We've been loving chuck rolls cut into steaks for their flavor and affordability, but when my wife stumbled upon a great deal on Whole Ribeye at the grocery store, we couldn't resist. In this video, we put the "Poor Man's Ribeye" to the test against the classic Whole Ribeye to see if the budget-friendly option stands up to its reputation. Awesome channel . When i was diagnosed with UC , my exwife tried to tell my gastroenterolist that its because i eat to much meat , especially red meat . He corrected her and said its the besy for me , because it digests better than raw veggies and rae fruit. When leaving his office , she said we need a new Doctor. Did i say EXWIFE !

You need to salt the night before. Also, course ground pepper is the way to go. I always slice and add finishing salt before I eat as well

It honestly also depends on the cow. Different cows taste better or different. Some cows are just really delicious.

Yes! Had a Angus ribeye 3 times from different stores, and to me the flavor was lost let alone it was also more chewy by far. Glad you said this for that is facts

I just watched your Costco chuck roll video and went right to Costco and bought one whole chuck roll. I asked for the whole box but he didn't understand me wanting to buy that much meat. Still though he gave it to us for 4.49lb discounted from 5.99lb. It was huge 28lb whole chuck roll about 128.00. I got 12 huge chuck roasts out of it. Now that I've done one chuck roll I'm ready to break down a whole box of meat! Brings our meals down to about 10$ total for both me and my partner. Thank you so much for putting that video out. Bulk meat! Yay!

I'm glad that you showed Steve cutting up the ribeye. I saw the video where you bought it at Albertson's. We have been spending summers in New York (we live in an RV) and we've wintered in Quartzsite for the last six winters, sometimes moving around the area to Yuma, Lake Havasu etc. We have been to Albertson's in Blythe, CA. Hopefully we'll be able to catch a sale like that one day. Thank you for your videos. We've watched a few since yesterday. We are transitioning to carnivore and it's a bit scary. I hope we will love it like you two do. One fun thing about eating this way is that now when I cook meat, I can give a piece to our cats because there's no onion powder in it. They are raw carnivores too and we've been making their food for them since they were kittens.

Chuck roll is always the winner for me. I just wish I could get it here for 4.19 a lb. It's 5.65 at Sam's for a 3 pac chuck roll.

Personally, I find chuck has more variability tenderness/toughness wise. I love the beefy flavor of chuck and typically I don't mind the slightly increased chewiness. I feel like I can count on ribeyes for a tender fatty experience. I think that aligns pretty much with StevenSteph's experience. I have to say, that stack of beautiful ribeyes made me envious! I have cooked many steaks in my air fryer and it is certainly convenient. The best results I get, however, are from pan frying them in a hot carbon steel pan. I get a beautiful crust and and a nice rare interior. I use either tallow or bacon fat to grease the pan for the steak. I typically salt before frying and then if I am feeling indulgent I use some Redmond's smoked salt as a finishing touch to the steak once they are out of the pan. So very very good.

Off to pick sorry but I just saw your post double cardiologist visit. I’ve started keto carnivore myself. I wanted to say, I worked in late 90 s in a cardiology wing at hospital. Our cardiologist did recommend a meat,bacon-no carb diet for those who came with new heart issues-to reverse the way our body used carbs. But we’re always told to increase carbs after 60 days to a minimum. The Word carnivore is off putting to them, but the use No carb diet-ketogenic diet is familiar and supported here In Minneapolis at least in late 90s. Who knows now, I’m not there anymore. 🤷🏻‍♀️thank you for sharing your experiences it’s helpful and encouraging!

Drunk on steak a great thing. I was drunk on chicken last night. Just cooked it in the oven with butter. I've just hit 62 days and am feeling awesome after years of health issues.

Get one if you can! I love mine. Takes the place of oven,stove, BBQ,deep fryer( no oil same crispness) , dehydrator and instapot! Cooks in less than half the time with little heat. Great for those hot summer months when you don’t want to turn the oven on.❤

I have found cutting up chuck roll. Salt all sides and put on wire rack in fridge for a couple days. Dr Chaffi does the same. I feel it makes a big difference making it more tender. Good videos!

I just got a dozen ribeyes at Market Street for $4.97/lb. I got a dozen from Kroger 2 weeks ago for $5.99/lb. Why do people keep buying overpriced meat at Costco?

