With the Baltics being one of my favorite regions on Earth, I thought I would pay homage to Lithuania’s shockingly large meat and potato dumpling - Cepelinai. An exceptionally dense and filling dish that no sane person would ever eat more than 2 of in a single sitting, Cepelinai are one of Europe's most curious and undiscovered delights. Plus, any food you can cook while drinking amazing beer is already worth making, right?
Come with an appetite, and a potato peeler, because this dumpling is the real deal.
INGREDIENTS:
16-20 potatoes
One and a half pounds (700 grams) of ground pork
2 large onions
I packet of bacon or a half pound (300 grams) of pork belly
Dill
Sour cream
Milk
2-3 tbsp Potato starch (flour can be a substitute if you can’t find starch)
Mince seasoning:
Garlic powder
Dried sweet chili flakes (bell pepper)
Fresh parsley
Salt
Pepper
(anything else you want to add: celery seeds, dried basil, mustard powder, etc)

Adding Vitamin C to the potato will keep it from turning grey/brown. I spent 6+ months there, my Wife is Lithuanian, born and raised.

Yeaaaa. I figured that out after they turned grey :D Citric acid can keep it from oxidizing. Next time they will be golden!

Cream of tartar will keep potatoes from turning brown

Hey Lithuanian here and I'm glad that someone is interested in Lithuanian and baltic kitche. You should try kibinas and kugelis too. Ps I really enjoy your content keep it up!!

Ahh, i had kibinas the last time I was in Vilnius, quite good. I'm really glad that someone from Lithuania finally likes the content :D Did you check out the "cold borscht" video? Thanks for the support!

@@TheKitchenCosmonaut yes i watched it! My mother usually made it with already precooked and marinated beetroot and added milk not water, you should try it!

Matt, might try a little lemon juice or vinegar in the potato soak process before grating -- may help with oxidation.

Yea, it was suggested afterward, I didn't know it was an issue while making them. Turns out you have to treat potato mush like guacamole :D

Can't remember for the life of me what it was called but in Estonia I remember the fantastic mash potato and bread bowls. As well I enjoyed Lithuanian pastries (like English pasties) with meaty gravy fillings.

The Baltics have such a dizzying array of pasties. My favorite were the crescent moon shaped ones... not sure where they are from though.

Trying to limit the exposure of the potato to oxygen, that's why mine greyed a bit. Otherwise it tasted great! let me know how it turns out!

I love your videos ...just watched them all! Saw your post this morning on Facebook Travels to Eastern Europe Group . I was in Poland and Ukraine last fall. Really want to see and taste more in the places you are cooking from! You are a natural !

Yeah, really bad pronunciation. 🤣 Good on ya for tackling this dish! My Močiute would chastise you to no end for the grey potatoes.

Yea, they oxidized in my effort to try and film them. Ironic my effort to make them look pretty made them look grey :D Next time will be better :D

I think that in the next video I will have a clip of eating the food, seems to be a common request. Just not sure how people will enjoy a fat guy in a dirty apron stuffing his face :D

Just don't do what Andrew Zimmern does, so annoying: he always takes a bite and then says something is soooo good, and not why. Why is it good? What do you like about it? What does it taste like? Bring me into the experience, don't just make me watch you having it...
