At High School my favorite winter meal was " Mince on a Bread Roll " from the Tuck Shop. That was minced up beef thickened with flour and a touch of Worcestorshire ( War sest er shear ) Sauce and served on a buttered bread roll. The butter was melting over the edges as the roll was being eaten. Years later, I spent some time duplicating the taste I remember from my teenage years.

A tender moment in the Pressley homestead. I nearly spit out my water when Matt said "I haven't eaten it yet"! But he quickly turned-on the charm to let you know "you"re just a peach", Tipper! Very cute. Very playful. Very loving.

My 89 year old mom still makes chipped beef on toast for me at least once per month. She adds peas as well. One of my favorite dishes period!

Chipped beef was a staple growing up! A variation that my Mom would do was "creamed egg" on toast...same gravy but instead of putting meat in, she would hard boil eggs and chop them up into the gravy - ate it over toast or biscuits!

Creamed eggs on biscuits....so yummy! 😋😋😋 My mom also chunked up canned corned beef and added it to a white sauce along with frozen peas. Then we would spoon it over baked potatoes. YUM!

In the Philippines my wife's family calls white bread "pan loaf." I grew up in GA eating "creamed chip beef on toast." I still keep a jar of dried meat in the pantry for those quick meals.

When my parents were kids and in my early childhood, “healthy” meant “food in your stomach” in my family. Now, they measure and quantify all the parts of a food. My Dad made this but my Mom didn’t. I do remember her toasting white bread in the oven because we didn’t have a toaster. Thanks for sharing this. ❤️

I grew up with mom making Schmooey on toast. Tuna, can of cream of celery with a can of milk, and a hunk of Velveeta. I don't like tuna, so I started making it as an adult with canned chicken breast, cream of chicken with herbs + milk, pepper, and some Velveeta. Either way, just throw it all in a pan and melt together and pour over toast. I'm a Nebraska/Kansas girl.

My mom use to make chip beef gravy like you do. I never tried to make it myself but use to buy these frozen boiling bags of chip beef and gravy. I put mine on toast too. You make it look so easy to make the gravy. I’ll have to try it sometime. Matt is so funny when he teases you. It was sweet he gave you a hug on camera. Most guys don’t want to show their love side on camera, so that was sweet. Thank you for sharing y’all’s family recipe.

🌿🌹🌿 Boy, it was special when we all went to Limestone, Tennessee to Dad's homeplace. We always stopped at High Point Diner off rt 340, before 81 was built. (HP is still there)! I always ordered chipped beef on bisquits. Made me feel like a grown-up. It's the one time a year that we went to a restaurant! We had milk gravy bread at home, which was good with ham or bacon on the side.God bless🌹(Maryland)

I didn’t grow up eating SoS, but made it later in life after hearing about it for years. I bought dried beef from the Mennonite store nearby. I thought it was delicious as it was, but looked for recipes and came across the recipe for SoS. I thought the history was interesting and decided to try it. My Appalachian country girl tastebuds were thrilled by the taste. The recipe I found was an Army recipe and didn’t call for the dried beef to be browned first, but it was SO SO good! I serve it with toasted white bread and scrambled eggs to make it extra filling, but I love the idea of summer ripe tomatoes and cucumbers to brighten it. In todays economy I haven’t been able to splurge on the Mennonite dried beef, but I would recommend it to anyone who wants to try an SoS recipe. My 12 y.o. grandson happily ate plain old biscuits and gravy this past weekend, but he did ask when he could have SoS again. As a person who did not grow up eating gravy on toast ever, I will say SoS was so good and tasty and definitely not a waste of light bread!

We called it Creamed Chipped Beef. We always tore the toast up into bite-size pieces and then put the gravy over it. Sure is good stuff! Thanks for sharing :)

As you, I learned to make this from my husband after we married. My yankee husband likes creamed chipped beef for breakfast. We’ve never eaten it for supper. I think I’ll surprise him tomorrow and serve it for dinner. A plate of sliced tomatoes, cucumbers, and cantaloupe is the perfect side dish.💕

I am 74 and I grew up with this meal and it is one of my favorite comfort meals to this day. it is also one of my daughters favorites. We put it over boiled potatoes but my husband likes it over toast, probably due to his years in the air force. Thanks for such a comfort meal.

