LOL! I just got back from lunch with old friends at my local Greek restaurant & we had almost exactly the same thing! Except not such a lovely presentation. Happy New Year to our dear Beth!! I just read your email, and tears came to my eyes. I live in Florida, and our oldest daughter lives in Ojai. Several years ago (2017), the Thomas Fire was a massive wildfire that affected Ventura and Santa Barbara Counties and was one of multiple wildfires that ignited in southern California in December 2017. Sitting here, 2,250 miles from my daughter, I felt helpless, concerned, and worried beyond reason. So I can relate to what you are going through and pray that your parents and your beloved "old" house will come out of this unscathed. Seeing you preparing such a delectable dinner or lunch idea made me realize how important our lives interwind in shared experiences. As always thank you Beth...Bisous 😘😘

I've just never thought to put them all together in this way. I do grill Greek chicken and serve it with tzatziki and a salad that is lettuce plus the cucumbers and tomatoes, Kalamata olives and feta with a Greek dressing. Never thought to include hummus or just leave the lettuce out! I had actually planned to make my version this week (it's all on the grocery order I have coming on Monday) and I'm absolutely making it your way! Thanks - your timing is impeccable! 😂

Sorry but the olives are no kalamata olives! These are black dyed olive (with iron gluconate after they were bleached) not a healthy snack. Real Kalamatas are more dark red than black. Expensive but worse to eat them.
