I LOVE YOU CHRIS!!! 🇭🇹 Chris going Zoe with the Epis & Griot! All we need is Banann Peze and Diri Djon Djon and you have a traditional Haitian meal! The mortar and pestle is called "Munsh Pilon" in kreyol 😊

I guess that you meant MANCH PILON which is the superior part of the mortar, however the HCreole name for mortar is PILON.

The round wooden object is called a pilon and widely used in Haiti. It really takes some time consuming, as it crushes the spices into either chopped or paste, it releases a flavor that is genuine and way different from the blender.

You can use epis in all kinds of meat and sea food The only food you don't use it, is white rice . This is the first time I watch your video. Good work Chris !

To extend the shelf life you can fry it, this prevents spoiling. That is what I do. I am from the DR we cook almost the same way.

When I use onion, I pour all the epis into ice cube trays to store them in the freezer, I never keep epis in the refrigerator YES it will spoil if it's not use often.

I do use onion 🧅 in my spice and sauce! But we all do things differently in life. And sometimes, I use shallot also since they have different tastes! Amen 🙏! Thank you sharing because a lot of people do not know how to make food! Amen 🙏

The wooden mortar is called "Pilon" in Haitian creole dialect, and is called "mortier" (un mortier) in French. I am just now discovering all your videos about Haitian cooking and food. I love to try different foods from all over the world. Mesi bocou l-Merci beaucoup-thanks a bunch, for sharing your "cuisine" with us all.

OMG, I had totally missed this episode! Chris my man, you #ROCK!!! 😁 The Creole name for the Motar & Pestle is Pilon, very similar to the way Spanish speaking ppl in the Caribbean pronounce it. I like using the food processor or blender, but my mom is old school & makes hers fresh everytime she cooks using the Pilon. Hers is very simple, as well - scallion, garlic, cloves, black peppercorns, thyme, a bit of scotch bonnet or habanero & 1 bullion cube. My mama #Rocks - learned how to cook from her. 😊

We also use "epis" for making "diri kole" (rice and beans) not white rice though

Chef Land Land you can use it for white rice too, fry just a little bit in your oil with garlic, green onions and than add your water it makes your white rice DELICIOUS !!!!!the kind you deff want the "gratin" from hahah YUUUUUMMMMMMMMMM!!!!!

You're actually doing it the right way by not putting salt and bullion cubes in the epis. We typically add that later. We do add onions though, but I get why you didn't. Also it's called Pilon, pronounced pee-lon (the o is the o in long, just without the g)

OH... that looks good! I never knew how the hatian did their seasoning.. ty Chris I certainly will try it this weekend. also did you know the hatian do their fry green plantians with hot peppers? the Latinos call it toastones... it was amazing! I don't know what their hot peppers are but always good! can you cover that? ty Chris! looking forward.

The wooden bowl and handle to smash The spices is called: English: Mortar and Pestle French: Mortier et pilon Motar/mortier is the bowl Pastel/pilon is the smashing handle

All your ingredients are right. Maggi cubes are not part of it . leave it organic the salt is optional like you said you put your salt separate this is the way I like it. Very good!

Jody Mcintosh yes pretty much green seasoning, but the Haitians call it epis aka Epice -spice. Every Caribbean island have their version and it’s all up to you preference. I personally hate sweet peppers so I leave them out.

On the website which list the ingredients... you didn't list "Garlic". I made it yesterday, following the list which didn't include garlic. Does that make a difference?

Trini Hansen You can scoop it into an ice cube tray and freeze it. just use individual cubes whenever you use to cook. I wouldn't keep in fridge longer than a week, especially if not adding salt.