Our recipe- 2 table spoons butter, quarter cup onion, 8 oz. cubed cream cheese, half cup milk, quarter cup parmesan cheese sprinkle, 2 packs 8 ounce chipped beef cut, 1 jar 8 oz. drained sliced mushrooms, stir and heat through until thick. Serve over 2 buttered white toast. Momma’s recipe from Lumberton NC. Great flavor. Give it a try. Love watching your family’s KZbin channels. God Bless

My husband, after more than 25 years in the US Army, has 3 distinct variations that were served in mess halls in the US and (West)Germany (he’s that old!). To Roger, Hamburger Gravy can be served on toast, rice, or baked or mashed potatoes. Sausage Gravy is served on biscuits. SOS is made with dried beef like you do it, or I more often get sliced medium roast beef deli meat (cuts down a little on the salt) served over toast. When we have leftover pot roast, I’ll use leftover gravy and serve over mashed or baked potatoes, rice, bread or toast. These are truly comfort foods to him. (Tuna gravy? Never!) I loved this video! Thank you!

My wife’s grandfather ate this all the time. He just bought the frozen ore made chipped beef and gravy from the store and put it on toast. I’m sure he would have loved this version too.

My grandmother learned this recipe, made with ground beef and water instead of milk, when she worked in a high school cafeteria. We call it "school gravy." When I went vegan 16 years ago I modified the recipe to use veg crumbles instead of meat. It's pretty tasty stuff.

Tipper: You have evoked my late Mother with this video because for her creamed chipped beef was comfort food. She passed away five years ago this summer at the age of 92 and she ate this and a few other "throw-back" staples in her diet right to the end. However, I should add, Mom got it out of a can! It is good for me to know that the love for this old school dish is shared by others, yourself included. I thank you. Jon

Gotta admit that I wasn't a big fan of SOS when I was a kid. Course after I went into the service I learned real quick to appreciate all of my mom's cooking. Loved the video.

This meal totally had me missing my folks. Dad was from rural Missouri and Mom from Connecticut. Not sure which one suggested we have chipped beef on toast. Mom's ancestors came from England and they ate everything on toast but Dad's family had southern roots and knew how to stretch a meal. Like you, I just saw it as comfort food.

My mom and grandma always made it with “Buddig” chipped beef (wafer meat) that is sold refrigerated in bags. We ate it a lot growing up. We always tore our toast up in pieces and made a pile of the torn pieces to put the gravy over. When I got married, my wife made her family’s version using the dried beef in a jar like you used. Holy cow that was salty! I still make “chip beef on toast” quite often when I need to use up milk or white bread. I still use Buddig beef but now add a tablespoon or so of chicken bouillon to my gravy for a nice flavor boost. I typically don’t allow my roux to darken as much as my normal gravies and always use a little Lawry’s season salt to taste on my serving.

So sweet Matt hugging you! Chipped beef and gravy was one I grew up on! Mamma would have Peas and sometimes Mashed potatoes with our meal! Ya can't go wrong in feeding 6 kids and mamma and daddy back when I was growin up in the 60's! I always loved it when Mamma would make this! Yes... it''s a comfort food indeed!

@@CelebratingAppalachia She was indeed! She'd make biscuits from scratch and they were wonderful! We lived in a 4 room house with a outside john, the 6 of us kids, and had a Pot Belly stove for heat! Mamma hand a ringer washer and Daddy hung hooks where Mamma could hand out our wash inside the house during the winter! Born in 1952 we always had a garden and I never went to sleep in a dirty bed or home! We had a square wash tub where we'd take our baths, Mamma would heat the water on our wood stove and we 3 little ones would use the same tub, however, the elder kids would take turns in their tub water! Seems like at my turning the page into my seventies I look back at how my Mamma provided for us! She was an amazing Mom indeed!

