Cheeseburger Casserole Recipe
Topping:
16 oz sour cream (by weight)
6-8 Tbsp egg white powder
2 tsp gelatin
Optional 2 Tbsp melted butter
Optional 2-3 Tbsp frozen butter topping
Optional 1/4 tsp baking soda for fluffier top
Casserole Mix:
3 lbs ground beef (browned)
8 slices bacon (chopped/fried)
3 eggs
1-2 cups shredded cheese
1/2 cup heavy cream
Salt to taste
Optional 1/2 tsp black pepper
Optional 1/2 tsp garlic powder
Optional 1/2 tsp onion powder
Optional mustard to taste
---
Using a mixer combine sour cream with gelatin powder and optional melted butter if using.
Add 1-2 Tbsp at a time of egg white powder and mix well. After 4 Tbsp is mixed in check the texture for a brownie batter texture. If thin, add 2 more Tbsp of egg white powder and mix well and check texture again. Do this until a brownie batter texture is achieved, but don’t go beyond 8-10 Tbsp of egg white powder total even if texture is still thin. Whip on high 20-40 seconds and put this mix in the refrigerator for 1 hour.
Turn oven to 450F to preheat. Brown ground beef with a couple large pinches of salt. Drain liquid from beef and move into a large bowl to cool. Chop and cook bacon, separate from bacon fat (reserve fat), and mix with beef. Add half cup of cream and bacon fat into a skillet and cook while whisking until cream becomes thick and leaves a track when pulling whisk or spatula through the cream. Remove from heat.
Add 1/2 cup shredded cheese to hot cream and mix well. Return to warm burner of cheese won’t melt, but do not turn heat back on so cheese does not separate. Taste for salt and season as you wish. Pour this cheese over beef and bacon. Add optional seasons and mustard if using. Mix well. Taste for salt and add more if desired. Mix.
Add three raw eggs to beef and bacon mix and combine. Add 1/2-1 cup shredded cheese to this mix (to your taste) and combine. Pour this mixture into a 9x13 casserole baking dish and spread evenly. Use spatula to compress mixture into casserole dish. Top with more additional optional mustard if desired.
Remove topping mix from fridge. If using baking soda add and stir well. Pour topping mix over beef casserole mix and spread evenly. Let sit for 5 minutes is using baking soda. Grate 2-3 Tbsp optional frozen butter over top of casserole. Sprinkle tops with additional shredded cheese if desired.
Bake 10-25 minutes in a 450F oven until top is puffy and beginning to brown. Turn oven to 350, let oven door sit open for 1-2 minutes to cool slightly, then close oven oven door and bake an additional 20-30 minutes or until casserole is hot and bubbly around the edges and cooked in the center. Totally baking time should be around 40-60 minutes. Remove from oven and let rest for 5-10 minutes before cutting and serving.

I used to do keto for years and kept my weight at around 160 for a 5’10” man. I fell off the wagon and ballooned back up to 230. Been looking at carnivore, but thought I might get burned out. YOUR recipes have changed my mind and I’m ready to get healthy again. Thank you! Awesome channel!

Well the first thing to realize is you’ve lost 22 lbs and everyone loses at different rates for many different reasons. Patience is the biggest factor in being successful at this. The other thing I’d suggest is watching this video by Dr. Berry to see if you might have some reason it is slower than you expect. kzbin.info/www/bejne/oYu7h6Sso5aontksi=rSCnrXz0svAVX3mv

This casserole method is totally mind blowing! Just when I thought you were done topping it, then you added yet another layer of goodness on top. All the unexpected items added all through the inside too! So many layers of flavor! 😋 While watching the video my brain went to chicken or ground chicken & turkey or ground turkey pot pie made with your gravy instead of the cheese sauce & a little poultry seasoning & celery salt & onion powder (for those that use spices) in the topping to taste more like like stuffing. My brain almost overloaded. There's so many combinations that this casserole method could do! Carnivore to keto... Breakfast casseroles, as well as lunch and dinner. And it makes a lot for a family or batch cooking. Total comfort food too! Wow! ❤ I'm feeling so inspired. 🤗 Thank you!

This (and future variations!) are perfect for cutting into single serving portions for the freezer to take for school or work lunches! I cook for just me now. Pre-ketovore (and wanna-be carnivore), I used to make batches of chili or vegetable beef soup for the freezer, then pull out the container to let finish defrosting in my knapsack or desk. While others went out to spend time and money for lunch, I ate much cheaper, quicker and better. Now I can do it even healthier with your recipes too! With your help and inspiration I AM moving closer to carnivore every day! Thank you SO much! 🥳

Your butter Mayo technique alone is enough to put you on par with the best of the best. I think you're a genius. You’re the best. Some 40 yrs ago to large hosting I used to make a Mexican casserole, layered with corn tortillas, meat, beans, sour cream n egg custard over, then top rest of meat, more cheese, crushed spicy corn nachos chips. The best meal every one loved but since I’m keto I’ve been tweaking it to a carnivore …well you beat me to it! 🙌🙌🙌👏👏👏Can’t wait to replicate your creation! 😅thank you. Love that smile as you relate at the beginning cooking for a crowd!

Hi Chris! I’m so happy you make this recipe without stand mixer for I don’t have one. On that note, I gave up making egg white bread. Just can’t make stiff peak with stand mixer. That is one giant industrial size strainer. I like it! The cheese sauce looks yummy. I’d just drink it by itself. This will be on the menu for meal prep next week. Thank you Chris! We found your wife’s music on Spotify. We like it. We couldn’t find you…

Was there any possibility of there being traces of fat in the bowl (oil, egg yolk, etc)? The slightest drop will fat will keep them from whipping up to stiff peaks.

HUGE HIT!! Made this for dinner tonight! I reduced the recipe a bit for our family. And because what I had on hand that needed to be used I substituted sour cream with plain full fat Greek yogurt (I know not exactly strict carnivore) but it’s what I had and I was a bit curious if it would still, work and it did!! Family LOVED it! hubs said it was definitely a repeatable dish! Even suggested taking it to church potluck! I am thinking the topping would be great over a sausage cheese and egg casserole!
