Sponge toffee is very crunchy but melts in your mouth. If you love Cadbury Crunchie bars, dip your toffee pieces in chocolate.

2 1/2 cups granulated sugar
2/3 cup white corn syrup
1/3 cup water
4 tsp baking soda
2 tsp vanilla
In a large saucepan, stir together sugar, corn syrup and water over medium heat just until sugar dissolves.
Bring to boil and continue to cook without stirring. Brush down side of pan occasionally with pastry brush dipped in cold water, until candy thermometer reaches hard-crack stage of 300°F

Remove from heat.Whisk in baking soda. (sugar mixture will bubble and sputter and increase in volume! Be careful!) Whisk in vanilla.
Pour into greased foil-lined 13- x 9-inch pan. Let cool without disturbing, about 2 hours. Break into pieces. Dip pieces in melted chocolate if desired. Store layered between waxed paper in airtight container.

I'm a Canadian girl right from Toronto and I grew up calling it Sponge Toffee, the bulk barn here in Canada sells it and they sell it as sponge toffee. The crunchie bar is my FAV!!!!!!! I'm going to try this as soon as I get a candy thermometer. Thanks for the video I LOVE LOVE LOVE your videos!

Oh my! I remember, about 10 years ago, my father went away on a business trip. When he got back he brought me and my brothers presents and candy bars. This was one of them. I haven't had one of those since then. Cadbury is extremely hard to find where I live. I didn't even remember the name of those. You just brought me vivid memories of my childhood. Thank you!

Yum, I love seafoam (what I know this heaven to be called). I had some at the beach earlier this week and was determined to try making it at home. The kind I had was covered in dark chocolate with sea salt sprinkled on top. Thanks for the recipe!

Years ago, my friends mom gave me a crunchie bar and it was the most delicious thing I'd ever had but I never was able to think of the name all these years later. Thank you sooooo much for sharing this recipe! I just made a batch and am waiting for it to cool down so I can dip them in chocolate and transport back to my childhood. So happy to find this. I was born in Toronto Canada, lived there until I was 7 then we moved to the States...I always remembered that sponge candy and how much I loved it and then years and years later I found it covered in chocolate at a candy store...and then eventually, at World Market packaged by Cadbury. It's not available just anywhere. My memory of it as a child was with no chocolate and we called it sponge candy, not honeycomb. I find all this debate about the name amusing...it's just so good! As one person below put it with a Shakespearean twist,, candy by any other name is still as sweet...Thank you so much for posting this recipe!

Everyone in my area calls that type of candy "sea foam", and it can only be found in the nice candy/chocolate shops where everything is crazy expensive; I'm so glad to find out how easy it is to make! ^-^

If you add roasted peanuts and stir in at the end, it would add another edge to a fine recipe. Friend of mine as a child, visited the Fry’s factory in the UK ( they were made by Fry’s before, Cadbury had them) with the school in the 1950’s, before Health and Safety issues. He loved Crunches, while they all walked round the factory and was freely given samples of the product from the production line, by the end of the tour there was 24 children feeling very delicate. He told me that was the last time he craved a Crunchy

Here is Australia it is called Honeycomb. I've also heard it called Hokey Pokey. But a candy by any other names tastes as sweet.

I loved this candy when I was a kid. We used to buy it as a chocolate bar and sometimes fresh without the chocolate. I thought it was real honeycomb when I was a kid, and that it came from the hive ;-)

Crunchies have never been my fave but I used to get them as a kid when I wanted something that would last me longer than a Coffee Crisp or Kit Kat... Sponge toffee is so nice to take a little bite of and just let it melt on your tongue! I may have to try this :)

I used to go to a candy store in Solvang, CA and got this exact candy covered in dark chocolate. It never made it home :P I'm never able to find it now that I moved to VA and I've missed it a lot. I can't thank you enough for this recipe!! I never knew what it was called and now I know it's many names. But best of all... I can make it myself!! You have made me very happy ... thank you!!!!

Hey mom... I definitely remember out times going out there to eat the chocolate covered honey comb in Solvang. They do make this in the shop in King George too, Mary's something (down that road behind the bank). It's not quite the same, but it looks like this recipe might end up a lot more like what we remember. We should make it together sometime. :D

Honeycomb, Sweet Seafoam, Hokey Pockey (sp?), Spun Sugar Comb...I'm sure in Africa, India or China it may be called somethig else. But, still is the SAME thing! LOL

BRAVO! Yes, it is basically prepared the same way in every country. The only thing that may change is the NAME! :0) I AGREE with you...it is still DELICIOUS! I'm working on a LOW SUGAR version for Diabetics. I utilize "sugar free" honey when I prepare it, along with Splenda's Brown Sugar Blend. The secret is getting the correct quantity of sugar & honey incorporated to react with the baking soda. Sugar Free items work a bit different than table sugar.

WOW, just made this and it was a complete success, it has made 2 large dishes. I have had a few attempts at making this honeycomb but it never rose like this, I substitute vanilla extract for almond, and I must say, even though I made it myself, ITS FANTASTIC. THANK YOU SO MUCH FOR SHARING THIS WITH US, KEEP UP THE GOOD WORK.
