Before my ex husband left, especially during football season, I would cook 40lbs. of chitterlings, 8 large bunches of mustards with smoked turkey, 5 lbs of candied sweet potatoes and a large black iron skillet of cornbread. For a man who said he’d never eat Sh*t strings, he was in hogs heaven. He never wanted company to watch the game. I did teach him how to clean them though.🤣🤣🤣 Carrie, have you ever stuffed the whole hog maws? You talk about the bomb! Have you ever fried your chitterlings? Now that’s some good eatn like the old folks use to say. Fried tripe is even better than fried catfish filets. Yes I am totally country and not at ashamed.

I do a first water pour off because that first water is nasty sometimes I do a second boil and rise I always cook my hog mogs for 2 hours are more before adding my chittlings simply because they are harder to get done season and cook but adding pig tails is a no no never plus i never ever heard of that but ; everyone cooks differently....right

What does the Mayo do to the meat? Oh, I cooked your dressing on Thanksgiving and it was good. I did not put the chicken gizzard because the pack I got from the store was old, so, I threw it away. However, it still tasted delicious.
