Each of the four "sisters" brings something to the table. Carmilla comes up with the plans, Marana runs the logistics, Striga leads the armies, and Lenore is the diplomat. They are as powerful as they are because they each recognize what the others are good at.

Carmilla comes across as very capable from her entry, primarily because she points out the ways in which her peers are predictable and they prove her right. What time proves however is that Carmilla wasn’t ever smarter than said peers(except for Godbrand), she’s just more devious than they gave her credit for. But that doesn’t make her above making any of their same mistakes, particularly the arrogance from which she would assume otherwise.

Maybe Carmilla is a actually a good manipulator when she’s dealing with her kind, which she actuality respects somehow. Hector is human, and she look down and underestimate him for this. For her, Dracula and Hector are not in the same league at all, that’s why she was more careful and cunning when dealing with the vampire.

I now realise a huge gap in carmillas plan - even of hector would fall in line and let his creations guard the borders for thr sistsers, he will be dead like in about 60ish years and then they have no forgemaster to control the night creatures - what then? Really big gap there carmilla. And 60 years is the blink of an eye for vampires so its not worth even considering, much less the effort. Night creatures without their forge masters go feral no matter what orders they are given before.

Vampires can still capitalise on opportunities though. She needs the night creatures to suppress any local resistance and discourage any competing interests in the immediate future but that threat would presumably be significantly reduced once the new territory is established as they really just need to guard the borders after that which needs much less manpower (if the defeated village manages to defeat your vampire who comes there to feed without any outside help then the vampire had it coming). ~60 years is plenty of time to amass a force of vampires either by drawing wandering vampires to your power base or old fashioned recruitment, we can just assume night creatures are faster to produce or stronger initially as Dracula went with an army of them over an army of vampires first and if anyone knows the strengths and weaknesses of such a force it's him. Presumably there are differences between 60 years worth of recruitment and training vs 1 year. The night creatures work well as a rapidly raised expendable force which you would then replace with your own troops later (you could also use defences to reduce the amount of manpower needed within those 60 years, it's basically just a prison).

In Curse of Darkness, Isaac viewed Hector's desertion as part of the reason for Dracula's death; and vowed revenge. Hector, meanwhile, had settled down and gotten engaged to a woman named Rosaly; but his happiness was short lived. Rosaly was accused of witchcraft and burned at stake (similar to Dracula's wife), and Hector soon learned that Isaac had orchestrated it. So Hector went in pursuit of Isaac, on a quest for his own revenge; thus setting the stage for the game. The interesting thing is that Isaac's quest for revenge, in the show, is closer to the path Hector took in the game; rather than his own path in the game.

Isaac was walking through town with a bunch of demonic monsters. Sure he told them not to attack, but how do you expect people to react to that? The way the guards were acting was certainly understandable.

Your confusion (?) over Carmilla's mindset is understandable but it's not so complicated. Her mind is weakly strategic but she has no grasp of tactics. She's rash, ambitious, but a tad reckless-- and nowhere near concerned enough about Hector.
