I made this when I lived in England for many years but they use v good cheddar rather than gruyere.Also delish.Now in LA, I often use freshly grated parm reggiano and add basil, oregano, thyme.Also good.I have a feeling the French milk is better tasting than ours.Prob makes a difference.❤❤

Yes, it definitely gave me prepped in advance as components. I just did it for our early Thanksgiving here in France and it was great! Roast the cauliflower and leeks. Put them in the pan and refrigerate then make the Bechamel sauce. Keep it separate and then pour the sauce over the veggies add the cheese and onions and cover and reheat at 350 for about 25-30 minutes. Refrigerating the veggies in the sauce separately will prevent the cauliflower from getting too soggy. Hope you enjoy it!

Yes of course! You could buy a store-bought rotisserie chicken and shred the meat and toss it in! That is a great idea!
