I live in Puerto Rico, we grow cassava or yuca as we call it and eat just like a potato. Peel it and boil it. Delicious and nutritious. My favorite root vegetable in the whole world.

I live in indonesia and when camping i often roast cassava in my camp fire. But then again obesity is not an issue in rural Indonesia. We eat the leaves too but cooked twice much like Americans eat collard greens. We usually eat cassava leaves when our BP dip super low. Again high BP is not an issue in rural Indonesia.

@@VeganChiefWarrior with cassava leaves you could pound them (in my case just blend w/ food processor) then braise in coconut milk w/ lots of spices. The root you can simply bake then peel & eat.

I use Arrowroot or Tapioca powder from the health food store to make a thickened white sauce from vegetable broth and soy milk with herbs to season and put it over vegetable or potatoes. Just takes a spoonful or two...yum!

I don’t understand why starches are bad for obese or people with diabetes. What do you recommend they eat?

I’m very surprised as well, from what I’ve learned about plant based nutrition and my personal experience, this doesn’t make sense. Would be interesting to see a debate with Dr McDougall and or Dr Doug Lisle on this channel. Or even with Chef AJ!

As a type 1 diabetic since 1998, when I eat a cup of white mashed potatoes the starch ups my normal blood sugar level from 120 up to 580. A cup of red potatoes ups me to 380. Yams up to 280. A cup of ice cream to 280.

I was under the impression that there were two kinds of cassava, one with cyanide and one without, and in the U.S. they sell the without kind?

The one at the grocery store is fine. Eat all you want. Boil it, then add some onion powder, garlic powder, maybe some turmeric and ground pepper, and definitely add some balsamic vinegar to protect your endothelium. Read a book called "the starch solution", my wife and I have never been healthier. Look up doctor John McDougall, and Dr esselstyn.

Maybe since we all evolved from the same we share traits. Maybe because through trial and error many plants settled on those toxins that worked the best. Only God knows for sure.
