I’m from a culture that washes our chicken ( the Caribbean) . When we wash our meat we are not putting the chicken under the faucet and rinsing it off. It’s the same concept of wet brining the chicken. We place it in a container with water, lemon/lime and sometimes salt. Many of us grew up in the Caribbean raising and butchering our own chickens .

Roast chicken to me is what sourdough bread is to some people. I just love to obsessively make it and perfect the technique and recipes. It's very zen to prep, makes the house smell great, and then I'll carve it out and analyze the flavor, how moist the breast is, and crispiness of the skin.

I actually used this recipe to make my first roast dinner since living alone! It's absolutly phenomenal and now everytime I make chicken thighs or wings I roast them over my veggies - so f'ing good!!!

Carla I've loved your videos and content for many years! I have both your cook books! You are genuinely one of my favorite chefs in the whole world! However washing poultry or other types of meat in many places especially among the African diaspora is a cultural practice. With that being said, I think most people think that when we say we wash our chicken we are just holding food under the faucet letting water fly all over the kitchen. When in fact we fill a bowl with water place our meat in and clean it with a little bit of vinegar and lime. Furthermore we do this to clean off extra blood, slimy film and extra feathers etc. We are fully aware that this doesn't necessarily cleanse meat of germs. Food safety is extremely important and everyone should be limiting what they touch when dealing with raw meat such as chicken, and I hope people are washing their hands cleaning their surface after handling their food. But it's also important to remember that there are strong cultural practices many of us still use, and I just want you to be aware of that before telling someone that they should't be doing it. I hope this makes sense and that you can see it from my prospective! I love and respect your work and I can't wait for new books! Happy Eating!! 🥣😇

Did you give an estimated time and temperature for a 4 lb chicken? Really appreciate the seasoning recipe for the chicken. Never once thought about adding dry oregano. I always thought that 'big box rotisserie chicken' seasoning tasted like BBQ'd peanuts. (crazy?) I would only make two minor changes. I would put thick sliced onions on the bottom covered by thick sliced potatoes (or wedges as Carla recommended) Perfect day off recipe! Thank you Carla and team.

Thank you for the chicken washing PSA!!!. Really wish more people knew about the water spreading the germs all over. I was wondering about all of the steps you take for safe food handling. Give us a whole episode! ❤ save the people. We need it. From someone who had something called “post infectious” IBS after a bbq meat day…. I bought a burger from an unlicensed vender in a park in MN…90 degrees…no fridge raw beef …just a cooler. Learned this lesson the hard way 😂😂😢

I genuinely wish people would take the time to look into the reasons and cultural practices of a lot of people in the African diaspora when it comes to washing your chicken. There are safe ways to do it that have been practiced for hundreds of years. This provides an opportunity to first wet brine your chicken with lemon or vinegar which have natural antiseptic qualities. This also helps remove excess blood, excessively dry skin, feathers, and sometimes slimy bacteria filled film layers from your chicken sitting in packaging or at a butcher. Additionally-and I mean this in as nice of a way as possible- I think it’s a bit lazy to brush off cleaning your chicken as unsafe as if there aren’t plenty of forms of preparation that are equally as dangerous when dealing with poultry and meat and seafood in general. It’s whild seeing someone make this argument as they prepare a chicken by touching it and other things with their bare hands. Just like you can wash your hands you can wash your kitchen or just the sink. Additionally, you don’t have to be in there with the water jet just blasting away either. 😂

Adam Ragusea did something like this a few years ago where he hung the chickens from the top rack and they dripped onto potatoes on the bottom rack...quite impressive!! I've ashtrays wanted to try, but I was never brave enough!😅 Maybe I'll be brave enough to try your version!

Yes to the idea of chicken schmaltz to drizzle.. I was actually thinking a little drizzle of duck fat might take this (especially the potatoes) to another yummy level. I always have both in my frig. That's a dilemma I don't mind to ponder when I do try this recipe and method! Looking forward to it.

it's not "caramelization" if there's no sugar involved, it's just browning. Caramelization is just one of the maillard reactions, and it refers to something that happens to sugar, not something that happens to chicken skin.

Great recipe! I would suggest changing just a couple of things that I think would upgrade: 1.) Make a paste with the oil, paprika, and oregano and then rub it on the chicken 2.) Use a neutral oil instead of EVOO, like Avocado 3.) Cut the potatoes in half or even quarters, I think the chicken fat will help them out way more like this.

You should just put the wire rack you had in the pan in with the chicken into the oven, then you won’t have to worry about it breaking apart taking it out of the oven… one wire rack on top of the oven rack that usually goes in the baking sheet won’t hurt it from dripping the renderings….

Or you can use a large deep skillet and use the cooking rack and just put the potatoes in the deep skillet, then lay the cooling rack over the top of the skillet and pull it all out at once not worrying about anything and you won’t have to worry about cleaning the oven rack…