My momma's family came to southern Missouri from Jefferson Co. Tennessee after my 3rd great grandfather died during the Civil War. He was buried here, so all the women and kids moved here and homesteaded land from the RR. (His widow, Granny Jane was 26, 3 kids and pregnant and moved here in a wagon in winter) I've been watching your videos and I never realized how much of the food that I grew up with, is Appalachian food. I never really thought about it before. It's just recipes that have been handed down forever. I do remember growing up in the '70s and '80s wondering why my friends didn't eat the stuff we did when I went to their house. ( Turnips, lettuce with hot grease,home canned everything ...ect Thank you for your channel.

For creamed chipped beef, I just make a simple Bechamel sauce, and add the chopped up dried beef. Creamed chipped beef on toast, or biscuits, mmmm good. 👍

My mom always made this but we called it creamed beaf on toast. You used to be able to buy this in a "boil and serve" baggie from the frozen section of the grocery store! We also ate creamed tuna on toast with cheese and tomato on top and put under the oven broiler for a minute! Yum! As always, thanks for the walk down memory lane♡

On the rare occasions my Dad would cook, this is what he made. He had been a cook in the army and this may have been a holdover from that part of his life. We liked it but I haven't had it for 50 years. I'm going to make it and see if it is still as good. We love your videos, thank you!

My Dad used to fix us "sos" all the time when we was kids. He used to eat it when he was in the navy during the Korean War on the ship he was stationed on. I don't think he ever ate it as a kid, but he loves it from all those years ago and we did too. I haven't had it for years because like you said, it's not the healthiest thing you can eat. I'm glad Matt decided he'll just go ahead and keep you, Tipper! That was a sweet hug you got for that good supper and chocolate zucchini cake! 💕💓

Mommy used to make chipped beef gravy on toast. Daddy used to fix it once-in-awhile with ground beef. Both were so good! I was just saying to my son last week that I needed to make some chipped beef gravy...haven't had any in years. We used toast, pancakes, or biscuits. Yummm.👍😋 Blessings.✝️🙏😇

My parents would make a variation of this called “eggs golden rod.” Gravy with chopped boiled eggs on toast. I started making it for my husband before we were married. Thank you for sharing this. It’s truly nostalgic.

As a small girl I grew up on Chip beef Gravy. we also had hamburger with boiled egg in a cream sauce served on creamed potototes. it was called Poor man's supper. it was so good. thank you, for this memory. from VA ❤️💕😘

Thanks for the memories. That was one of my favorites as a kid. My Grandmother was from Alabama and raised my mother in North Carolina. They moved to Michigan where my father as from and I was born there but grew up on Southern food, customs,("GO GET ME A SWITCH" lol) and garden grown veggies. Thanks for sharing life in Appalachia.

Yes I grew up with both chip beef and creamed hamburger on toast, loved this meal, My mom always had a tossed salad with mayo, but not too much mayo. Creamed peas on toast was also a favorite. I was just telling my girlfriend (from east of Asheville NC) about the SOS I was introduced to as a child by my friends mom who was from Oklahoma!! My NC girlfriend hadn’t heard of it before - only sausage gravy with biscuits. I just shared your video because I’m sure you explained it much better. The only difference is I was told to use hamburger meat. I’ve actually never heard of or even seen until now dried beef. I grew up in NJ and now live in upstate NY. I love learning all about your culture. My son lives in Asheville so we are having fun learning about the people and the land in your amazing state. Thank you for sharing your life and history!!

I love Asheville ! I’m from near Winston-Salem. We frequently had biscuits with sausage or fatback gravy. I had never had SOS until I was in college and had a roommate who had served in the Navy. We usually made it on Saturday morning and topped it with a sliced hard-boiled egg.

It amazes me how similar our families are in how we lived, even though we were not in the mountains. A garden wasn't a hobby, it was a must have to eat. We raised animals, and harvested a lot from the wild. Momma made our clothes on a treadle singer sewing machine. I would dearly love to have that old machine, but my younger brothers left it in a rental house many years ago and we couldn't ever get it back. We had to feed a wood burning cook stove year round. Momma boiled the work clothes in a big cast iron kettle.

As a kid we used to eat this a lot for supper. I don't remember my mom frying the chipped beef but she might have (while I wasn't watching). It came in a jar & we always had some in the kitchen cabinet for times just like you & Matt had today. We used hamburger meat & also tuna.Thanks for the memories. Hugs!

