Cauliflower fried rice is magical! Who knew it could be so easy to transform an unassuming vegetable into such delicious wonderment?
For this recipe, you will need:
1 medium to large size head of fresh cauliflower, riced
3 T of Sesame Oil
1/4 cup Avocado Oil
1 cup diced raw carrot
1 cup thawed frozen peas
3 cloves of minced garlic
3 eggs-scrambled
2 T minced onion
3 T soy organic sauce-use organic to avoid GMO soy
Salt and Pepper to taste
Method:
1. Prep your cauliflower by either grating with a box grater or processing the flourets in a food processor till it looks like the size of rice. Place in a bowl and set aside. Please see video for further instructions. Cut the stem and leaves into dices that are the same size as the carrots. scramble the eggs in a bowl and set aside.
2. In a large skillet or a wok skillet, add the sesame oil, avocado oil, diced carrots, peas, diced cauliflower stems and leaves, and onions and saute for 5-6 minutes. Add the garlic and saute for another minute. Salt and pepper lightly.
3. Add the cauliflower to the sauteed vegetables and mix till it is all combined and coated with the oil. Put the lid on the pan and let steam for about 5-8 minutes.
4. Remove the lid from the pan and stir cauliflower mixture. Create a well in the center and pour the scrambled eggs into the well and stir the eggs continuously until they are scrambled. Once scrambled, mix them in quickly with the cauliflower mixture and turn off the heat.
5. Add the soy sauce and mix together.
6. Serve with some sesame seeds sprinkled on the top.
Optional: Add steamed shrimp, pan seared chicken, or chunks of ham.