Absolutely Medium / rare best way cook beef all natural flavours and juices. Be interesting if you Steph did home made beef jerky without flavourings I am sure Steph come up some ideas

Isn't it interesting how we can now discern slight differences in taste, between different parts of the cow~ even from cow to cow? Danny & I have noticed how some are just more flavorful, more beefy, & some not so much. The fat absolutely has a lot to do w/it, & so does cooking method & time. I used to like a bunch of different seasonings- especially garlic, but not anymore~only salt & maybe pepper. I like pink or white pepper because the beef taste comes through better, imo. Some have said they don't bother their guts like black pepper can. Interesting too that you guys cook @400 for 12-13 mins for med-rare. We cook @510 for 8-12 mins in our current air fryer. I also don't really care for the outdoor, char grilled taste anymore either~ gas or charcoal grill. I used to love it. Air fryers are magic=)

*That's exactly how we KNOW we're eating proper for our bodies guys~ it never gets old, it always tastes amazing, & we always look forward to it. We literally get to eat the star of the show for every dang meal~ how awesome is that! **Yes!! The BBQ cooked off too much fat, & it was inconsistent. Glad you mentioned that, makes sense~ thx

You need to slow cook the chuck at. Like 250 and when it reaches internal temp 115 crank the air fryer to 400 for 10 mins till it reaches internal temp 130.

Hi, my dears. You gave such a great review of two different cuts of meat. It is all about the temperature and time cooked. BBQs are so unpredictable. To me they taste the the same but the ribeye is just tender where as a chuck is just a little tougher in some areas. And I'd do a BBQ over air fryer

I see that my Costco Business Center (San Diego) sells chuck roll right off the shelf (no butcher needed). They have 2 choices: USDA select 4.29 (32lb avg wt) and grass fed New Zealand chuck roll 4.79 (14lb avg wt). These are the delivery prices so pickup in store would be less. I will let you know the pickup price when I go to the Business Center.

Grill or air fryer, I love a good steak as long as it's a fatty one. The most interesting way I have prepared steaks is using the Cowboy method where the steak is cooked directly on the coals, it was delicious. Look it up on you tube.

After watching your Costco chuck roll video, I bought some chuck steaks at Kroger to try them. They were only about an inch thick but I did one in my Corsi air fryer and I have to say it was delicious! Yes , there was a little more chew, but it was tender and very tasty. I will definitely be buying more. Thanks for the info. 😊

I pressure canned a chuck roll today. Best fast food i could ask for. I cut up chuck rolls for the freezer also. Makes great steak. I save my off pieces and when I have enough saved up I put it in my meat grinder for some tasty patties. Making some beef chips tomorrow.

i really like your content - i have been carnivore ( ish ) for over 2 years - i have some vegetables occasionally - and i eat popcorn ( a cup of kernels makes about 6 quarts popped in my 6 quart instant pot ) almost daily - sometimes 2 times in a day - lots of olive or coconut oil - i put hot pepper powder ( habenaro and ghost ) on it and use chopsticks to eat it so i don't get the pepper on my fingers ... - i mostly eat hamburgers - bacon - shrimp - sausage - and i do buy chuck steaks or chuck roasts from sams - - the only problem i have with your end results is that the meat is not cooked ! - i cannot even think about having meat that is not well done ... - so i often cook it in the pressure cooker long enough for it to become tender - not buying large bulk it is over $ 6 a pound - i tried slow baking it and it was tough - maybe i should try air fry like you suggested and see if i like it and it is tender thanks again for making the videos for how you make your preparations etc

I went right to Costco then thought better and bought the precut package and thank God I did because I spent $36 on meat so tough I will process it for pot roast only and my dogs. I realize you both love it but it hurt my teeth to chew it. I have upper dentures. I also tried a tiny piece of the fat and I swear I cannot figure out how you could stomach eating that blubber. I cooked it medium rare but I’ll stick to rib eye and filet. I can’t afford it but I’d rather eat less than to eat this. The flavor was fine but I chewed forever

Definitely don't overcook it is hard to eat....So grateful for the info on the Chuck Roll...Our last meat Haul at Costco we got a Chuck Roll box for $4.11 a pound.

Have you ever marinated your meat in soy sauce in a zip lock bag for about an hour in the refrigerator? And then when cooking I brush on melted butter on the top of the meat while cooking each of the 2 times I flip the meat.

I buy a rib eye roast. In the oven 5oo* for 5 minutes per pound. Turn the oven off, dont open the door for 2 hours. It will finish cooking as it cools. 125* internal temp. for rare

Chuck has a much richer flavor, I think. I will have to cook it like you do because I never had it other than a pot roast. I wish you had the camera showing cutting it.

have either of you ever been to the UK? i prefer to bake some new potato's in with the steak in the airfryer... one thing i do like and you might try is getting some UK bacon and wrapping some pork sausages up with it and air frying... i always have some with breakfast... i mainly use lancashire sausages they are really tasty for breakfast... i have to say i think the UK have the biggest sellection of sausage types and brands next to germany...

