Another tip for when you smoke larger cuts Robbie, soak the wood chips in plain water for 10 or 15 minutes before and let them drain for about 5 minutes before you add them to the smoker. It makes them a slow release pellet and they last a lot longer which is what you want for bigger lumps of fish.

We call these fish Yellow Perch in the United States. They get about 2-3 pounds. But usually about 1 1/2 pounds. They take minnows and small crank baits. They are taken all year long even through the ice. Very tasty too. My grandfather used to say that they tasted just like butter.

Thanks John. I think they're a very similar species. These ones are English Perch. They get up to 4-5lb maximum, but must are under half a pound. They tend to overpopulate waterways which really stunts their growth.

Thanks mate. I use a diamond sharpener to keep it sharp and when it loses its edge I use a sharpening stone to get a new edge, and then the diamond sharpener to touch it up.

Thanks mate. I've looked onto cold smoking. You can actually buy a type of sawdust that will smoulder and smoke for 24 hours without a flame creating heat. I'm going to look more into it, but as you say it required a lot more seasoning.

Good on ya mate looked like a great cook up. The wings ya through away are good too. I normally with a murry cod scale with skin on fillet with wings, rib cage both sides and halve the fillet so you have 4, seasoned with salt n peper with dill maybe a smear of bultter an served with lemon, but i soak my fish in a brown sugar, vinigar, water brine with pepper corns and a bayleaf over night. Pat dry an smoked with your choice of smoking chips, i dont mind hickory as thats what i normally go with.😁👏🍻

Thanks so much Eck. You are absolutely correct mate. On Murray cod that area around the front fins is one of the nicest parts of the fish. To be honest I am not use to catching redfin big enough to care about that part. I reckon they would be delicious.

I agree mate redfin that big are not common when i was a kid fishing with dad we would fish at lake makoan an catch bags of reddies but carnt remember if they were that big or not even at oxley we had a spot there were we caught big reddies like that on yabbies a forgoten spot. But normally these days i just deep fry in carnola oil with lemon grass in stumok cavity with salt an pepper diced ginger till skin crispy.

I'd love to see what smoked Cod was like actually - have never caught or eaten one yet as I grew up on saltwater but definitely keen and from what I hear they are a fatty fish so should smoke up great! You will probably get a cod before I do so give it a crack Robbie haha 😄

How good's your timing! Just smoked my first redfin last week. Done a few trout before (delicious), but never redfin. Found a recipe online for smoked bacon wrapped perch. It was fantastic. But after seeing this the next one will be plain fillets for sure.

@@dantrenchardharry3970 Hey Dan, in it's simplest form, take a decent sized redfin fillet, crack a bit of pepper over it, squeeze of lemon, wrap it in a rasher of thinly cut bacon and put it in a smoker at about 250f until done. Mine is a larger scale smoker so I was using apple wood and had some apple cider vinegar in the water bath (was smoking a trout at the same time).

I am the opposite, I rather fish only just cooked, I find they remain softer, this is an Aboriginal technique that I learned off Malcolm Douglas documentaries. I find the best tasting fish is either a Barramundi or a Yellowbelly, only cook it to the point that the meat is cooked, don't overcook or the liquid falls out of the flesh too much, and a proper fish should have enough fat in it's flesh, so you should only really need a little bit of salt and it should be perfect, soft and creamy. That's how I like it anyway, each person is different obviously.

I over cook everything. I had food poisoning once, and since then absolutely everything I cook is overdone. LOL Tonight I cooked some crumbed chicken from the supermarket. The instructions said 35 minutes. Of course I gave them a little over 40. LOL
