He's called バルファルク (BA RU FA RU KU) which is the combination of 'valor' and 'falcon'. I've seen it spelled a couple ways. The wiki uses Valphalk, I prefer Valfalk, and now with you i've seen Valkfalk. Until/unless we get a localized name, I don't think it really matters. No point in splitting hairs, so long as we all know what we're referring to.

The Demo doesn't do DB justice, you have no elemental attack and Valphalk has really shitty raw hitzones, so you have to rely on element when using Brave DB against it.

Sadly you can't replicate this set in the english version of the game because the weapon used in this video is an event weapon that is not available in the english version (I assume because of legal/contractual reasons)

It sucks that some monsters are literally impossible to fight without using brave style. And brave style requires the player to be familiar with the monsters attack system in order to counter it. Great. It has certainly helped me against monsters that I am already familiar with but not really helpful against new monsters like the Valphalk. That said, I do like the skill that resharpens your weapon instantly should you perform a counter/parry successfully. The *ting* sound after performing it successfully. Nice.
