Oh my goodness! You are the first person to make cornbread dressing the way my mother used to make it. I have watched soooo many cooking shows but NOBODY made it like my mother did. I wondered how in the world she came up with it. I have worked off memory of the things I saw her do and I have come close. Really close. Now I have met you! Thank you so much for this video! While she never added the meat to the dressing, she had it in her Giblet Gravy. All of the Stock, Cornbread (the exact way my mother made it), Pepperidge Farms Herb Stuffing, sautéd in butter, onions and celery (no peppers here either) Chicken Bouillon, Seasonings... I hate when people say that dressing is simple, it’s always been my ONLY NIGHTMARE! 😫🥺😭😢 I’m trying so hard to not overthink it but ever year it has me so stressed out and it’s my favorite. But I keep going back to my granny and how she made it and I just can’t do it. I was just the official taste tester before it went in the oven. Yes! I grew up north and we made ours this way too but with white bread/ herb bread. I never even heard of using canned soup in my stuffing. We also add ground sausage in ours too and sage.

My Mom never used the crumbs either, but she would add old bread/biscuits along with the cornbread. Her dressing was always so delicious with the giblets, veggies and juice from the turkey 🦃

I am so glad that I find your channel when I was looking for a Southern Cornbread recipe....there are a lot of them....and I watched quite a few of them ..... I am an 84 y old transplant from New England and was familiar with my mother and grandmother's bread "stuffing" and had earned a reputation for making excellent "stuffing' with my sons, relatives who came for T day at my house and church pot luck dinners. But I live in Florida now and have been wanting to make corn bread dressing.....I have not had the same reputation when I tried to make cornbread dressing in NH for a transplant from GA who always missed Southern style dressing. I think you and several other TV hosts have emersed me in how to make Soul Food Old Fashion Dressing. I am pretty confident that this year I will have the success that has eluded me. I am ready to bake my own cornbread, stock with turkey necks and gizzard and will pick and chop the meat to add to the dressing (I usually havent added meat to New England stuffing...sometimes chestnuts and other times (sausage or oysters). The one ingredient from my family's style stuffing that I find indispensable is Bell's Seasoning.....it is a poultry seasoning that has always been part of my thanksgiving.....(I also use sage and thyme and garlic/onion powder. (I think Bell's has a little ginger in addition to the usual poultry seasonings). I also will add a bit of savory.....an herb that is popular with French-Canadian cooks---especially in traditional pork pies which are traditional for xmas. Anyway.....I want to thank you for your channel and for your wonderful recipes and your charming personality and accent. I feel as if I know you. Blessings to you and your family.

Ms.Carrie I only use cornbread for my dressing no herb crumbs added and neither do I add egg to my dressing. My mother taught me to make dressing. I only add broth from the gizzards I boiled and can broth when extra broth is needed. I season the dressing with my seasonings. I Sautee the vegetables like you. We love our dressing prepared the way mom use to make it.

Your family will always have the memories of this beautiful skilled angel working magic in her kitchen just to make the day special for them. This is just like my grandma's recipe. She passed in 2012 and as she got older she used the can stock instead of making her own but it was good either way. I'm going to try this for Christmas. Thankyou v

Oh yeah,...no doubt that is the best dressing I ever saw. I thought I made the best but girl, you got it going on! I agree with you, bell pepper & garlic have no place in dressing. I also use the pepperidge farm cornbread crumbs (blue bag) I dont use necks, gizzards, liver, or heart in mine, but i do like using breast & wing meat. I dont measure either.. lol. So glad I found your channel, I subscribed as I am excited to check out your other videos and maybe learn something new. My mother in law taught me how to cook.

Oooooh, I can tell this is an EXCELLENT stuffing (dressing) tutorial. And I really enjoyed your kind way of teaching. Thank you! I'll be making dressing tomorrow, using some homemake cornbread that came out too sweet as well as homemade sourdough that came out TOO sour, and I think they will balance each other out. I have some chicken bone broth I made last week and plan to bake some turkey wings tomorrow -- (the day before Thanksgiving) -- to get some good turkey drippings in that stuffing too. I have a QUESTION: What do you think about drying out all the bread in the oven at a low temperature for about an hour before adding it to the stuffing? The idea as I understand it is that this will make the bread(s) better able to soak up the liquids in the stuffing. (I also already sauteed some sliced mushrooms and a diced onion last week and froze it for this stuffing. It is thawing now, and I also plan to make the same basic onion and celery sautee that you showed here. I don't normally care for celery, but I would not want to eat any stuffing (dressing) that didn't have plenty of celery in it. Funny thing! I did try making the stuffing a few years ago -- last time I made it -- using sauteed mushrooms and it came out great. I don't care for the flavor of green bell pepper in any of my food, but the green is unripe and there is a totally different flavor with the red, yellow or orange bell pepper. I plan to add one bell pepper to the mixture. Lastly, thank you again for your wonderful video. You are such a very PLEASANT person and it just oozes out of you. I know I'm making too much of this as I don't have a whole family to feed, but I love stuffing so much I just can't help it, haha.

Hi Ms. Carrie, first off, my dad’s mothers first name was Carrie and I have a niece named after her. Enjoyed watching because you remined me so much of my mom on Thanksgiving. She would be up way before the chickens getting the Tuckey in the oven, why because it was big bird around 25 pounds. The reason for such a large bird was because counting mom and dad there was ten of us to feed and later years a lot more once we married. Dressing, our mom had to make a lot and I do mean a lot. Again, thanks for taking me back home, you and your family have a blessed Thanksgiving!