@@StevenSteph cant beat some butter smothered new potato's in airfryer, all they are is mini baked potato's i even slice them up and throw them in a omellette with some chives... all new potato's are is harvested potatos before they fully grown... when i was younger on farm we used to goaround ebhind the harvester picvking up small potato's to get our pocket money, we ate many of the tiny potatos... if you do come to the UK come to Edwinstowe in Nottinghamshire and see the major oak and robin hood country... theres a great hotel in town and access to major motorways to go to other places... also in edwinstowe village we have a great butchers shop, well worth a visit... most visitors to UK go straight to london and pay silly prices for hotels when you can find a decent town like ours and pay a lot less... but you closer to the attractions... London is over priced...

Steph - Question. Did you say "when you cook steaks in the Ninja Air Fryer, it does NOT create smoke in the kitchen, nor smell the house up?" I'm seriously thinking of getting it. I have a 6 Qt and 3 Qt Instant Pot, which I bought long B4 they had a browning feature in pressure cookers. I'll put mine on eBay and see if anyone will buy them. Also - I feel like I have so many kitchen appliances that now need to go. UGH.

Yes!! No smoke and no smell (in comparison to the other options LOL-you can tell I made dinner but not like for days of smelling it 😆). I sold my other appliances on OfferUp and Facebook marketplace for pretty cheap but they sold fast! My Excalibur dehydrator I sold for a lot though. This size is fine for me I don’t need a massive 10 tray or whatever it was 😆. Replaced my rice cooker, crock pot, 2 basket air fryers, my 6.5qt instant pot and the dehydrator! Saved me SO much room! I could rid of my toaster oven too! I never use it! But I loved it so much I feel like I need to keep it 😆 it’s currently hidden IN my oven! I never use my oven. Only the air fryer and the egg cooker 😆😆

The only caution I will offer as a cattle producer here in Iowa, Cook to pink no red showing. You want to kill whatever could be still there. Try grinding to burger and grill you'll have lots more to eat per serving

I get that but if cooking a whole roast or steak it is completely sterile inside. The only reason you need to cook beef to pink or more is if the meat is ground up mixing the inside with the outside where the bacteria can be. When you cook a steak you get the outside incredibly hot which kills everything on the outside. You don't need to cook the inside more. It's safe.

Nice butchering skills guys. The hardest part of carnivore for me…. It’s all too easy. I’m a creator in the kitchen. All things I can create and present to my loved ones make me the happiest. But steak and eggs makes “me” happy.

After watching your video where you talked about air frying the fat I tried it. All I can say is Mmmmm !!!! Thanks Oh I came back because I forgot I ,I’ve the Chuck too but when it comes to grilling Ribeye beats the Chuck hands down. That said I prefer Chuck eye to ribeye any day. I had to come back again. When Steven said he felt intoxicated a couple days age on Shaun Baker on his funny videos some quack doctor was claiming eating meat only is addictive. Ok he might be right. But if I addicted the 65lbs I’ve lost as of today then bring me drug of choice. BEEF!

How thick are your steaks? Ours are 1.5” at least and about a pound…that could be a factor… Did you cook it at 400 degrees and right up close to the heating element in our machine…my old ones were basket types and they were lower away from the element and took longer to cook down there, so maybe that is a factor? 13 min flipping only once midway? Costco sells “choice or better” so maybe it’s a different grade? Maybe the ranch it was from feeds differently or a different terrain? So many factors at play I just don’t know. Sorry it was tough for you! Ours is super tender and we’ve probably gotten 10+ boxes, so 30+ chuck rolls from different ranches and different cows, so I don’t know. Others are having great luck with it this way, so maybe it’s one of these factors?

In my opinion it's not the air fryer, I cook all my meat in my cast iron skillet and it turns out great every time. I think the technique is not to over cook it and don't spare the salt !! Maybe you could do another test with the chuck in cast iron verses the air fryer

@@StevenSteph The only smoke is from the butter that I add to the pre-heated pan and it smells amazing so I don't mind it. I don't cook at a high temp to make the meat smoke, on my electric stove top I cook on 5 1/2 and a 1 inch thick cut of chuck cooked 4 minutes on each side turns out a good medium rare

What do you use to cook your eggs? They look like boiled eggs but they have a strange shape. Is it something you Crack the egg into then cook it? I have my own hens but their eggs are terrible to peel. The white comes off with the shell and look awful, lol.

I cook my steak at 325 F for the air fryer and use a wireless thermometer stuck in the meat and then cook until the internal of the meat is 140 F. It seems like the meat is more tender cooking at a lower air fryer temp but still with an internal temp of 140 F than if it’s cooked at an air fryer temp set at 400 F.
