Chaliapin had a son, also named Feodor (1905-1992), who became a well-known character actor in films ("Moonstruck" for example).
The process of breaking down the proteins using the basher and the enzymes in onions looks like one that tougher cuts of meat can also benefit greatly from. I think I'm going to try this method with some skirt steak and see if it works!

Never heard of tenderising steak with onion. Have to try this one. Might put a little dab of cold butter in after the soy at the end to give it a little glaze. I've seen a chef use kiwi fruit slices to tenderise beef. Thank you Chef and Francis!

My grandmother in Venezuela used to make this steak, in spanish it is called bistec encebollado or steak & onions, very traditional in latin food. I hated it though.....

Renner Arruda Chef here, that's a sirloin steak. The best cut of meat there is for a steak. Also, don't use a non-stick pan. If you have stainless steel or aluminum, that's perfect. You actually want there to be stuff stuck to the bottom. After you remove the steak and add the onions, you use the soy sauce to deglaze the pan, so you can scrape off the sticky bits and that will be in your sauce. Great stuff. And one more thing, don't wipe off the juices before cooking the steak, that's absolutely crazy. Your steak could be ten times better than hers if you think about conserving every bit of the flavor.
