Carp and many other amazing fish is considered trash in the good old USA because Americans hate bones in their fish or small fish and lemme tell yah...carp has an ass of Y bones, are really oily, and can often have a very muddy fish taste if the water they feed and live in is dirty. That being said, carp is a prized eating and sport fish in practically every other part of the world, from Europe to Asia. My family is from southern China, Guangzhou province, so we ate a lot of carp we bought from the Chinese markets here in Chinatown in NYC growing up. All alive and slaughtered fresh daily and honestly it's one hell of a tasty fish, but we always steamed them, or salted over night covered with paper towels to firm and dry it out a bit before pan frying then braising it. Both are great methods, if you've not tried it in a Chinese restaurant, give it a go, or try it at home. With all that said, sometimes it's a hit or miss for the taste of the meat as I said above, if the water they're raised in isn't that great they can and will taste like muddy grass.

Ohh bro I'm from NYC in the Bronx area. Carp are amazing as pets even, especially that they're mixed with koi. Food wise they're delicious. People kept saying they're invasive but they're not to be confused with the real devils. The four "Asian Carp" are not established in the US because they're recently bought here decades ago. Common carp originated in Asia but also native to Europe where they're abundant. They were shipped to the US in the 1800s since the government offer food for the Americans to eat. But the introduction of non native trout removed the delicacy of carp attraction, and the "trash fish" has since left alone in the country. Today, common carp are seen as pests and nuisance, but aren't invasive and destructive like the Asian Carp are. I think it's important to note that carp can impede the ecosystem if there's more of them left in the water without us predators to consume them. Same to deers. If no predator is present there, they can clean out the plants they eat because of overpopulation; the population dynamics is still broken and not maintained. By all means, I would keep some common carp alive for my pond and some dead for meals. I saw some Prussian carp looking goldfish at a fish market right by Joe Gingers. Beautiful fish. I would love to talk to you more about it even through a messenger app since we're close in location

@@zezekingyo2374 Yeah man, there are native carp species here in the USA but as you said, the invasive ones though...yuck, really causing a lot of havoc in the ecosystem. Just look at Florida, the hot spot for invasive species that are wrecking everything. That being said, I feel most Americans just need to open up their palettes instead of just eating the same 3-4 types of proteins, all boneless, skinless, or generally processed. That aside, the Bronx? :D I'm in Queens but grew up basically in LES by or near Chinatown in Manhattan so 100% know about Joe's Ginger lol.

In Europe they always eat carp.they let them clean out in fresh water overnite.then they are placed in full smokers.takes about a couple days.the fish is kept in large pieces.definitel6 they do not cut them up before smoking.1 fish 2 large fillers for placing into smokehouse. They do not taste muddy if they are kept overnite in bathtub in water.selfcleaning