My grandmother made chipped beef gravy. Loved it. The first thing I ever learned how to cook was buttermilk biscuits. Today the "buttermilk" at the store isn't the same. My mother made regular gravy out of whatever we had, like leftover bacon grease or beef drippings, or deer steak drippings, or sausage. I had a local peach today, so now I'll be thinking of you =)

Vividly remember Chipped Beef on toast for supper as a child. My Dad loved it, the kids bit so much!

My Pop, who’s passed now, loved chipped beef on toast. He did say they called it S.O.S. when he was in the Navy. I liked it on biscuits for breakfast, but my husband had never had it. I still prefer it to sausage gravy on biscuits.

In the 70s growing up my dad said, that they ate this dish quite often when, he was in the army and, it was one of his favorite things to eat but, he loved all things with a gravy sauce. Next to Chipped Beef he got me into liking Chicken A La’ King and, even though we had a toaster we were brought up not toasting the bread. Another thing we liked on white bread/ not toasted was milk gravy, when, mom was off from work she would just make a big skillet of it for our lunch.

Thank you for sharing your recipe. I've always made my chipped beef using bacon grease instead of butter and the "Buddig" beef packs. Of course, that's how I learned from my Mom. Such a quick and tasty meal! With food prices so high nowadays, this is filling, inexpensive meal that you can have any time of the day. My husband even had chipped beef while he was in the Navy. They always called it S.O.S. on his ship. LOL Thank you.

Can anyone tell me what kind of beef this is she is using? & where I might find it in a regular grocery store? When you say buddig beef packs , do you mean lunch meat?

@@rampagedgaming1019 Tipper is using dried beef, usually found in a jar in the canned meat section. The Buddig is thin sliced luncheon meat found in the refrigerated section.

Born and raised in Fl. In winter, not cold enough to light heater, we had oven cheese toast. What a treat. It's amazing the memories we attach to food. 💖

We make one with tinned fish or sardines. My gran used to make sardines on toast with a cream sauce but I make mine with chopped tomatoes, olive oil, onion, garlic and parsley. Simple food and really inexpensive to eat like this.

Yes I grew up eating this often. Loved it then & still do. I never cooked the beef, always added to the gravy but may have to try it your way! Also lamb kidneys are good cooked this way. You & Matt are definitely a great couple. Blessings

Tipper I had to chuckle when you said s o s. My late husband was a military man, us navy, he's the one who introduced me to this dish and I fell in love with it. Yes he did explain what the s o s meant and that while he was on various ships, that sos was how everyone referred to the dish. We had this quite often, especially at supper. My momma grew up with this . She always told me about it. I've never tried it. She told me about the dried beef and everything. At certain times in their life they had to eat cheap. I guess they were able to buy that certain beef for a reasonable price. Thank you for the recipe because I'm going to have to try it for my family. Momma and Granny would tell me how they did it, but I never paid attention. I have had this recipe and several variations. Everyone called the SOS. I know what that means and stands for. Haha

For a less expensive option than the dried beef, I use the Carl Budding beef in the lunch meat section to make my chipped beef in toast. One packet is plenty for my hubby and myself.

My variation is with the last of the meat off of a turkey. I make it in a water gravy instead of with milk. Being from Canada I serve it over French fries and cheese. Turkey poutine is a big favorite in my family.

I love this meal! I have never fried the chipped beef before adding the flour and milk. I will definitely do that next time! Certainly a feel good meal in summer and winter. Great on biscuits too. Totally SOS

My dad was a truck driver and when he was on the road my mom would make us kids this for supper. She also made creamed tuna and peas on toast. Good memories

That looks so good! 😋 We've had it on untoasted light bread & of course, on toasted, also on biscuits. I like the way your toaster toasts the bread, those lines. After Thanksgiving mom would make a creamed turkey from leftovers & we'd have that on light bread toast. Y'all are a sweet couple. 😊

When finances got particularly tight at home, we would get chipped beef -- and also sometimes creamed eggs -- on toast. Dad had a colorful name for it I won't repeat. For some reason, he always cooked on these nights. I never knew him to make anything else in the kitchen (barbecuing, of course, was another matter).

