The round wooden object is called a pilon and widely used in Haiti. It really takes some time consuming, as it crushes the spices into either chopped or paste, it releases a flavor that is genuine and way different from the blender.

To extend the shelf life you can fry it, this prevents spoiling. That is what I do. I am from the DR we cook almost the same way.

When I use onion, I pour all the epis into ice cube trays to store them in the freezer, I never keep epis in the refrigerator YES it will spoil if it's not use often.

OMG, I had totally missed this episode! Chris my man, you #ROCK!!! 😁 The Creole name for the Motar & Pestle is Pilon, very similar to the way Spanish speaking ppl in the Caribbean pronounce it. I like using the food processor or blender, but my mom is old school & makes hers fresh everytime she cooks using the Pilon. Hers is very simple, as well - scallion, garlic, cloves, black peppercorns, thyme, a bit of scotch bonnet or habanero & 1 bullion cube. My mama #Rocks - learned how to cook from her. 😊

You're actually doing it the right way by not putting salt and bullion cubes in the epis. We typically add that later. We do add onions though, but I get why you didn't. Also it's called Pilon, pronounced pee-lon (the o is the o in long, just without the g)

Jody Mcintosh yes pretty much green seasoning, but the Haitians call it epis aka Epice -spice. Every Caribbean island have their version and it’s all up to you preference. I personally hate sweet peppers so I leave them out.

Trini Hansen You can scoop it into an ice cube tray and freeze it. just use individual cubes whenever you use to cook. I wouldn't keep in fridge longer than a week, especially if not adding salt.
