My daddy used to never filet a fish. I've seen him cut a 30lb flathead up across the backbone making his "catfish steaks". It's just the way I was raised. A couple of those, some hushpuppies and fries and it was chow time.

I grew up watching my dad clean fish daily, and my mom cook them. Just just like this. It was every day almost. At least every other day for sure. We serviced on deer, fish, garden crops and chickens and their eggs. It was a good way to grow up. I didn’t know we was just poor folks living off the land in the woods of Alabama. But man did we eat good. I learned a lot about fishing. Anyone interested in seeing me and my dad fishing together, scroll down passed all my music videos and you’ll see some fishing videos. Check them out. He’s a lot like Richard. He’s around the same age as Richard and been fishing since he was a kid. He loves fishing still this day. He don’t fish for survival now lol. He fished for sport. He does still keep some fish tho to eat. I’m purely catch and release most of the time. If I ever get to wanting fish I don’t have to clean any. Dad has two deep freezers full of fish vacuum sealed. Lol.

I love watching your videos, Mr. Gene! My Daddy was born in Gadsden and lived in Attala til they moved to Texas, and I loved to listen to his stories of fishing trips him and Grand Daddy made. I often wonder if some of those spots you fish, my Daddy didn't fish when he was a boy. Your videos take me back to all the fun times we had growing up fishing with Daddy. Wow.. That descaling tool looks so nice and easy to use. I've seen them at Walmart for years, but never actually bought one. Me and my friend always just used the back of a knife, which sucked. We'd descale red horse suckers and hog molly suckers that we'd gig from a boat. Then you fillet them (leave skin on), cut the rib cage out, then score all the way down the fillets at about 1/8-1/4" apart, because they have small bones in the fillets, so the scoring will help soften those bones when they cook. Then you just bread and fry.