I believe the term SOS was mostly used by the military. My dad was in the Army and that is what he called it. Guess this was a staple at the Chow Hall. Either way, I love it!

My mama learned to make SOS from her grandfather who was a cook in the army. We brown ground beef, drain it, add a glass of water and some butter, salt and pepper, boil it for about 10 minutes then add a couple heaping tablespoons of flour to a glass of water, stir and pour it in the pan and cook til it's the thickness you want it. Then serve on toast.

My MIL used Ham...i nvr liked it until I ate hers..She taught me soooo many great simple recipes..She grew up in PA on a farm.The only thing she refused to eat was chicken and that was because she had to process it as a child..she would make it but nvr eat it.Tfs❤️👍🏻

I remember that my dad wound work construction until noon, sleep a couple hours , clean up and then work nights at a truck engine manufacturer until 1 Am. Come home and start again the next day. My mom would make this for him while he was cleaning up. One of his favorite meals.

My mom made this in the winter with canned milk. Pantry staple for when the weather was bad. She also made the ground beef one. These were often served over mashed potatoes. Small fact: SOS in Army is with chipped beef as they were travelling on the ground. SOS in Navy is ground beef because ships had fridges. Do love your cooking segments.

i grew up eating creamed tuna on toast. didn't have sos until the military. my sister hated the tuna but i loved it.

My mother made this often while I was growing up, and all through her life. When you use butter, flour and milk to make gravy its called creamed gravy. We always bought dried beef in a jar, after the beef was gone we washed the jars and used them for juice or milk glasses. I still make this, only I make the gravy first and then add the chipped beef at the end. The dried beef in jars has gotten pretty expensive, so I subbed dried beef that comes in a pack, last I bought was about .70 cents a pack, I believe the brand is Budges. Of course back in the day a lot of things came packaged in jars, and my mother washed them and we used them for drinking glasses. We had snuff jars, jelly jars, I can't remember what else. I still have a few of the old snuff jars up in the cabinet.

When my sister, brother and I were kids, my mother made what she called turkey ala king. She would make it after Thanksgiving with leftover turkey in a white sauce on white bread toast. We be loved it. I haven’t made it in years, but now I’ll follow your recipe using turkey instead of dried beef. Thanks for the memory. I enjoy watching “Celebrating Appalachia” and The Pressly Girls. When we had "dried beef gravy" it was always with biscuits. It was desperation food, and when Mama made that for supper, Daddy was going to be unhappy. I always liked it, but Daddy didn't. He worked hard from dawn to dusk and often later. He wanted meat and potatoes with one or two fresh or cooked vegetables. It was usually biscuits or cornbread for breakfast, but homemade white bread for dinner (noon meal) and supper. We had milk cattle, so there was always milk and homemade butter. We made 5 loaves of bread twice a week to feed 3 adults and 7 children.

I just loved the HUG!!! Matt didn't want to sleep in the doghouse and fixed that right quick. lol We use to make that with hamburger quite a bit. My Mama use to make something...I wish she was here to ask her...oh, yeah, corned beef hash. I guess that might be different though. This is one of those moments that I want to pick up the phone and ask my sweet Mama something, but she is no longer here to do that....but it did finally come to me. We always had some fresh veggies with our meals growing up. Brings back fond memories.

My mother wasn’t from the south, so I don’t know where she got the recipe. I know she wasn’t raised on it because I remember her telling me she never had tuna growing up during the Depression, but she’d occasionally make creamed tuna and peas on toast when I was little. I made it for my kids too. The only thing I changed was instead of two cups milk I’d use 1 1/2 plus 1/2 cup of liquid from the peas. I just think it’s better that way. Sometimes I’d put a little grated cheddar on top, although my mother didn’t do that either. It was pretty basic and straightforward like your chipped beef. If anyone is interested I’d be happy to share the recipe. ❤️

This was served at breakfast every third day, Monday-Saturday, when I was on a Navy ship at sea. It was never certain whether they would put out toast or biscuits with it. I always liked it and would take it either way. I've put it over hashbrowns at times too.
