big deal a big big deal! The one that tastes like licorice that you are thinking of is fennel. Leaks have a lovely mild onion flavor and their used in most cooking in Wales I have so many ways to cook with them now! :-)

If you have a bigger Asian market in your town. Look for a cabbage shredder/peeler it looks like an overgrown peeler. But those peelings will jump off. And makes nicely shreds of cabbage too.

My recipe is similar but has some ginger and no carrots. I also use 1 small acorn squash with the butternut. That creme looks amazing. I can almost smell the soup...come on fall. 👏🏻💕👏🏻

thanks lady. i have a bunch of winter squashes and was going to make pumpkin butter but now i'm trying to minimize my sugar intake and have decided winter squash soup is a better option...

I’ve seen where you’re supposed to can butternut squash soup in chunks and purée when ready to serve. Is this recipe from a Ball book?

Or bake it and scoop it out I can't do it raw. I would use quart jars, I don't like to waste lids. Hard to get right now. I never had apples in squash soup. Has this been a tested recipe and safe to can this way. Can you do quarts? How long would you pressure can it?

I have never had leeks,my momma never bought them,dont remember ever seeing them in the produce dept.around here in Alabama. I go through the onions though !!

I cut my leeks up, then wash them. Sparkly clean leeks! I also cube up the neck of the squash and then stuff the bottom 'ball' for dinner.
