Oh man! Honestly the tortilla with butter was a thing I always remember ❤️. My mom would be up at 4 in the morning making lunch for her and my dad. She would always make tortillas de harina and I would wake up and she would roll a fresh one and put either salt or butter! I would go back to sleep until it was time to get ready for school! We've been using flap meat for a few years now. My marinade is a little similar to yours; chipotle power, add honey, ginger, Mexican oregano, sometimes jalapenos for more heat, the rest is the same, soy, garlic, shallot/onion, etc. Thank you for your content and recipes.

I also add sweetness, I use molasses. I bet sweet soy sauce would be a good addition too. It will help add caramelization to the meat.

I just made flap steak tacos three days ago! I marinated overnight in my own mojo blend and it was phenomenal. I had leftover fixings from chicken shawarma pitas earlier in the week and used some of the leftover steak in a pita with tzatziki, hummus, lettuce, tomato, onion, and cucumber. Holy crap it was phenomenal.

Followed every step, and made it exactly like you did in the video. Except a different cut of meat, and I used lard instead of your fancy steak butter. Everything turned out amazing. The tortillas were delicious. Now I'm just trying to memorize the measurements so I can make it again and again. Thank you for all the hard work you put into these videos.

He's right about the lard being traditional, but I bet that home made butter made the tortillas bomb! the dude can really cook cause hes right about the thin roll and puff my mom can make them perfectly puffy, mine come out horrible compared to both of them lol. I'm taking that non traditional soy sauce tip and gonna try it just cause he knows what hes doing its gotta be good!

Good choice my friend! Flap is delicious cut used in Mexico and Argentina. You should make your tortillas with just water and lard, but your tortillas are pretty good. Depending in the region of Mexico you'll find people that never marinate the meat, but some other will do. Either way is perfect. If cooked correctly, don't even need to cut across the fibers. Is a very tender cut. My mouth is watering right now! I'm making "Arrachera" this 4th of July weekend! Thanks for your videos!

I made a version of this Marinade using a can of good quality chipotle sauce, using juice and zest from a fresh orange along with the lime juice, and a blackened onion from under the broiler. I also cut the way back on the soy sauce but used all the other ingredients as directed. Everybody here really liked it. It's now a keeper in my repertoire. Great job, Dude !!!

Fantastic video and great channel. One thing you do very well is using prepared sauces in more than 1 way (chipotle marinade + salsa, butter bath + steak butter). I know itis a normal instinct for chefs but a lot of cooking channels on youtube don't explain it or deliver it so well.

That cut of steak is called Bavette in the UK and Europe. It is cheap as chips, even in my local Waitrose. My freezer is stuffed full of them - it is such a fridge kicking tasty cut of beef!

Looks amazing! This is Sonoran style taco. You're just missing some shredded cabbage and a grilled green onion. What many don't know is the best beef in Mexico comes from Sonora (Northern Mexico). In Sonora, they use flour tortillas like in this video. Absolutely tasty. If you're in LA, I highly recommend trying out Sonoratown Tacos!

The bulk majority of the meat around me in this smaller town is skirt, to get to a decent butcher I have to travel a hour which I do a couple times a month.

I bought a flap steak a few years ago when I was visiting my parents in Arizona. It was from Fry's and came already in a marinade. I had never heard of flap steak before but I thought it looked good. I cooked it on a propane barbecue and just kind winged it and it turned out really really good.

Flap meat is a great cut, I've using it for years. I'm glad people dont find it that popular, because its actually relatively cheap. Whenever a cut of meat gets popular it shoots up in price. For example I used to buy prime briskets for like $30 from costco, but ever since the pandemic a lot of people have gotten into smoking so it's driven the price up quite a bit.

Sonny, When you dropped this video, I could not WAIT to try this, but I had to because it was midnight when I saw it and all the stores were closed! Yesterday, I went to my local market and bought all of the ingredients, including flap steak. And then when I got home and started preparing my mise en place, I realized I'd forgotten the limes! But I had lemons and your voice popped into my head "Don't let anything stop you from cooking! These are guidelines!" I decided to skip making my own tortillas because I live in San Diego and we can get good tortillas over here :) But mostly I was just lazy. Dude. Great use of the flap steak. I did notice your molcajete is missing your rice. You gotta season it. Well it’s more of a cold season. Just mash up dry rice grains until you fill all the voids.
