Hi Marcy, thank you for sharing this recipe. I was inspired to try it yesterday. After I was mixing the ingredients, I noticed that my mixture not didn’t look like your because I could see the carrots. It came out pretty good except that my carrots weren’t graded small like yours because I used my processor shredder instead of the hand shredder. To add, I used some old organic carrots. Everyone in my family liked it. Today I warmed it up, added little butter and enjoyed it with Coffee. God bless your inspiring work. Thanks 🥰🙏

What an interesting recipe, I wonder what holds it together? Maybe carrot starch and sugar? I'll have to try this. And I like how you put the recipe under the video, instead of making us go to a blog with a bunch of advertising and chit-chat. lol

I found it interesting, too. You're probably right about the starch in the carrots. Either way, it's really yummy. Glad to hear you appreciate finding the recipe in the description box. I find I have to explain how that works quite a bit because there's not an obvious icon on KZbin that says "description box."

Carrot cake is one of my favorites, so even though I had never made carrot bread before, I already knew I would love it. I even wondered if I should make a cream cheese glaze to drizzle on top, but I'm glad I didn't because it is definitely sweet enough on its own and would have been too much. Nice that you make things like this for your family. Whenever I do the same, I like to tell myself that it's healthy because of the vitamin A & carotene in carrots. Lol

Try 325 degrees for more moisture. 325 degrees is really common for loaf breads.

I didn't measure in cups. I'm sure whatever size carrots you have will be fine. This recipe is very forgiving.

I'm sure you could scale back on the sugar because this bread is very sweet, but I don't know if you can skip it altogether. Perhaps, you could try monkfruit or swerve, I just wouldn't know the amounts.
