Glad to see you helping the cause. I host a Ukrainian family and have their Borscht often. They make it much like you but cut the veggies smaller. It's delicious stuff. I get why its their staple fridge food. As is the delicious steamed buckwheat they make, another food I learned living with Ukrainians.

Glad to see you're alive, well, and still being a cooking legend! When the video first came out, I tinkered with your borscht recipe for a bit (replaced the pork with chicken, add mushrooms/parsnip to the broth) and now have a favorite I make every Winter! Usually it takes me about 2-3 days to finish, so hearing you can crank this out in an hour's surreal! What would you say the biggest differences are, flavor wise? Stay safe out there!

The flavor lacks a lot of balance, it hasn’t “melded” into a unified soup and flavor. It’s very beet forward, but it’s still amazing! With the more elaborate borscht I love the richness and depth and the bone stock adds and giving the beets more time at a lower temp mellows them a bit so they still stand out, but everything is more together. The most important thing, in either version, is to not overdo the carrots or the tomato paste, they can overpower the dish and it ruins the flavor. But borscht is super flexible and can be damn near anything! Hope that helps! :)

I know it falls a bit west of dishes you typically cook, but I'd love to see your take on a Königsberger Klopse or a DDR Jägerschnitzel.

I like to use wok pan outside in the summer to make borcht. Lovely and healthy soup! Like to brown the meat first and use very fresh incredians. Not originally there but I do add some paprica and potatoes as well as I do like them. Served with sour cream and green onions on top tastes amazing!

awesome job, Matt! I usually use canned meat and then grate all vegetables (beets, carrot, onion, tomato), add water and some stock cube and let it boil until ready. Sometimes i add beans or cabbage if i have it.

I think cabbage is vital for borscht and beans are a huge preference of mine, but some think it’s “inauthentic” Give this method a try and let me know what you think :)

My grandmas family was from Russia, but they were ethnically German. Borscht in our tradition is a little different. Basically a vegetable stew with the beet leaves added in, everything is chunked up (chunked and not cut into strips) and boiled till very soft except for the potato; they’re added in the last 15 minutes and finish with vinegar or lemon juice. Comforting. It’s good but it’s a little different than what Slavs would eat.

Ever since I found your channel years ago I've wanted to try borscht so badly this is the prefect recipe I am 100% going to give this a go. I like the most authentic version of a meal so this is the one for me. Those soldiers looked so happy to have you cook for them!

Kudos to your perseverance. Kudos to the Ukrainians for resisting tyranny. I have been making haluski and woofing it down as a main dish. I also have been making cabbage soup with smoked bacon ends which seems to be a variant of borscht. I made a batch of cabbage soup with a head of red cabbage and it came out looking like yours. I'm not a big fan of beets. Next time you go take a bunch of beef and chicken bouillon cubes.

I never make borscht because beets are one of two things that I absolutely will not eat. The other is miracle whip.

Fair enough, but borscht could actually be the gateway soup that gets you to like beets! :D In all honesty the mild sweetness and acidity from the carrots and tomatoes, plus the fat from the meat and sour cream really temper the "beet" flavor to make it really palatable. If you get bored one day, give it a try! :)

This is not a true borsčь, of course. For a сlassic recipe a fermented beetroot beverage and a marrow bone are required. Also the cabbage is always going first because it makes a broth on itself. But this one looks good enough and has been served correctly, which is important.

There are only two versions: the red bъrsčь and the green bъrsčь. The red one is a thick winter soup based on the fermented beetroot and other long-lasting vegetables, the green one is a summer light soup based on the fresh sorrel and nettle that gives it a unique taste and a rich green color. Anything else are fallacies and heresies.
