On set up and tear down days, the food (at least one meal) should be paid for by the company. That's my pitch.

He is correct. The health department usually finds very little wrong with these grab joints.

That makes sense. If the whole setup has to be disassembled, packed away & reassembled all the time, it's best to keep all the working parts clean and orderly. Health violations become a concern when a kitchen setup is neglected and allowed to sit around
