1 c. Brown mustard seeds
1 1/2 c. (12 oz. bottle) of beer
1 c. Water
1/2 c. Malt vinegar (5% acidity)
1/2 c. Lightly packed brown sugar
1/4 c. Dry mustard powder
1 T. Onion powder

Ladle hot mustard into a hot 4oz. jar leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

I have been making this recipe for a long time. In fact, we used this to give away at my daughter's wedding and had it on the buffet. People even asked to take home leftover jars. It always makes more than the recipe says. It's an old standby in my canning rotation. I use dk brown sugar when using a darker/bitter beer. Glad you tried this one.

Brown and black mustard seeds are available at Indian grocery stores. They are both a main ingredient in a lot of Indian recipes.

I did this yesterday. Wished I would have watched this before doing because my food processer did not grind well, wished I did it in the blender. But I did still finish it through. I am hoping that in time it will taste better because I really did not care for the taste. I still have plenty of brown mustard seeds to redo

Beautiful looking mustard. I bet it is wonderful. So, the jar you did not process. Will you be keeping it in your refrigerator for a month before using it? Or maybe using some of it right away? I know you said it tastes best after waiting for some time to pass. 👍 ~Sharon

You can always find brown mustard seeds at an Indian market as they are used extensively in South Indian cooking.

Hi Carol! I made this also a few days ago but it was very “beer” tasting. Can I add yellow mustard and reheat and can it again? My husband loves the way it tastes but I liked it with a little yellow mustard added. I was just curious if I could do that and re-can it. I also followed the ball recipe that you used. Thanks for all your videos!

This recipe mellows as it sets. Leave it several weeks after canning and then use it.

Is your stove a glass top? We were told don’t do any canning on our glass top counter top stove top, lol? We do our canning on camp stoves in the garage usually, but everything was put away for the season, so I kinda made my own steam canner of sorts and I did several batches of mustard with beer, I found a great red beer I used and it’s amazing! As you say they are ‘curing’ now, some are about 3 weeks old. It’s delicious! Can’t wait til it’s finished curing. I thought they would make great gifts when you’re in a pinch, but I have so many already spoken for! Lol! Btw I did need to get some more small jars, the only brand they had left was Anchor Hocking. I wasn’t afraid of the glass, but I questioned the lids! They worked perfectly! One did nit seal, but the little jar was just some leftover and it was only 1/3 full, so it’s in the fridge. I did have a horrible time finding mustard seeds, I ordered some on A as well, but I did finally go check out an Indian grocery, believe me, they have plenty! The other spices there were super inexpensive as well! Thank you for sharing all your fun cooking adventures with us! I’ve been a canner for 45 years, so fun to try new things! Thanks again, Carol! And I second your huge pot tip! Use a huge one! I had mustard all over the place, do not leave it unattended.

We’ve used a glass top stove for over 20 years just fine for canning. Water bath, steam, and pressure all work great! The only thing is don’t drag a big heavy pot across the stove or it might get scratched.

I'm going to be trying to make my own mustard I've watched a couple videos. I keep coming back to this one question. They refer to the dry mustard. Dry mustard is the yellow mustard that you grind down into powder, is that correct? In the videos that I've been watching they don't seem to be saying that and I'm wondering why Thank you.

Speaking of canning and mustard recipes. hope it's ok if I ask here. Does anyone have a copy cat recipe for a Mcdonalds HOT mustard? And doesn't have to be for canning.. just wanting a copy cat recipe that is healthier (and can make it lower sugar)

I don’t drink beer. In your opinion what is the best for this recipe? I made this once already, it went into the trash didn’t like it at all. But want to try again. Thanks

Oktoberfest is a good one to use or any darker beer (I don’t drink beer either). Just know when making mustard it mellows and the flavor smooths out over time (several months). I think the longer they sit the better they are. I still haven’t used any of mine yet.
