How to make a delicious no-bake dessert that has a soft center and a delicious caramel/pecan coating.
Candy making playlist: • Homemade Candy Recipes
Jar of marshmallow creme (7oz)
1 tsp vanilla
3 cups icing sugar
40 caramels
2 tbsp water
1 1/2 cups finely chopped pecans
Mix the vanilla with the marshmallow creme in a large bowl.
Add in the icing sugar, one cup at a time, until combined.
You may have to knead the mixture with your hands to get all the sugar incorporated. The dough will be stiff and feel dry.
Divide the dough into six portions and form them into logs with a diameter of 1 inch.
Place them on a cookie sheet and place in the freezer until firm.
Place caramels and water in a bowl and microwave until caramels are melted. You can also melt the caramels in a double boiler on the stove on medium low.
Stir the caramels until smooth.
Dip the chilled logs into the caramel until coated and then roll in the chopped pecans.
Place on cookie sheet and chill until firm.
Slice each log into about 10 slices.
Store at room temperature covered for up to 4 weeks.
*NOTES* I ended up using almost double the caramels for my recipe and about another 1/2 cup of pecans.
This will depend on the caramels you are using I guess.

keeping the caramel over hot water will keep it warm and easier for the coating process

Perhaps it would be better maybe to add some butter or something to loosen the caramel. Real pecan logs are softer, not hard like those caramel candies. Might help with coating too

Put the caramel in a bowl of very warm water or in the top of a double boiler. That should work. Great idea the centers w/b an acceptable substitute and can’t go wrong with real melted caramels. As to the caramels I always preferred Kraft but more recently discovered Werthers makes s better one and tastes like real butter as claimed in their other candies. When I was able to find some version of this treat sometimes it came in pieces and often I bought it in log form. The divinity-like white centers but once I bought some with buttery brown sugar type chewy centers with a thicker coating of caramel and top-grade chopped pecan pieces. I don’t know what became of that “brand”. Now if you don’t live in the south it’s well nigh impossible to find any. Walgreens used to get very large logs seasonally but haven’t seen or heard of those for a very long time. Thank you for making the effort and for sharing on You Tube. PS Carefully lightly toasting the pecan pieces would enhance the flavor.

There is a recipe for pecan logs in Taste of Home magazine from 2010, it is great. The filling is a mixture of icing sugar, dry milk powder, butter and corn syrup (light color). Tastes like fudge in the middle.

Dude! You made this so easy!! I used another recipe and never mentioned anything about a marshmellow jar. And it all came out horrible! Yours is SO MUCH easier and doesn't need to put the powder sugar in the pan, like the other recipe.

Oh these would be super sweet. Wow, they seems difficult to make and probably best to just dip hem in chocolate rather than the caramel toffee. Or set them into moulds

Ok I've watched hundreds of your videos and I love them! But you are going to give me a heart attack with your cutting boards. They move around when you are chopping and it terrifies me that you will cut yourself. Please please read this and get either some of that rubberized shelf liner to put under the cutting board or do the easy thing and take a paper towel wet it ring it out well and lay it out flat under the board or won't move at all and bonus at the end you can use it to wipe the counter cuz its wet. Please stop scaring me love u.
