Probably would be best to just mix the dough with one hand. That way you always have a clean hand free to do other things with... adjust camera, add flour or buttermilk, etc. You could also use it to clean the dough off of your mixing hand. They looked like some mighty fine biscuits at the end though!

Please gently work the dough minimal as possible, you aren’t kneading bread. And just lightly pat down with 3 knuckles, no need to jab them so much.
